La compañía.

Enzo Boglietti es una granja familiar que produce anualmente alrededor de 100,000 botellas con uvas provenientes exclusivamente de alrededor de 22 h de viñedos propios. “En 1991, por primera vez, vinificamos uvas de menos de 3 hectáreas de viñedos propios. Las 3 hectáreas son el legado del abuelo Matteo Boglietti, nacido en 1899, que poseía porciones de los viñedos Brunate, Roscaleto, Boiolo y Bricco del Dente, todos ubicados en La Morra.
La otra parte de los viñedos proviene, en cambio, de la familia del abuelo Giovanni Montanaro, nacido en 1900, propietario de la granja Fossati, así como una parte del viñedo del mismo nombre también en La Morra. Antes de 1991, todas las uvas se vendían porque la empresa no estaba organizada para transformar ninguno de sus productos agrícolas: leche, carne, cereales y uvas. Solo una pequeña parte de las uvas menos hermosas se vinificaba en casa para producir vino para consumo doméstico. La decisión de comenzar a hacer vino por su cuenta nació de la crisis de los precios de la leche en 1990, cuando la que vino de Alemania tenía un precio tan bajo con el que no podíamos competir.
Así fue que, confiando en los valiosos consejos de amigos productores como Alessandro Fantino, Roberto Voerzio, Andrea Oberto y Eraldo Viberti, comenzó nuestra aventura del vino. Comenzamos a adelgazar en el viñedo, para decepción de mi padre, ciertamente no estaba acostumbrado a tirar uvas al suelo, y adaptamos el establo a la bodega. Nuestro padre Renato Boglietti ha sido nuestro mejor y más asiduo trabajador durante 25 años, muy hábil e incansable en todos los trabajos de viñedo.
Así que tomamos prestada una bomba y la trituradora, compramos 5 tanques de acero y restauramos la vieja prensa de su abuelo Matteo. Teniendo en cuenta el consejo que recibimos, compramos 2 barriles nuevos de 500 litros, uno de 225 litros todo de roble francés y un barril de roble eslavo de 2000 litros que también era nuevo. Recuerdo con gran placer la visita de Bartolo Mascarello, quien nos animó y felicitó por la nueva actividad. La creación de la etiqueta fue encomendada a nuestra prima, la arquitecta Ivana Boglietti, quien en pocos minutos creó una etiqueta lineal y moderna que despertó un repentino interés. 1991 no fue un año increíble para el poder y la estructura de los vinos, Brunate tenía 13% de alcohol por volumen, pero las uvas cosechadas estaban en excelentes condiciones sanitarias y daban vinos elegantes. Después de unos años, Gianni comenzó a colaborar en la gestión de la empresa y en 1996 pasó a nuestra empresa.




Las uvas.

Nuestro objetivo es hacer vinos que sean bien reconocibles tanto para la variedad de uva como para el área de origen, respetando y tratando de preservar el medio ambiente y el territorio. Para el viñedo utilizamos los mejores principios de la lucha integrada combinando un manejo agronómico prudente con el único uso de productos orgánicos para la defensa fitosanitaria. Los viñedos son de hierba, fertilizados orgánicamente y no están químicamente tratados. Estamos muy orgullosos de obtener la certificación orgánica para todas nuestras uvas en 2017 después de 3 años de conversión orgánica. Se pone gran énfasis en la calidad de las uvas, en minimizar el impacto ambiental de los cultivos, en un estricto control de los rendimientos. Se practica una poda corta de Guyot en todas las 20 hectáreas actuales de viñedos, lo que corresponde a 5/6 brotes por capofrutto para las variedades Dolcetto y Barbera, 7/8 para Nebbiolo. Extremadamente preciso y laborioso es el manejo del follaje durante el período de fines de la primavera y principios del verano, de modo que los racimos estén bien ordenados, espaciados y ventilados con la consiguiente reducción de los tratamientos con pesticidas y la homogeneización de la maduración de las uvas. Para obtener bajos rendimientos de fruta por hectárea, en el momento del envero, solo queda un racimo por rama. Posteriormente, aproximadamente 3/4 semanas después de la cosecha esperada, clasificación escrupulosa del número de racimos por vid y su integridad, así como la reducción del tamaño en caso de que sean demasiado voluminosos. Los vinos.

Una vez cosechadas a mano, las uvas se transportan inmediatamente a la bodega en cajas para ser clasificadas, despalilladas y trituradas.
En lo que respecta a la vinificación, somos eclécticos y no nos intimida el uso de diferentes soluciones: desde tanques de acero inoxidable hasta rotomacerías, desde barriles cónicos de roble de 2500lt a 4000lt y pequeños toneles de 600lt. Lo mismo ocurre con el envejecimiento, donde utilizamos barricas de roble de 225 a 600 litros, tanques de 1500lt a 4500lt y también tanques de concreto.
Intentamos limitar el uso de sulfitos, clarificaciones y filtración tanto como sea posible y no utilizamos ningún tipo de taninos enológicos. Las fermentaciones alcohólicas y malolácticas de todos los vinos ocurren espontáneamente.
En los últimos años, hemos tomado medidas para reducir el porcentaje de roble nuevo utilizado, los tiempos de residencia de los vinos de madera, las temperaturas de fermentación y la extracción.

Origen.

Hay varias teorías sobre el origen del nombre de esta uva, una sería la palabra nebbia, que significa “niebla”, y hace referencia a la que se postra sobre las colinas de la región del Langhe, en el noroeste de Italia, durante el tiempo de la cosecha. Características.

En la bodega es delicada, muy propensa a la oxidación, la cual cambia su color, y puede perder sus aromas frutales. Se debe tener mucho cuidado en su manejo desde el viñedo hasta que llega a la botella, pero cuando todos estos factores convergen en una perfecta armonía, el resultado final puede ser excepcional.




Zonas de cultivo.

La uva nebbiolo no es tan viajera como la merlot o la chardonnay; es decir, no la encontramos por todo el mundo. Fuera de su natal Italia, sólo en alguna parte de California, como por ejemplo en Napa Valley, y en el Valle de Guadalupe, en México, podemos probar cierta cantidad de vinos hechos con esta uva.




Vinos.

Esta variedad es autóctona es utilizada para crear dos excelentes vinos principalmente: el Barolo y el Barbaresco. Ambos son tipos de vinos y denominaciones de origen al mismo tiempo, los cuales pueden ser considerados como los mejores vinos de toda Italia. Los vinos elaborados con la variedad nebbiolo pueden requerir años de envejecimiento para equilibrar el nivel de taninos con otras características.
