La auténtica pasión por los viñedos y el vino es el rasgo distintivo de esta bodega familiar fundada en 1984 por Nazareno Pola y dirigida hoy por su hijo Stefano. Poseen 40 hectáreas de viñedos propiedad de la bodega, y donde se cultiva la variedad glera casi en exclusividad, aunque también otras pequeñas cantidades de variedades autóctonas de la zona como la verdiso, la perera y la bianchetta. El concepto Valdobbiadene es todo un lema en la filosofía de Andreola y toda su producción se dirige a expresar la singularidad de la denominación a la que pertenecen. Para ello, la bodega ha hecho de la investigación y el desarrollo tecnológico una de sus apuestas de futuro. En los viñedos de las colinas que rodean Col S. Martino, donde Andreola elabora sus vinos, la inclinación del terreno puede llegar a ser superior a los 45º. La viticultura en este tipo de pendientes es conocida como "de montaña" o "heroica" por la dificultad de su cultivo.

Historia.
La Conegliano Valdobbiadene es una zona dedicada a la viticultura desde la antigüedad. Se conserva una estela funeraria en la que un centurión romano cita los vendemmiales, celebraciones de la vendimia. En el siglo VI San Venanzio Fortunato, obispo de Poitiers (530-607), describe Valdobbiadene, su tierra natal como “lugar donde la vid brota debajo de la altura montaña, en la que el exuberante verde protege las zonas áridas” El fresco pintado en la fachada exterior del Pieve di San Pietro di Feletto, en el siglo XII, representa al "Cristo del Domingo". La advertencia es clara: aquellos que trabajan los domingos hacen sufrir al sangrado de Cristo, rodeado de herramientas de trabajo. Gracias a esto último entendemos cuáles eran los trabajos típicos de estas colinas en ese momento, y parece que la viticultura ya era parte de la vida cotidiana. En 1574, cuando Enrique III, rey de Polonia, fue a París para ser coronado rey de Francia pasó por la comunidad de Conegliano e hizo que el vino blanco de las colinas fluyera durante un día entero desde la fuente de Neptuno. En 1754 Aureliano Acanti en su Il Roccolo, Ditirambo menciona "Prosecco". Es el primer registro escrito del nombre. En 1772 Francesco Maria Malvolti (1725-1807), en vol. VIII de la Giornale d'Italia de 1772 conecta por primera vez Prosecco con Conegliano Valdobbiadene. En 1868 El conde Marco Giulio Balbi Valier, famoso por haber aislado y seleccionado un clon de Prosecco mejor que los demás, llamado "Prosecco Balbi", publicó en 1868 un folleto en el que describe sus cultivos. En 1962 once productores conforman el Consorcio Prosecco de Conegliano y Valdobbiadene y un años más tarde se inaugura la primera Exposición Spumante en Valdobbiadene. Ya en 1966 se establece la Strada del Prosecco, la primera ruta del vino reconocida en Italia y en 1969 llega el reconocimiento de Denominación de Origen Controlado para Prosecco producido en los 15 municipios entre Conegliano Valdobbiadene. El 1 de agosto de 2009, Conegliano Valdobbiadene se convierte en el 44º DOCG de Italia.
El Consorcio.
El Consorcio es un organismo privado de interés público y reúne a todas las categorías de productores: los viticultores, los enólogos, los embotelladores. Hay tres temas en torno a los cuales concentra su trabajo que son la protección, la promoción y la sostenibilidad. A través de sus estructuras técnicas y colaboración con institutos de investigación, realiza un trabajo importante para mejorar el procesamiento en el viñedo y en la bodega, brindando servicios de asistencia y capacitación. Sigue todas las fases de producción desde la planta hasta la poda, hasta la elección del período de cosecha y el control de las prácticas de vinificación. Además de promover el desarrollo de técnicas vitícolas y enológicas, el trabajo del Consorcio tiene como objetivo garantizar la autenticidad y proteger al consumidor. Por este motivo, está a cargo de las actividades de supervisión del Ministerio de Agricultura, Alimentación y Silvicultura, una función que desempeña bajo el control y en colaboración con el Instituto para la prevención y represión del fraude alimentario. Para fortalecer y coordinar la actividad de protección, en 2014, junto con los otros Consorcios de Prosecco, fundó una compañía especial llamada "Sistema Prosecco" para coordinar la protección de las denominaciones en Italia y en todo el mundo. Para garantizar la autenticidad y la protección del consumidor, la Denominación Conegliano Valdobbiadene está sujeta a la actividad de control y certificación de Valoritaria, empresa reconocida por MIPAAF para la certificación. El conocimiento correcto del territorio y su vino simbólico, el valor de la viticultura en las laderas, la protección de la imagen de Conegliano Valdobbiadene en Italia y en el extranjero, se promueven a través de la organización de eventos, colaboraciones y planes de comunicación. El Consorcio participa cada año en los eventos internacionales más importantes, como Prowein, Vinitaly y Vinexpo. La cita principal en el calendario es Vino in Villa, el festival dedicado a Prosecco Superiore que tiene lugar el tercer fin de semana de mayo en el corazón de la Denominación.
Vinificación.
Al contrario que su principal competidor comercial, el vino de Champaña, que utiliza el método champenoise, el prosecco se produce utilizando el método charmat o en grandes vasijas, en el cual la segunda fermentación tiene lugar en tanques de acero inoxidable,9 haciéndolo menos caro de producir. Anualmente, se producen aproximadamente 150 millones de botellas de prosecco italiano, de las cuales aproximadamente el 60% del total del prosecco producido se elaboró en el área de Conegliano y Valdobbiadene. Empezando en los años 2000, las uvas prosecco también se cultivan en otros países, como Brasil, Rumanía, Argentina y Australia, pero el vino espumoso obtenido no puede ser llamado prosecco. Las variantes de este vino son prosecco espumoso o spumante y prosecco frizzante o vino que es un vino con burbujas, pero en menor cantidad. El primero se ha sometido a una fermentación secundaria completa, es la variante más cara. Las variantes espumosas pueden contener uvas pinot blanc o pinot gris. Los vinos.
El Conegliano Valdobbiadene Prosecco Superiore es un vino espumoso DOCG, producido exclusivamente en las colinas de Conegliano Valdobbiadene, declaradas Patrimonio de la Umanidad UNESCO. La denominación, que abarca 15 municipios, se debe a sus dos “capitales”: Conegliano, capital cultural, donde tiene su sede la primera escuela de enología de Italia, y Valdobbiadene, corazón productivo de un territorio con extraordinaria vocación y singular belleza. El Conegliano Valdobbiadene Prosecco Superiore DOCG se puede degustar en las versiones Brut, Extra Dry y Dry, que se distinguen por su contenido en azúcar. El vino espumoso también se puede distinguir por su procedencia territorial. El “Rive” se produce con uvas procedentes de un único municipio o fracción de municipio. En el municipio de Valdobbiadene, en una pequeña subzona de tan solo 108 ha, se produce el “Cartizze”, la máxima expresión de la DOCG. El extrabrut, hasta 6g/l de azucar, es la versión más contemporánea, en línea con las tendencias internacionales que van hacia un gusto cada vez más seco. Exalta la vivacidad y la frutosidad de las uvas, aportándole intensidad y gran expresividad territorial al vino espumoso. En la boca es seco, pero de gran intensidad, que evoca las sensaciones olfativas. El Brut, menos de 12g/l, se caracteriza por aromas ricos de notas cítricas y vegetales, acompañadas por una agradable nota de corteza de pan, junto con una hermosa y viva energía gustativa. El perlage no garantiza la persistencia del sabor y deja el paladar limpio, convirtiéndolo en el vino espumoso por ex- celencia a la hora de comer. Extra Dry, 12-17g/l, es la versión que combina la aromaticidad varietal con su remarcado sabor exaltado por las burbujas. El color es pajizo brillante avivado por el perlage. El aroma es fresco y rico de perfumes de fruta, manzana, pera, con una nota cítrica. En la boca el vino es suave y al mismo tiempo seco gracias a una acidez acentuada. Los prosecco Dry, con un contenido de azúcar entre 17 y 32g/l, son los menos comunes, con una fase visual de color amarillo pajizo pálido, nariz delicada, afrutado, con notas de cítricos, melocotón blanco y manzana verde, y una boca fresca, suave y afrutada.

Origen.
La uva glera es una variedad de vitis vinífera blanca que se utiliza en la elaboración del prosecco. La uva fue introducida en Italia desde Eslovenia y durante cientos de años se ha cultivado, en un principio en Prosecco, próxima a Trieste, y también en las regiones de Veneto y Friuli Venecia Julia, produciendo vinos espumosos Prosecco de varias DOC Y DOCG. Se cree que es una variedad antigua, ya cultivada en tiempos de los romanos, probablemente para el vinum pucinum convocado por Plinio el Viejo, aunque este extremo no ha podido acreditarse. Hasta dos mil nueve esta variedad era conocida como prosecco, nombre relacionado con la villa donde se cultivaba.
