Esta pequeña bodega se encuentra situada en el Vendrell. En 1982, los propietarios de esta bodega adquirieron una finca de unas diez hectáreas de viñedo al mismo pie de la Via Augusta, denominada Les Deveses. En Cellers Puig & Roca tienen también arrendadas otras diez hectáreas de viñas, plantadas a partir de sus cepas originales. A finales de la década, después de haber transformado en viñedos toda la propiedad y teniendo por principio la ilusión y el ánimo de conseguir un producto personalizado y de alta calidad, se inició la construcción de la bodega, para empezar a elaborar los vinos de Cellers Avgvstvs Forvm. Paralelamente han ido desarrollando una gama de Vinagres agridulces llamados Forum. Su instinto es y será siempre ejercer con instinto de pequeño productor.

Español [ ES ]La tierra y el clima.
La tierra de la D.O. Penedès es amplia y abierta y se extiende a lo largo de una gran franja de territorio entre mar y montaña, a medio camino entre Barcelona y Tarragona. Dentro de este marco natural, los vinos provienen de las mejores viñas seleccionadas de la zona. En el corazón de la Depresión Prelitoral catalana, entre la Cordillera Prelitoral y las pequeñas llanuras de la costa mediterránea, maduran las viñas del Penedès. De su singularidad nace la diversidad de los vinos DO Penedès. Mil sabores y aromas son el fruto de las diferencias climáticas, paisajísticas y de la variedad de sus suelos, aquí tintados del verde de sus montes, allí del azul de las aguas mediterráneas. Tres zonas diferenciadas constituyen la D.O:
- El Penedès Superior, cercana a la Cordillera Prelitoral, Alt Penedès, Alt Camp, Anoia y Baix Llobregat, goza de precipitaciones más frecuentes y de mayor contraste entre temperaturas máximas y mínimas.
- El Penedès Marítimo, Baix Penedès y Garraf, junto al mar y en la Cordillera Litoral. Es más templada por la influencia y proximidad del mar.
- El Penedès Central, entre una y otra zona, fundamentalmente Alt Penedès, es el compendio de ambos microclimas.
Singularidad.
Variedades Blancas.
La DO Penedès, ampliamente reconocida por su calidad en los vinos blancos, combina una oferta de vinos elaborados con las variedades tradicionales (xarel·lo, macabeu y parellada) con otros que con los años se han introducido y aclimatado con éxito (chardonnay, riesling, sauvignon blanco...). Y con los vinos del xarel·lo como estandarte de la DO, los vinos del Penedès son todo aroma, sabor y calidad. Un placer para los sentidos. Los vinos blancos del Penedès ofrecen una riqueza aromática durante todo el período de juventud, entre el primer y segundo año. Con una textura suave y un buen equilibrio entre acidez y alcohol. Los elaboradores ofrecen también blancos de fermentación en barrica o de crianza que permiten descubrir otros extraordinarias sensaciones y evolucionar positivamente entre dos y cinco años. A la hora de acompañar las comidas, los blancos ligan con comidas suaves, preparados sin salsas, como pescado, marisco, ostras, huevos, platos fríos y quesos frescos o semisecos.
Variedades Tintas.
Fruto de la experimentación, de la constante innovación y de la recuperación de variedades propias que habían desaparecido y la atención a las nuevas tendencias de los paladares, la DO Penedès ofrece una amplia y exquisita gama de vinos tintos de calidad. Todo un lujo para los sentidos..Los vinos tintos del Penedès mejoran con el paso del tiempo si se mantienen en las condiciones apropiadas como por ejemplo con protección de la luz, olores y vibraciones, temperatura uniforme no superior a 15 °C. Según la cosecha y el tipo de uva, pueden evolucionar entre 4 y 5 años. En la mesa, para acompañar un reserva tinto o sencillamente un buen vino tinto DO Penedès, se recomiendan las carnes rojas y los asados. Para los vinos tintos aromáticos, la carne blanca y los quesos azules resultan de lo más adecuado y sugerente.
El xarel·lo.
El xarel·lo es el estandarte de la DO Penedès. Brillante, típico, gratificante... es la esencia del territorio. Una variedad, un vino, que se deja querer. El xarel·lo es la variedad de uva más cultivada en la DO Penedès y goza de una excelente adaptación a los terruños y climas de la zona. Es una planta rústica, con brotación temprana y crecimiento regular. Resistente a la sequía y al calor, tiene una producción muy equilibrada y cualitativa año tras año que se acentúa en las viñas viejas. Los vinos jóvenes son suaves, con un carácter sedoso pero con cuerpo, buena acidez, afrutados, aromáticos y con excelente graduación alcohólica. Los vinos de xarel·lo con vocación de crianza resultan consistentes, cálidos, largos, con final mineral y expresión marcadamente varietal, a través de la maceración de la piel, la fermentación en barricas o huevos de cemento, crianzas con las lías, etc.
El Consejo Regulador.
La Denominación de Origen ampara vinos blancos con graduaciones de 10 a 13 grados, vinos rosados entre 11 y 13 grados y vinos tintos entre 11 y 14, otros tipos no serán considerados Penedès. El Consejo Regulador marca el rendimiento de las viñas y las bodegas también tienen fijados unos límites de prensado. para supervisarlo, se ha desarrollado un cuerpo legal y una serie de controles, que se efectúan desde el propio Consejo Regulador. Uno de los mayores retos que se ha impuesto el consejo, es que la gran mayoría de vinos lleguen envasados al consumidor, pues quiere evitar que los vinos de Denominación de embotellen fuera de su zona. En cuanto a la crianza y envejecimiento para los vinos blancos, el reglamento establece un mínimo de seis meses antes de comercializarlos, con ello se obtiene que los vinos se asienten y lleguen al consumidor con el máximo esplendor. para los vinos tintos se exige un mínimo de 15 meses de crianza y a partir de aquí los productores pueden seguir el envejecimiento en botella. Para los tintos reserva el periodo es ya de tres años de crianza, siendo uno obligatorio en madera y dos en botella. Para los grandes reservas el periodo es practicamente el doble. En definitiva, los vinos de Denominación de Origen suelen salir al mercado entre los dieciocho meses y los dos años, aunque esto no supone que haya productores que alarguen más todo el proceso, dependiendo de la calidad y el tipo de vino que quieran ofrecer. Desde el Consejo Regulador de la DO Penedès se controla todo el proceso de la uva, desde la viña hasta llegar a la copa, es decir, su trazabilidad. A través del mapa de suelos, se conocen las características de las parcelas plantadas de viña y el Consejo dispone de un registro de viticultores donde constan los datos de cada explotación vitícola. En el momento de la vendimia se controla la producción, el rendimiento de los viñedos y la cantidad de uva que se destinará a producir el vino calificado.

Hasta hace no demasiado tiempo, se tenía la sospecha de que la tempranillo y la pinot noir estaban emparentadas, pero recientes investigaciones ampelográficas descartan casi al cien por ciento esa posibilidad. La vitis vinífera es, en España, el antecesor común a la mayoría de las vides cultivadas actualmente y fue introducido en la zona sur de la Península Ibérica por los fenicios. Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.
Características.
La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Variedad muy sensible a las enfermedades de la madera especialmente eutipiosis y complejo de la yesca. También es muy sensible al oídio, polilla del racimo, a los cicadélidos y a los ácaros, así como a las roturas por viento intenso si no están los sarmientos bien entutorados. Tiene una resistencia media al mildiu y al black rot. Soporta bastante bien los fríos de primavera ya que en este caso la brotación se retrasa. Poco sensible a la excoriosis. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.
Zonas de cultivo.
A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.
Vinos.
Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.
