Recuperación de la masía.

En el 2000 Nuria Aviñó comenzó a renovar la finca y a recuperar las viejas viñas de Can Ramó: Xarel·lo, Ull de Llebre, Cariñena y Sumoll, un tesoro en la zona. Ése fue el principio de un proyecto enológico replantando terrazas de viñedos. Todo con un único objetivo, producir vino en la popiedad, como se hacía en el pasado. En Clos Lentiscus, a los pies del Montgròs, siempre se ha trabajado la tierra, pero no fue hasta 2001, año en el que falleció el padre de Manel Avinyó, actual propietario, cuando se inició un nuevo ciclo para la finca familiar. Se empezaron a replantar las viñas baldías y se recuperaron la bodega y la masía de la familia Avinyó. El Clos Lentiscus pertenece a una familia de viticultores cuyo objetivo es captar la esencia del terruño con sus vinos. La finca familiar del siglo XIV, rodeada de bosques mediterráneos, orientada al sur, se encuentra en el Parque Natural del Garraf. Toda la bodega está organiza siguiendo los principios de la biodinámica. Allí, gracias a las ovejas y a su caballo Ringo, y con la ayuda preciosa de sus abejas, consiguen trabajar las viñas respetándolas y producen vinos naturales que hoy en día son unos de los más interesantes de Cataluña. Además, la personalidad generosa y alegre de Manel y sus ganas de compartir sus conocimientos se notan a través de su producción.




Variedades.

En la actualidad, la casa está rodeada de unas 20 hectáreas de viñedo plantadas mayoritariamente con variedades autóctonas, especialmente malvasía de Sitges, xarel·lo blanco, xarel·lo vermell y sumoll. Precisamente de esta última variedad se declaran profundamente enamorados en Clos Lentiscus, pese a la complejidad que entraña elaborar buenos vinos con ella. La malvasía de Sitges es la otra uva estrella de la casa, como demuestra el hecho de que fueron los primeros en elaborar un espumoso monovarietal con ella. La esencia de la agricultura en los suelos arenosos y calcáreos de Lentiscus es biodinámica. Las viñas se encuentran en un sitio protegido: el Parque Natural del Garraf, hecho que garantiza los cultivos ecológicos de todos sus vecinos y una buena conservación del entorno. Están encaradas al sur, gozando del sol y de la brisa del mar y con contrastes térmicos muy suaves que amabilizan sus vinos.

Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.




Características.

La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.




Zonas de cultivo.

A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.




Vinos.

Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.

La variedad cariñena es una uva originaria de la zona de Aragón de donde toma su nombre, concretamente de la comarca homónima ubicada en la provincia de Zaragoza. Aunque hay algunas dudas sobre su relación, también es conocida como mazuelo en la denominación de origen Rioja. En Cataluña recibe el nombre de samsó. Los primeros escritores de libros de vinos de Italia especularon que la cariñena, conocida como carignano en algunas partes de Italia, era una vid fenicia que fue introducida en Cerdeña por los fenicios en el siglo IX a. C. Creían que esa uva se había extendido a otras colonias fenicias partiendo de ahí, llegando al asentamiento de Sulces, donde eventualmente fue traída a la península itálica y, desde ahí, los antiguos romanos la llevaron a las regiones del Mediterráneo Occidental. Características.

Las cepas de cariñena son vigorosas, de entrenudos cortos y, por ello, con mucha densidad de hojas, de porte erguido, de elevada fertilidad y con muy buenos rendimientos. Su desborre es tardío y madura en media estación tendiendo a tardía, siendo de las últimas variedades de uva que se cosechan en la vendimia, por lo que, salvo que esté plantada en suelos muy cálidos, no suele alcanzar la madurez completa para su vendimia. Los racimos son grandes, compactos, con hombros marcados y pedúnculos muy cortos, uniformes en el tamaño de las uvas, pero heterogéneos en su color. Las uvas son grandes, de epidermis con enverado y evolución del color irregular y color azul negro con mucha pruina. A pesar de tener un hollejo no demasiado grueso, sí tiene una elevada resistencia a heridas y al agrietado. La pulpa no tiene pigmentación, tiene bastante consistencia, aunque es blanda y jugosa. Es una variedad con elevada sensibilidad a la yesca y al oídio, lo que puede causar grandes pérdidas por ataques tardíos a los racimos. Es sensible a la polilla de racimo, aunque no suele tener problemas de ataques, asimismo es bastante sensible a los ácaros. Tiene una sensibilidad media al mildiu y a la botritis y escasa a la excoriosis y a la eutipiosis. No suele tener problemas de corrimiento de racimo, tolera bastante bien las sequías y tampoco sufre daños con el viento. No requiere de niveles altos de fósforo, nitrógeno ni magnesio, no así de potasio, ya que una carencia en este elemento provocaría oscurecimiento de la pulpa. Es una cepa que se adapta bastante bien a cualquier tipo de suelo, aunque los mejores resultados se obtienen con suelos pedregosos, ya sean aluviales o esquistosos, pero en ningún caso encharcados o saturados de humedad. Se recomiendan las podas cortas y no efectuar despuntes.




Zonas de cultivo.

Como su nombre indica, la uva cariñena es la más característica de los vinos de su DO homónima, Cariñena. También se elaboran vinos con esta variedad, aunque sea conocida como mazuelo, en la D.O.C. Rioja. Otras zonas productoras que producen caldos con esta uva son las D.O. de Priorato, Mointsant o Tarragona. Fuera de España también es una uva muy cultivada, se pueden encontrar viñedos de cariñena en países muy variados, como es el caso de Francia, Chile, México, Sudáfrica o Estados Unidos e incluso en China.




Vinos.

La variedad cariñena da lugar a mostos con alto contenido en azúcar y bastante color, con elevado contenido en taninos astringentes y con aromas amargos y herbáceos dando vinos jóvenes de color muy vivo con aromas florales, predominando las violetas, pero que poseen poca estabilidad aromática en su evolución. Por su alto contenido en azúcar es base de vinos alcohólicos, bien cubiertos de capa y con buenos aromas en vinos jóvenes, así como con una acidez elevada. Los vinos procedentes de cepas viejas pueden ser excelentes, con un alto nivel de taninos por lo que envejece bien y da vinos con cuerpo.
