Apasionado de la naturaleza, perfeccionista y con un profundo afán de conocimiento, Raül Bobet es un enólogo que ha llevado su inquietud a las cotas más altas con sus viñedos en tierras pirenaicas. Bajo la D.O. Costers del Segre, Castell d'Encús es el proyecto más personal de este enólogo de larga trayectoria y responsable también de los vinos de Ferrer Bobet. Castell d'Encús se encuentra a unos 1000 metros de altitud, en un entorno priviegiado que ofrece una buena exposición solar y una alta variación térmica entre el día y la noche. Sobre terrenos franco calcáreos de bajo contenido orgánico, la finca cuenta con 23 hectáreas de viñedo de variedades tales como cabernet sauvignon, cabernet franc, merlot, pinot noir, syrah, petit verdot, sauvignon blanc, riesling, semillon y albariño. Entre sus parcelas se encuentran además numerosos lagares de fermentación excavados en las rocas en el siglo XII que, en la actualidad, se estan reutilizando en el proceso fermentativo junto a las tinas de madera y de acero inoxidable. Junto a la recuperación de los métodos más antiguos y tradicionales, la bodega se caracteriza también por el uso de la tecnología más avanzada y una filosofía basada en la investigación y la experimentación. Resultado de todo ello son unos vinos con estilo propio, frescos, complejos y de gran personalidad.

Historia.

El área geográfica que comprende la actual Denominación de Origen Costers del Segre lleva siglos elaborando vinos, pero su ubicación interior y alejado del mar, dificultaban su inclusión en las vías de comercialización, pero obteniendo unos vinos con elementos propios y característicos. Innovaciones en las variedades de uva y en los métodos de producción, fue el primer lugar de Cataluña en introducir las variedades cabernet sauvignon, merlot y chardonnay, junto a las variedades autóctonas, y se adoptaron las técnicas californianas de vinificación. Durante el año 1983: Jaume Siurana, director del Incavi, y Manuel Raventós Artes, director general de Codorniu y de la Bodega Raimat, consideraron que, la excelente calidad vitivinícola de las comarcas ilerdenses precisaba de un consejo regulador, para velar por su tradición vitivinícola y garantizar la excelente calidad de los vinos producidos y liderar la promoción de sus vinos, aprovechando el gran éxito que ya tenían los vinos de Raimat, constituyéndose como D.O. en mayo de 1986 y siendo ratificada dos años después.




Geografía, geología y clima.

Costers del Segre es una región vitivinícola española, situada en la provincia de Lérida, que se ha constituido en denominación de origen. La Denominación de Origen Costers del Segre es un mosaico formado por siete territorios, repartidos a lo largo de toda la cuenca del río Segre y el Pirineo leridano, con el objetivo de agrupar y dotar de entidad propia la vitivinicultura de la provincia de Lérida. Abarca sietes subzonas de producción: Segriá, Raimat, Artesa de Segre, Urgell, Pallars, Vall de Riucorb y Garrigues. Cada una de estas regiones tiene condiciones geográficas y climáticas diversas, alternando zonas de montaña con otras de llanura, cuyo nexo de unión es la cuenca media del río Segre, entre el Pirineo y el Ebro, y el clima interior y seco, alejado de la influencia del mar y con muchas horas de sol, pocas lluvias, pero de elevada humedad debido a las numerosas nieblas invernales. En general, goza de clima continental, con contrastes térmicos, alta insolación y pluviosidad escasa. Las altitudes varían entre los 200 y los 1.100 metros de altitud. Edafológicamente hablando, nos encontramos con terrenos calcáreos cubiertos parcialmente de arena, con una gran uniformidad en toda la denominación. La temperatura media anual es de 14 °C a 15 °C, siendo frecuentes heladas en invierno y temperaturas de hasta 35 °C en verano.




Los vinos.

Los vinos con el sello D.O. Costers del Segre pueden ser tanto blancos como rosados, tintos o espumosos, así como vinos de aguja y vinos de licor. Dependiendo del grado de envejecimiento, los vinos elaborados se clasifican en jóvenes, crianza, reserva y gran reserva. En el conjunto de esta Denominación de Origen las variedades blancas predominantes son las tradicionales, Macabeo y Parellada. Esto hace que los blancos de la región de Costers del Segre sean vinos de perfil más clásico, es decir, ligeros, afrutados y acidulados. La exitosa aclimatación del Chardonnay a la región ha abierto la puerta a vinos de características más modernas, ya sean vinos jóvenes o fermentados en barrica de roble, porque presentan una mayor estructura y se hace más presente su carácter varietal. Entre las variedades tintas predominan el Cabernet Sauvignon, Merlot, Syrah y Pinot Noir, pero también se cultivan las variedades tradicionales, sobretodo el Tempranillo, la Garnacha y el Trepat. Dentro de los matices lógicos que el suelo de cada territorio imprime en sus uvas, los tintos de la DO Costers del Segre se caracterizan porque tienen un aroma potente y un gusto equilibrado, al mismo tiempo que ofrecen una buena expresión tánica y en boca resultan sabrosos, amplios y estructurados.

Origen.

La variedad pinot negro, o más conocida con el nombre en francés pinot noir, pertenece a la familia de las uvas pinot y, aunque no está muy claro el origen de la variedad, se piensa que la pinot noir fue la primera de la familia de las pinot, y una de las primeras variedades obtenidas a partir de viñas silvestres en la parte occidental de Europa Central. A la región del Lago de Constanza llegó alrededor del año 900. En la región de Rheingau comenzó a cultivarse en el siglo XIII. Los perfiles de ADN de la pinot gris y la pinot blanc son idénticos a los de la pinot noir, así que parece claro que se derivan de ella. Sea como sea, las pinot son una familia, y una familia muy querida, entre las que se cuentan otras mutaciones como la pinot meunier o la pinot gouges o musigny. El nombre pinot noir es de origen francés y, probablemente, de las palabras pino (pine) y negro (noir), ya que esta variedad tiene los racimos en forma de cono, como las piñas.




Características.

Las cepas medianamente vigorosas, de porte tumbado, y presentan un desborre y maduración precoces. Desarrollan racimos pequeños, cilíndricos o cónicos, de forma similar a una piña, muy compactos y uniformes, con pedúnculo corto y sin lignificación. Las uvas son pequeñas o medianas y esféricas, tienen una piel oscura, casi negra y azulada, presentando una cicatriz estilar muy marcada y de difícil desprendimiento de su pedúnculo. A pesar de tener un hollejo grueso, es muy sensible al agrietado y a los roces. La pulpa es antociánica, poco o nada pigmentada, blanda y muy jugosa con sabor herbáceo. ES una variedad muy delicada en su cultivo, ya que es muy sensible a las enfermedades fúngicas de la madera a la botritis y al desecado del raspón. Es sensible al mildiu, al oídio y al corrimiento climático, así como a la polilla del racimo, a los cicadélidos y a los ácaros. Se adapta bien a climas templados y a todo tipo de suelos, siempre que tengan buen drenaje, aunque lo ideal sería elegir suelos argilocalcáreos. Es sensible a los fríos primaverales y muy sensible a temperaturas excesivas en verano, ya que se solean sus racimos y pierde muy pronto sus hojas. En climas cálidos madura muy rápidamente y es sensible a las quemaduras solares del fruto. Tiene altas necesidades de magnesio, respondiendo muy bien a los aportes de fósforo y tiene bajos requerimientos en nitrogeno y potasio. La variedad pinot noir recibe también el nombre de Spätburgunder, burgunder, pineau, klevner, plant fin, noirien, pinoz y dorada.




Zonas de cultivo.

La pinot noir es originaria del viñedo de Borgoña, concretamente de la región de Côte-d'Or. También se planta en Italia, España, Alemania, Luxemburgo, Hungría, Kosovo, la Macedonia del Norte, Moldavia, Grecia, Rumanía, Serbia, Eslovenia, Suiza, Bulgaria, República Checa, Eslovaquia, Ucrania, el norte de Croacia, la República de Georgia, Israel, Chile, Argentina, Uruguay, México y Estados Unidos. En Alemania se cultivan unas 11.800 hectáreas de pinot noir, conocida como spätburgunder, lo que representa más del diez por ciento del total de las parras en el país. La mayoría de los viñedos de pinot noir se hallan en Baden (casi 5.900 hectáreas) y en el Palatinado (casi 1.600 hectáreas). Otras regiones importantes de cultivo son Rheinhessen, Wurtemberg, Rheingau y la cuenca del Ahr.




Vinos.

La variedad pinot noir produce mostos con mucho azúcar, siempre que la uva haya tenido una maduración correcta. Estos mostos, de acidez media, recien prensados son incoloros, pero si se mantienen en contacto con los hollejos, rápidamente toman un color primero rosa intenso y posteriormente rojo rubí intenso muy brillante aunque con reflejos marronáceos, por ello pueden dar vinos blancos por sangrado o escurrido rápido y tintos en elaboraciones habituales. Produce un vino de alta calidad apto para crianza, fino, con intensidad y complejo. Es una variedad adecuada para cavas, champagne y vinos de aguja y también para vinos de crianza con cuerpo y vigor, con alta complejidad aromática. El gran rango de buqués, sabores, texturas e impresiones que produce el pinot noir a veces confunde a los que lo prueban. Grosso modo, sus vinos tienden a tener un cuerpo de ligero a medio, con reminiscencias aromáticas a cereza, frambuesa y, en menor medida, grosella, y a otras pequeñas frutas rojas y negras. Tradicionalmente, el tinto de Borgoña de esta variedad es famoso por su sabrosa intensidad, aromas "granjeros" (característica asociada con el tiol y con otros compuestos), pero con el cambio de las modas, las técnicas de vinificación y con clones más modernos y fáciles de cultivar se ha favorecido un vino con más sabores a frutas y con un estilo más limpio.

Acusp está fermentado en tanques de inoxidable y lagares de piedra del siglo XII, es un vino fresco, por la altitud en que se encuentran los viñedos, y un vino floral y frutal; presenta también notas especiadas, de su crianza en barrica, y un buen vino de guarda. Este vino no ha sido ni filtrado ni estabilizado y por tanto pueden aparecer precipitados. Recomendamos decantar. Para la crianza sólo se emplean barricas nuevas, con alto aporte tánico.
