Suelo, clima y ciclo biológico.

La comarca de Cigales que protege la Denominación de Origen, se extiende por el sector norte de la Depresión del Duero, por una superficie de 574 km2, a ambos márgenes del río Pisuerga. Los viñedos se encuentran a una altitud media de 750 metros y comprende desde parte del término municipal de Valladolid (Pago “El Berrocal”), hasta el palentino de Dueñas, incluyendo además Cabezón de Pisuerga, Cigales, Corcos del Valle, Cubillas de Santa Marta, Fuensaldaña, Mucientes, Quintanilla de Trigueros, San Martín de Valvení, Trigueros del Valle y Valoria la Buena.
Desde el punto de vista geomorfológico, el territorio corresponde al Mioceno. El suelo está formado por Sedimentos terciarios y cuaternarios: arenas, calizas y gredas yesíferas, que reposan sobre arcillas y margas. El suelo tiene una estructura granular débil, de fina o media, con escasa pedregosidad y carente de materia orgánica (0,7 a 1,6%). Apoyándose sobre arcillas y margas y a veces con arenas y gravas. Su contenido en caliza es muy variable, oscilando de 1% en Santovenia al 35% en Valoria. En general contiene suficiente potasio, pero es pobre en fósforo. Su ph se halla en torno al 8,1. Las variedades autorizadas.

En cuanto a las variedades autorizadas tintas, tenemos las siguientes: El tempranillo, es una de las variedades principales en esta Denominación, ocupa el 70% de la superficie vitícola; productora de excelentes rosados por su potencial aromático, color, riqueza en extracto y aporte de color violáceo a los vinos. Otra variedad es la Garnacha, que aporta al vino frescura, finura, grado alcohólico, fructuosidad y suavidad. Otra de las variedades tintas es el Cabernet Sauvignon; esta variedad, el Cabernet Sauvignon, porta estructura, aromas, sabores vegetales elegantes y toques violetas. En la boca, se presentan como vinos muy carnosos, con mucha estructura. El vino se caracteriza por su consistencia y longevidad, con mucho cuerpo y aromático. Otra de las variedades tintas, el Syrah, aporta aromas profundos a frutas silvestres y violetas.. Es un vino especiado y de acidez destacable. En vinos jóvenes tiene aromas agradables a violeta, cassis, fruta negra. En crianza se desarrollan aromas ahumados, coco, especias. Adquieren gran personalidad a medida que envejecen. Por último, el Merlot, variedad autorizada tinta, que se caracteriza por su finura y suavidad sin dejar de ser aromático y carnoso, es una variedad que se complementa muy bien con Garnacha para vinos jóvenes y con Cabernet Sauvignon y Tempranillo para la crianza. Con respecto a las variedades autorizadas blancas, tenemos el Verdejo, que se vinifica en mezcla con el resto de variedades, para la obtención de rosados; comunicando a éstos su gran potencial aromático, su brillantez y, en definitiva, su calidad. Otra uva autorizada, el Albillo, produce mostos muy azucarados y aromáticos, se utiliza en la elaboración de rosados y también en la elaboración de los tintos, a los que comunica gran finura. Y por último, el Sauvignon Blanc, uva autorizada blanca, que aporta unas características aromáticas más definidas y abundantes que las que actualmente resultan en nuestros rosados, dándole su peculiar toque mineral, herbáceo y floral que resalta su capacidad aromática clásica.




Los vinos.

Lo que ha venido caracterizando los elementos diferenciales en los vinos rosados de Cigales ha sido la elaboración en blanco con mezcla de variedades tintas y blancas, teniendo en cuenta el asentamiento de dichas variedades a nuestro suelo, clima y prácticas culturales. A lo largo de los años se han realizado experiencias, colaborando con la estación enológica de Castilla y León, llegando a la conclusión que elaborando con unas proporciones idóneas de variedades blancas (albillo, verdejo y sauvignon blanc) con variedades tintas (tempranillo, garnacha, merlot y syrah), el vino rosado obtenido es el típico de Cigales, elaborado a partir de las variedades blancas y tintas principales y autorizadas con un mínimo del 50% de las variedades principales.pero cumpliendo las expectativas que actualmente exige el mercado de color, aromas y sabor. A partir del año 1985, paulatinamente se ha ido reconvirtiendo el viñedo, dando lugar a plantaciones con variedades en proporciones adecuadas para elaborar rosados pero también para poder realizar experiencias con tintos. Los vinos tintos de cigales, elaborado a partir de las variedades tintas principales Tempranillo y Garnacha Tinta y Gris y autorizadas Cabernet Sauvignon, Merlot y Syrah, con un mínimo del 50% de las variedades principales. Los vinos blancos, elaborados a partir de las variedades blancas principales Verdejo y autorizadas, Albillo Mayor, Viura y Sauvignon Blanc, con un mínimo del 50% de la variedad blanca principal. Los vinos espumosos, Elaborado a partir de variedades blancas y tintas principales y autorizadas, con un mínimo para los secos, semisecos, Brut o Brut Nature del 50% de las variedades principales. La Denominación de Origen Cigales comenzó a funcionar como tal en el año 1991, una juventud sin embargo engañosa, porque según consta documentalmente, ya en el siglo X aparecen propietarios de viñedos en distintos municipios de la comarca como Cubillas o Corcos. Los primeros pobladores de la comarca fueron los vacceos, sometidos por los romanos en el siglo II a. C.; más tarde llegarían invasiones de bárbaros germanos y árabes. La reconquista trajo gente de otras regiones que mezclaron su sangre con la de los grupos aislados supervivientes, dando lugar a la población existente en la actualidad. Numerosos castillos jalonan sus municipios, como el de Trigueros del Valle, el de Fuensaldaña -hoy sede de las Cortes de Castilla y León- o el de Mucientes, donde permaneció Juana La Loca. Junto a los castillos, y cuando la paz se iba consolidando, comenzaron a extenderse los viñedos, especialmente propiedad de los monasterios, que necesitaban el vino tanto para el culto como para su consumo privado. En Dueñas, en el palacio de los Condes de Buendía, estuvo Fernando el Católico disfrazado de arriero para conocer a Isabel y preparar los esponsales y allí volvió de nuevo cuando enviudó para unirse con Germana de Foix. En Cigales se enfrentaron extutores y validos de Alfonso XI “el Justiciero”; se reconcilió Pedro I “El Cruel” con sus hermanos bastardos, y también lo hizo Juan II con los Infantes de Aragón. Los vinos de Cigales alcanzaron gran fama en España y en el exterior. Cuando la filoxera invadió los viñedos franceses los vinos de Cigales llegaron hasta Burdeos para suplir los propios en tierras galas. De la importancia que tuvo antaño esta zona vitivinícola, baste con decir que en 1888 ya producía más de 15 millones de kilos de uva. El 29 de septiembre de 2011 salía publicado en el BOCYL la Orden AYG/1197/2011, de 22 de septiembre, por la que se aprueba el nuevo Reglamento de la Denominación de Origen «Cigales» y de su Consejo Regulador. Esta nueva normativa autoriza la elaboración de vinos blancos, espumosos y dulces, tras varios años de contrastadas experiencias que han ratificado la calidad de estos novedosas elaboraciones en Cigales. Además, las variedades experimentales de Sauvignon Blanc, Cabernet Sauvignon, Merlot y Syrah pasan a formar parte de las variedades complementarias a la principal, que es la Tempranillo, junto con la Garnacha y las variedades blancas Viura, Albillo y Verdejo, que tanto han tenido que ver con nuestros históricos y reconocidos rosados.

Origen.

Hasta hace no demasiado tiempo, se tenía la sospecha de que la tempranillo y la pinot noir estaban emparentadas, pero recientes investigaciones ampelográficas descartan casi al cien por ciento esa posibilidad. La vitis vinífera es, en España, el antecesor común a la mayoría de las vides cultivadas actualmente y fue introducido en la zona sur de la Península Ibérica por los fenicios. Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.




Características.

La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Variedad muy sensible a las enfermedades de la madera especialmente eutipiosis y complejo de la yesca. También es muy sensible al oídio, polilla del racimo, a los cicadélidos y a los ácaros, así como a las roturas por viento intenso si no están los sarmientos bien entutorados. Tiene una resistencia media al mildiu y al black rot. Soporta bastante bien los fríos de primavera ya que en este caso la brotación se retrasa. Poco sensible a la excoriosis. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.




Zonas de cultivo.

A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.




Vinos.

Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.
