La historia de la bodega Calabretta, situada en Randazzo, en la vertiente norte del Etna, tiene sus orígenes a principios del siglo XX. La filosofía de la casa se fundamenta en el respeto a la tradición, al trabajo manual en la poda y el cuidado de la tierra, al uso de fertilizantes naturales procedentes de animales de granja, al uso mínimo de productos químicos (apenas algún tratamiento con azufre y cobre cuando es estrictamente necesario y en muy pequeñas cantidades). La vendimia, realizada también a mano a mediados de octubre, da paso a la fermentación del vino mediante levaduras indígenas y a su envejecimiento en barricas de madera. Todo el proceso de elaboración y crianza tiene lugar en la pintoresca bodega excavada en la roca de lava. Calabretta Gaio Gaio se elabora a partir de las uvas nerello mascalese procedentes del paraje de Calderara, en una parcela de viñas jóvenes, algunas de ellas sin injertar, situada entre 700 y 750 metros sobre el nivel del mar. El nombre del vino está dedicado al padre del actual propietario Massimiliano Calabretta, el Sr. Massimo, conocido familiarmente como 'Gaio', pero ya de por sí el nombre sugiere un vino jovial, de carácter alegre y festivo. Realmente como es. Gaio Gaio es un vino afrutado, floral y ligeramente especiado. En nariz ofrece aromas de frutos rojos, violeta, tabaco y pimienta negra junto a otras notas animales.
