La vid.

El cultivo de la vid en la zona se remonta al siglo II a. C., confirmado con el hallazgo de un lagar en el pueblo Celtíbero de Segeda de gran importancia en la guerra numantina, situado entre los términos municipales de Belmonte de Gracián y Mara. La primera referencia escrita sobre la gran calidad de los vinos de la Comarca se remonta al siglo I y su autor es Marco Valerio Marcial, historiador que nació en la ciudad romana de Bílbilis, que fue una ciudad floreciente en su época y en sus cercanías los árabes fundaron la actual Calatayud. Los romanos desarrollaron la vid, los musulmanes la abandonaron y los cristianos volvieron a destacar su importancia durante la reconquista como cultivo colonizador. A finales del siglo XII los monjes del Cister promovieron la plantación de la vid en esta zona y fundaron el Monasterio de Piedra, y sus bodegas dan fe de la importancia de la vid en las tierras de su entorno. Con la llegada de la filoxera a Francia los viñedos se extendieron hasta superar las 44.000 ha. Sin duda las buenas comunicaciones ferroviarias de Calatayud favorecían las exportaciones de vino y, en consecuencia, el cultivo de la vid. En la década de los años 60 los viticultores se unen y crean las cooperativas. Posteriormente viendo la calidad de los vinos elaborados, los bodegueros solicitaron la creación de esta Denominación de Origen hasta su ratificación a finales de los 80.




La historia de las bodegas.

Las bodegas con más de 250 años de antigüedad se encontraban excavadas a mano y orientas al norte para conservar temperatura y humedad. Cada viticultor elaboraba su vino de forma artesanal, se pisaban las uvas, y con el raspón incluido se pasaban a fermentar. Desnudos se introducían en el lagar para remover el mosto y los orujos. Una vez acabada la fermentación se separaba el vino y se introducía en depósitos de cemento o toneles de cerezo de 600 hasta 1500 litros, el resto de orujos se prensaba en prensas manuales para extraer el vino. Después venían los compradores y fijaban el precio por “cantarás”. Así se funcionó hasta la creación de las Cooperativas allá por los años 50. Hoy en día son testimonio de la historia y la cultura del vino en nuestra zona.




Geografía y zona de producción.

La D.O.P. Calatayud se encuentra dentro de la Comarca Comunidad de Calatayud perteneciente a la provincia de Zaragoza y lindante con las provincias de Soria, Guadalajara y Teruel.Desde el punto de vista geomorfológico, la cuenca de Calatayud es una reproducción en miniatura de la cuenca del Ebro con tres unidades diferenciadas: las sierras exteriores, el interior de la fosa y el piedemonte. Se trata de una zona de complicada orografía, situada en las estribaciones del Moncayo y caracterizada por una compleja red hidrográfica formada por diversos afluentes del río Ebro, como el Jalón, Jiloca y otros menores. Los viñedos descienden por las laderas de las sierras, con altitudes que oscilan entre los 550 y los 1.040 metros. La D.O.P. Calatayud se sitúa en la parte más occidental de la provincia de Zaragoza, a 87 kilómetros de Zaragoza y tan solo a 1 hora de Madrid en AVE. La zona geográfica de la D.O.P. Calatayud está constituida por los siguientes términos municipales: Abanto, Acered, Alarba, Alhama de Aragón, Aniñón, Ariza, Atea, Ateca, Belmonte de Gracián, Bubierca, Calatayud, Cárenas, Castejón de las Armas, Castejón de Alarba, Cervera de la Cañada, Cetina, Clarés de Ribota, Codos, El Frasno, Fuentes de Jiloca, Godojos, Ibdes, Jaraba, Maluenda, Mara, Miedes, Monterde, Montón, Morata de Jiloca, Moros, Munébrega, Nuévalos, Olves, Orera, Paracuellos de Jiloca, Ruesca, Sediles, Terrer, Torralba de Ribota, Torrijo de la Cañada, Valtorres, Velilla de Jiloca, Villalba del Perejil, Villalengua, Villarroya de la Sierra, La Vilueña. En este amplio territorio, el cultivo de la vid convive en altura con plantaciones de almendros, cerezos y olivos mientras que frutales como el manzano, peral y melocotón son cultivados en vega, junto a los ríos. Las condiciones edafológicas, la altitud en la que se sitúan nuestros viñedos y la climatología reinante en la zona, unido a la variedad garnacha tinta, hacen de nuestra Denominación de Origen un lugar privilegiado para el cultivo de la vid y la producción de vinos con una marcada personalidad resultado de un clásico terroir.




Suelos, clima y vendimia.

El terreno es ondulante, asentándose la mayor parte del viñedo sobe suelos pedregosos, sueltos, muy pobres en nutrientes y de elevada proporción de caliza. Presentan buena permeabilidad y son sanos. El clima de la D.O.P. Calatayud se caracteriza por su continentalidad, con inviernos fríos y veranos calurosos. La temperatura media anual es 13,1ºC, con grandes diferencias entre la noche y el día durante la época de maduración, de 5 a 7 meses de heladas, las temperaturas y precipitaciones varían desde el fondo de la fosa con temperaturas suaves y precipitaciones bajas, hasta las temperaturas más bajas y precipitaciones ligeramente superiores, a medida que ascendemos, con una pluviometría media de 300 a 550 mm. La vendimia se inicia por lo general a finales de septiembre pudiendo alargarse hasta mediados de noviembre ya que la altitud a la que se encuentran los viñedos retrasa la maduración. Bajo estas condiciones climatológicas, se favorece una lenta maduración de las bayas que alcanzan la perfecta maduración fenólica. Los rendimientos por cepa son bajos y el cultivo se desarrolla sin apenas incidencias de plagas y enfermedades criptogámicas.




La Garnacha y el resto de variedades.

La Garnacha tinta es nuestro mayor patrimonio, con plantaciones que superan en muchos casos los 50 años de edad y que en la zona se denominan ”Viñas Viejas”. La adaptación de esta variedad en la zona es perfecta y de ahí su preponderancia respecto al resto de variedades. La garnacha es una variedad agreste en muchos casos injertada sobre Rupestris de Lot y más recientemente sobre Ritchtter 110. Como variedad de ciclo largo necesita sol para completar el ciclo vegetativo. Siendo una variedad que genéticamente tiene problemas de cuajado en la época de floración nuestros viticultores realizan una práctica muy habitual como es el “desnietado” que consiste en suprimir los brotes laterales y apical de los pámpanos frenando el crecimiento vegetativo de la cepa y amortigua el corrimiento de la flor consiguiendo que todas las sustancias nutritivas vayan a parar a la flor. La mayor parte de nuestros viñedos de garnachas se encuentra ubicado en zonas de altura, (la zona de viñedos más alta de Aragón), en terrenos con elevada pendiente que favorece la aireación del viñedo evitando botritis, de muy difícil mecanización, realizándose la mayoría de las labores de cultivo de forma manual. El cultivo se realiza respetando el medio ambiente. La variedad predominante de uva en la D.O.P. Calatayud es la Garnacha tinta. También se cultivan otras variedades tintas como son la Tempranillo, Syrah, Mazuela, Merlot, Cabernet Sauvignon, Bobal y Monastrell, y entre las variedades blancas destacan la Viura, Garnacha blanca, Malvasía, Chardonnay, Gewurtraiminer y Sauvignon Blanc. Las variedades tintas suponen un 92 % frente a las variedades blancas que representan el 8 % de la superficie total de la D.O.P. Calatayud (3.200 has). La garnacha ocupa una superficie de 1.730 has, representando el 54 % de la superficie total de la D.O.P. Calatayud. La siguiente variedad más implantada en variedades tintas es la tempranillo con 672 has y un 21% seguida de la syrah con 224 has y un 7%. Dentro de las variedades blancas, la viura es la variedad más implantada con 256 has. de viñedo representando el 8%. El resto de variedades tienen una presencia minoritaria.

Origen.

Hasta hace no demasiado tiempo, se tenía la sospecha de que la tempranillo y la pinot noir estaban emparentadas, pero recientes investigaciones ampelográficas descartan casi al cien por ciento esa posibilidad. La vitis vinífera es, en España, el antecesor común a la mayoría de las vides cultivadas actualmente y fue introducido en la zona sur de la Península Ibérica por los fenicios. Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.




Características.

La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Variedad muy sensible a las enfermedades de la madera especialmente eutipiosis y complejo de la yesca. También es muy sensible al oídio, polilla del racimo, a los cicadélidos y a los ácaros, así como a las roturas por viento intenso si no están los sarmientos bien entutorados. Tiene una resistencia media al mildiu y al black rot. Soporta bastante bien los fríos de primavera ya que en este caso la brotación se retrasa. Poco sensible a la excoriosis. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.




Zonas de cultivo.

A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.




Vinos.

Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.
