Historia.

A principios del s. XVI, en Trieste, el vino local denominado "ribolla" fue celebrado como la recreación del antiguo vino Pucino, mencionado ya por Plinio el Viejo en su Historia Natural y muy apreciado por Livia, la esposa del emperador Augusto, por sus propiedades medicinales. La necesidad de distinguir el "Ribolla" de Trieste de otros vinos conocidos por el mismo nombre que se producían en Gorizia o en la costa de Istria provocó que se le cambiara el nombre a finales de dicha centuria. Siguiendo el lugar de producción durante la Antigüedad, se le llamó "castellum nobile vinum Pucinum", en referencia al castillo situado en Contovello, muy cerca de Prosecco (al norte de Trieste). Origen.

La pinot gris es una variedad de uva, de la que se tienen noticias desde la Edad Media en la región de Borgoña, donde probablemente se la llamaba fromenteau. Llegó a Suiza desde Borgoña, junto a la pinot noir, a principios del siglo XIV. Según se cree, esta variedad era la favorita del Emperador Carlos IV de Luxemburgo, quien envió esquejes de esta vid, llevados por los monjes cistercienses, hasta Hungría. Los religiosos crearon viñedos de pinot gris en las laderas de Badacsony, a orillas del lago Balatón, en 1375. Poco después, la vid fue llamada szürkebarát, que significa "monje gris". En 1711, un comerciante alemán, de nombre Johann Seger Ruland, descubrió una uva creciendo silvestre en los campos del Palatinado. Características.

La variedad Pinot Gris es una uva originaria de Borgoña donde le llaman Pinot Beurots. Investigadores de la Universidad de California en Davis, han determinado que la pinot gris tiene un perfil de ADN similar a la pinot noir y que la diferencia de color deriva de una mutación genética que ocurrió hace siglos. Las hojas y las cepas de ambas vides son tan similares que la diferencia de color es lo único que permite diferenciarlas. Las cepas de pinot gris son de vigor medio bajo, de porte erecto, desborre y maduración semitardíos a tardios. Su producción es escasa. Los racimos son pequeños, compactos, homogéneos, cilíndricos, alados, con ramificación claramente diferenciada y muchas veces largamente pedunculada. Las bayas del pinot gris son pequeñas de sección circular y perfil ligeramente elíptico. Su hollejo es grueso de color gris-rosado-marrón, con mucha pruina. La pulpa es compacta, jugosa y muy aromática. Es una viña que resiste bien el frío, no se ve muy afectada por las heladas, tanto las de invierno como las de primavera. Resiste muy poco la caliza activa y la sequía. Es muy sensible a la botritis ya la podredumbre gris y ácida. Es sensible black-rot, al desecado del raquis, a los ácaros, cicadélidos y a la polilla del racimo, sin embargo, es poco sensible a la excoriosis.

Zonas de cultivo.

La variedad Pinot Gris se asocia generalmente a las regiones vitícolas de Alsacia (Francia) y Oregon (Estados Unidos).
