Los orígenes de Dios Baco se remontan al siglo XVIII. Tras pasar por sucesivos propietarios, su historia moderna comienza a escribirse en 1992, cuando la empresa fue adquirida por el actual propietario José Paez Morilla, fundador de Bodegas Dios Baco, S.L., con el propósito de elaborar vinos de Jerez de producción limitada y alta calidad. Los orígenes de esta bodega se remontan al año 1765 y guarda todos los elementos tradicionales de las construcciones bodegueras. Tres son las edificaciones que la conforman, constituyendo su principal joya un plano arquitectónico llamado "La Cruz" o "Rincón de Baco", presidida por una cruz de hierro señalando que en ella se celebraban cultos religiosos. Historia y consecución DO.
No se sabe exactamente cuándo se comenzó a elaborar la Manzanilla. Históricamente, se suele asociar el comienzo de la producción en las bodegas sanluqueñas con la reestructuración del negocio vitivinícola durante el siglo XVIII y con el asentamiento de la industria moderna en la zona. El primer documento en el que aparece el nombre de Manzanilla referido al vino data del siglo XVIII y se trata de un Acta Capitular del Cabildo de Cádiz. Debemos los primeros estudios sobre la Manzanilla al botánico y agrónomo Esteban Boutelou, en su libro Memorias sobre el Cultivo de la Vid en Sanlucar de Barrameda y Xerez de la Frontera (1806). La Manzanilla fue incorporada a la Denominación de Origen Jerez-Xérès-Sherry en 1933 como uno de sus tipos de vino. Hasta 1964 no se publicó el Reglamento de la Denominación de Origen Manzanilla, donde se reconoce la identidad de la Manzanilla, así como su vínculo con Sanlúcar de Barrameda. El 26 de junio de 1996, la Comisión de la Unión Europea reconoció el carácter único de la Manzanilla. Con ello dejó de ser necesario referirse a este vino con la expresión «Manzanilla de Sanlúcar de Barrameda», ya que ahora solo hay una: la de Sanlúcar. La DO Manzanilla San Lúcar de Barrameda pertenece también a su vez a la DO Jerez-Xerés-Sherry, compartiendo estos vinos geografía, zona de producción e incluso variedad de uva y proceso de elaboración como la supervisión y el amparo del mismo Consejo.
Zona de Producción.
La zona de producción del Jerez se encuentra en el extremo sur de la península. Los viñedos de Jerez, El Puerto de Santa María, Sanlúcar, Trebujena, Chipiona, Rota, Puerto Real, Chiclana y Lebrija son los únicos que pueden producir uva para la elaboración de vinos de Jerez y Manzanilla. Otra delimitación importante es la zona de crianza: el triángulo formado por las ciudades de Jerez, El Puerto de Santa María y Sanlúcar. Únicamente en estas ciudades se puede completar el proceso de producción amparado por la D.O. Hay que tener en cuenta varios factores de estas zonas, como el clima, el tipo de tierra (albariza, barros y arenas) y, especialmente, el tipo de uva autóctona: Palomino, Moscatel y Pedro Ximénez, blancas las tres.
Método de producción.
Una vez recolectada la uva, se procede a la pisa y prensado y se deja fermentar: es de ahí de donde surgen los nuevos vinos y los mostos. Los catadores prueban estos nuevos vinos y, dependiendo de las características de los caldos, se separan entre finos/manzanillas (los más pálidos) y olorosos (los que poseen más cuerpo). Una vez separados, se dejan reposar hasta alcanzar los 15º y 17º. Las botas más empleadas son de roble americano, con capacidad para 600 litros. Se llenan hasta los 500 litros, unas 30 arrobas, y se deja una superficie vacía para que se desarrolle el velo de flor. El método que se lleva a cabo es el de soleras y criaderas. Las variedades de uva utilizadas en la DO Manzanilla-Sanlúcar de Barrameda serán Palomino, Pedro Ximénez y Moscatel. La manzanilla se considera un vino generoso.
Manzanilla.
La manzanilla propiamente dicha es un vino muy pálido, de un tono amarillo pajizo. Es un vino blanco y seco, elaborado con uva palomino y envejecido bajo una capa de levaduras llamada velo de flor. Su crianza se lleva a cabo exclusivamente en bodegas de Sanlúcar de Barrameda. Las especiales condiciones climáticas de esta ciudad, situada en la desembocadura del río Guadalquivir, propician el desarrollo de un velo de flor muy peculiar. Como consecuencia, el vino adquiere características particulares y diferenciadoras. Tiene aroma punzante con notas florales que recuerdan a camomila y almendras. Al paladar es seco y fresco. Presenta, también, una ligera acidez que deja un regusto ligeramente amargo.
Manzanilla pasada.
Si las manzanillas son sometidas a períodos de crianza excepcionalmente prolongados, en los que la flor llega a debilitarse ligeramente, provocando un pequeño nivel de oxidación y una mayor complejidad; surgen así las "Manzanillas Pasadas". Son vinos con más estructura, pero con todo el carácter punzante e intenso que aporta la crianza biológica.

Origen.
El Palomino es la variedad base de los vinos de Jerez, traído en el siglo XVI por las tropas de Flandes y perfectamente adaptado a las características del medio y clima de las comarcas vitícolas andaluzas y extremeñas. La variedad blanca de uva palomino es una variedad autóctona española, utilizada en la elaboración de los vinos generosos de jerez y manzanilla, concretamente, la variedad es muy predominante en el Marco de Jerez, el triángulo formado por las localidades gaditanas de Jerez del Frontera, Sanlúcar de Barrameda y El Puerto de Santa María y que abarca, además las localidades de Chiclana, Chipiona, Puerta Real, Rota, Trebujena y Lebrija, de donde proceden estos vinos de fama mundial, donde representa el 95% del viñedo. Es una variedad complementaria para la elaboración de vinos en otras denominaciones españolas, concretamente, según el mapa interactivo del reparto de las variedades de uva españolas, Andalucía agrupaba cerca de 9.000 hectáreas de viñedo de esta variedad. Pero el dominio de la palomino en estas latitudes no siempre fue tan absoluto. la palomino fino se fue imponiendo poco a poco y lo venía haciendo ya desde el XVIII y XIX, pero su crecimiento y aumento de presencia fue a más de manera meteórica tras las replantaciones posteriores a la llegada de la plaga de la filoxera.
Características.
Dos son las claves del éxito de esta variedad, por un lado, su carácter neutro, perfecto para la elaboración de los vinos generosos. Por otro, su perfecta adaptación a las épocas del año idóneas para la vendimia en el marco. La palomino es una variedad de brotación y maduración tardía que resulta muy resistente a la sequía y sabe vivir en condiciones de adversidad. Sus racimos son grandes y tienen forma piramidal mientras que las bayas de las uvas son esféricas, aunque irregulares, de tamaño mediano y de un color que oscila entre el verde y el amarillo. También es conocida como palomino, palomino blanco, Chipiona y pinchito. Es una variedad muy resistente a la sequía y a los intensos calores estivales, bien adaptado, si el patrón es adecuado a los suelos calizos, en los que muy difícilmente muestra clorosis férrica. Es sensible a la rotura de sarmientos por el viento y es muy conveniente establecer las cepas en espaldera y podas en cordón. Es muy sensible al mildiu, al oídio, sobre todo en ataques a los racimos, a la podredumbre gris, la botritis y a los ataques de la polilla del racimo. No se ve muy afectada por las enfermedades de madera.
Zonas de cultivo.
Destaca el cultivo en Jerez, donde representa el 95% del viñedo. Se cultiva en la zona formada por Jerez de la Frontera, El Puerto de Santa María, Sanlúcar de Barrameda y Trebujena, todas ella comunidades gaditanas. Está admitido su uso, como variedad complementaria, en vinos de otras procedencias, como Tierra del Vino de Zamora y D.O. León. Según la normativa, es una variedad recomendada para la comunidad autónoma de Andalucía (donde es conocida como listán, palomino y palomino fino).
Vinos.
Con la variedad palomino se elaboran varios vinos de los considerados generosos secos. En los vinos de Jerez hay dos grandes ramales o familias: las que pertenecen a la crianza biológica y las que pertenecen a la crianza oxidativa. Además, están los amontillados y palos cortados a medio camino entre las dos crianzas. Todos ellos utilizan la variedad palomino en su elaboración, de hecho, los únicos vinos elaborados en Jerez que no utilizan la variedad palomino son los vinos dulces, que se elaboran con pedro ximénez y moscatel. Además, la variedad palomino también se utiliza para elaborar vinos jerezanos generosos licorizados con cierto dulzor, clasificados como pale cream, medium y cream.
