La ley del vino.

Hasta hace unos 10 años, sólo el 10% de la producción vinícola italiana estaba regulada por leyes vinícolas. En 1963 el gobierno italiano quiso poner fin a la anarquía reinante en el mundo del vino y poner un poco de orden, instaurando un sistema de denominaciones de origen basado en el sistema francés de AOC. Sin embargo, el sistema pecaba de excesiva rigidez y no garantizaba la calidad. Esto hizo que numerosos productores comenzaran a trabajar alejados del sistema, dado que muchas veces las DOC eran un obstáculo más que un beneficio. Cuando no se estaba de acuerdo, a la única categoría de vino a la que podían acudir era a la de vino da tavola, vino de mesa, la más baja. El ejemplo más claro lo tenemos en la Toscana, durante los años 80, donde un gran número de los vinos de mayor entidad eran vinos de mesa, de tavola, sin denominación. En 1992 la legislación, a través de la Ley Goria, trajo un cambio radical en el concepto de denominación de origen, con el origen geográfico y la defensa del terruño como epicentro. Los vinos que demuestren durante cinco años su calidad adquirirán una DOC y cinco años más tarde podrán aspirar a situar en el gollete de la botella la garantía del estado de una DOCG. También prevé esta ley que todas las denominaciones que no tengan una calidad contrastada desciendan de escalón: cuando se hizo la ley, se suponía que más de 50 perderían su condición de DOC y unas cuantas la de DOCG. A día de hoy todavía se espera que descienda la primera. El ascensor de subida si ha funcionado pero el de bajada no se ha estrenado y eso que unas cuantas lo piden a gritos. Esta ley trajo consigo una nueva categoría, los vinos con IGT. Los vinos italianos se pueden clasificar como vino de tavola, IGT, DOC, DOCG.




Denominación de Origen Controlada.

Salvo excepciones, las denominaciones de origen pueden corresponder a nombres geográficos, como: Cirò, Soave, Orvieto, Castelli Romani, Barolo, Valtellina, Franciacorta, Colli Bolognesi, Roero, Valpolicella…., y en otros casos, el nombre de la variedad precede al nombre geográfico, como Brunello di Montalcino, Albana di Romagna, Aglianico del Vulture, Vermentino di Gallura, Sagrantino di Montefalco, Primitivo di Manduria….Producidos en una zona delimitada, normalmente pequeña o de dimensiones medianas. Llevan siempre su nombre geográfico. El reglamento de producción es más severo que el de los IGT y llegan a los consumidores previos análisis químicos y sensoriales por parte del estado. Sus características de calidad serán determinadas por la cepa y el área de producción. Las denominaciones de origen son las encargadas de fijar los rendimientos de producción por hectárea, el grado alcohólico mínimo, el tiempo de crianza mínimo y las castas autorizadas en los ensamblajes de las distintas zonas vinícolas. Para llegar a ser denominación de origen se tiene la obligación de superar el examen de una comisión de cata que es el garante de tipicidad y calidad de los vinos. La DOCG puede concederse a un vino que ha alcanzado un notable prestigio durante al menos cinco años y ya está clasificado como DOC. Los vinos deberán corresponder a las características propias de su denominación y gozar de una reseñable reputación en Italia y en el extranjero siendo reconocida su calidad. En las DOC se admite vender el vino a granel o en damajuanas, los vinos DOCG deben ser comercializados en recipientes menores a 5 litros y llevan la garantía del Estado que certifica mediante la garantía del origen, la calidad y permite numerar los vinos. En las microzonas o subzonas también un propietario puede alcanzar excepcionalmente la DOC o DOCG. Serán reconocidas cuando el producto sea de alta calidad y contribuya a la promoción y el prestigio de los vinos italianos más allá de sus fronteras. El nombre de esta minúscula zona debe ser utilizado independientemente del resto de la denominación de origen. Esta disposición es un reconocimiento oficial de la idea de pago o cru como sucede en la Borgoña y la defensa de las particularidades de un pedazo de terreno que se diferencie del resto. Las subzonas históricas que han servido a la idea general de la denominación pueden utilizar el término Classico. La palabra Riserva conserva su carácter original para vinos que han envejecido el tiempo mínimo exigido por cada denominación. Aunque el concepto es diferente al español puesto que no es necesario que tenga más tiempo de crianza en madera sino que salga un año después de la versión de añada, también puede referirse a una selección de las mejores uvas de una finca. La mención Superiore se refiere al grado alcohólico del vino que debe ser medio grado más que la exigencia mínima de la denominación. Aunque suelen ser los vinos de mayor fuste de cada denominación.

Origen.

La variedad Chardonnay es el fruto de una viña originaria de la región francesa de Borgoña, donde se localiza un pueblo del mismo nombre. Dentro de las uvas blancas, es la más extendida y popular en todo el mundo, por lo que, para mucho público, Chardonnay es sinónimo de vino blanco. Es una uva muy equilibrada en fruta, acidez y textura. Se puede considerar que marida con todo, desde comidas potentes hasta las más suaves, desde platos picantes y quesos fuertes, hasta pescados y aves. Además de los vinos blancos de mesa, es la uva con la que se elaboran la mayor parte de los champanes.




Características.

Si fuera una persona, Chardonnay sería un diplomático por su facilidad de maridaje, diversidad en sabores y facilidad de consumo. Como la uva en sí no tiene un sabor concreto, extrae su aroma del terruño donde se cultiva y obtiene sabores muy diversos, que pueden ser desde vinos muy limpios y sabrosos hasta otros ricos en toques de roble y mantequilla. Su racimo es de tamaño más bien pequeño, bastante compacto y con pedúnculo muy característico y de tamaño muy reducido. Las uvas en sí son pequeñas, uniformes y muy esféricas. Su piel es amarillento-verdosa cuando madura, hollejo de grosor considerable y una pulpa poco o nada pigmentada, textura blanda, muy jugosa y con aroma afrutado. La cepa es precoz en su brote, vigorosa, resistente y muy versátil por adaptarse a terruños y climas muy diversos, con la única condición de que no sean excesivamente húmedos. Es muy fértil, aunque con rendimientos bajos, aunque de una calidad bastante elevada. Esta viña se ve afectada por suelos con carencia de magnesio y precisa de niveles altos de fósforo y nitrógeno. Es una variedad de uva muy sensible a la carencia de magnesio y muy afectado por el secado fisiológico del raspón. En cuanto a sus hándicaps, es sensible al oídio, a la flavescencia dorada, al mildiu y a la podredumbre gris, así como a la polilla y a los cicadélidos y especialmente a los ácaros. Por otra parte, los hongos de la madera no le afectan en exceso y resiste perfectamente a la clorosis. Debido a su desborre precoz y maduración temprana es una viña que no gusta de los fríos primaverales, dando unos rebrotes de muy baja fertilidad, no obstante, aguanta bien los inviernos crudos y es muy resistente a los vientos fuertes.




Zonas de cultivo.

Podemos encontrar esta variedad de uva prácticamente en cualquier área vitivinícola pues está extendida mundialmente. Es muy común en Francia, España e Italia, aunque también se cultiva en Portugal, Estados Unidos, Australia, nueva Zelanda, en los países de América del sur y en África del Sur. Se calcula que hay en torno a 160,000Ha de uva chardonnay plantadas, de las cuales una tercera parte está en Francia. Además de su nombre genérico, también es conocida como Franciacorta en Italia, Chardoney y Pino Shardone en Bulgaria, Feinburgunder y Morillon en Austria y Pinot Chardonnay en Chipre.




Vinos.

Sus características pueden variar desde vinos ricos, gruesos y espesos, adecuados para envejecer en botella, a vinos más ligeros y frescos hechos sin madera y destinados a ser bebidos jóvenes. Es una de las variedades con que se elaboran el Champagne. Los vinos chardonnay presentan en su fase visual una capa variable entre pajiza muy pálido y un amarillo casi dorado, con reflejos verdosos. En nariz se observan los aromas característicos que son manzana verde, limón, pomelo, pera, acacia, frutas tropicales como mango, piña, banana, melón o ananá, algo de especias o caramelo. Cuando envejecen en barrica despiertan aromas a vainilla, miel y manteca. Su boca es elegante, larga, sin demasiada acidez, pero con una gama de sabores que va desde manzanas a cítricos, melón, peras, miel, cera, caramelo, dulce de leche y minerales entre los más destacados. Como consejo, es preferible adquirir vinos de esta variedad que se elaboren en regiones vinícolas de clima frío.
