Vinos Tierra de Cádiz.

La Indicación Geográfica Vinos de la Tierra de Cádiz representa una de las apuestas más interesantes del actual panorama de los vinos de mesa andaluces. Bajo este nombre, se agrupan un buen número de bodegas que producen con esmero y paciencia un producto de gran calidad tanto en vino blanco como en tinto. Las indicaciones geográficas designan a un producto agrícola o alimenticio concreto que posee un origen geográfico determinado, y cuya calidad o reputación se debe a dicho lugar de origen. De acuerdo con la normativa de la Unión Europea, se protege la indicación geográfica protegida (IGP) si el vínculo del nombre del producto con el medio geográfico sigue presente en al menos una de las etapas de la producción, de la transformación o de la elaboración. Sobra decir, que la provincia de Cádiz ya cuenta con dos denominaciones de origen por excelencia en el vino, como son Jerez y Manzanilla de Sanlúcar. Se hace necesario, por tanto, aprovechar también el gran conocimiento y la tradición que posee la provincia gaditana para la elaboración de vinos tintos y blancos. Cádiz es una indicación geográfica utilizada para designar los vinos de mesa de la comarca vitícola andaluza de Cádiz, que abarca los términos municipales de Arcos de la Frontera, Chiclana de la Frontera, Chipiona, El Puerto de Santa María, Jerez de la Frontera, Vejer de la Frontera, Prado del Rey, Puerto Real, Rota, Sanlúcar de Barrameda, Olvera, Setenil, Villamartín, Bornos, Trebujena y San José del Valle, en la provincia de Cádiz, España. El clima.

Los vinos de la Tierra de Cádiz se elaboran con las uvas procedentes de horizontes abiertos, dominados por terrenos llano o suavemente ondulados y colinas de escasa pendiente, cuyos suelos son, predominantemente, terrenos calizos, con buena retentiva de la humedad y evitan la evapotranspiración, además de arcillas y arenas. El clima de la zona es cálido mediterráneo con influencia oceánica, disfrutando de temperaturas comprendidas entre los 5° de mínima en invierno y los 35° de máxima en verano, con un riesgo mínimo de heladas. Las viñas son mecidas por dos vientos, el levante, que sopla desde el interior y es seco y cálido, y el poniente, que procede del océano, aportando humedad y frescura. La Tierra de Cádiz no es una zona de lluvias demasiado copiosas, con unos trescientos días de sol al año, llegando a 1.000 horas de luz en verano.




Variedades de uva.

Los vinos.

La I.G.P. Vinos de la Tierra de Cádiz elabora vinos blancos, rosados y tintos. Los tintos jóvenes tienen una fase visual con tonos violáceos tirando a rojo rubí, con aromas afrutados y una boca armónica con cuerpo. Después de pasar por barricas de roble, los tintos adquieren un color a cereza picota intenso, con nariz potente, amplia y muy equilibrada, dando una boca profunda, amplia y persistente. Los rosados tienen un color brillantes, aromas afrutados y un sabor fresco y ligero. Los blancos jóvenes aportan una fase visual entre amarillo pálido e intenso, con toques afrutados en nariz y una boca fresca y ligera. Cuando se envejecen en barrica el amarillo toma tonos dorados intensos, la nariz mantiene la fruta, pero adquiere toques de madera al igual que en boca.

Origen.

No hay unanimidad sobre el origen de la uva shirah. Algunos autores sostienen la teoría de que procede de la ciudad persa Shiraz, otros, sin embargo, la sitúan en Siracusa en Sicilia, mientras que otros indican que originaria de la zona francesa del Ródano, donde tiene una penetración y una gran importancia en su viticultura. Lo que sí parece indiscutible es que el origen de esta variedad, desde el punto de vista vitivinícola, debe situarse en el Ródano. Al norte de este río, la tribu gala de los Allobroges cultivaba ya en tiempos del Imperio Romano una uva que crecía de manera asilvestrada en los alrededores y que llamaron allobrógica; parece ser que con el tiempo esta uva evolucionó hasta llegar a ser la cepa que todos conocemos hoy como syrah. El escocés James Busby llevó esquejes de varias uvas a Australia en 1832 y la syrah fue la que mejor se adaptó a las condiciones climatológicas de Oceanía. Cuando en los años noventa los vinos del Ródano empezaron a popularizarse, en Australia se dieron cuenta de que tenían un tesoro.




Características.

Las cepas de la variedad syrah son muy vigorosas, de porte erguido o semierguido con sarmientos muy largos, delgados, delicados y con muchos hijuelos. Su desborre es de media estación a tardío y maduración precoz. Los racimos de la variedad syrah son de tamaño medio, compactos cilíndrico-alargados, con pedúnculo largo y poco lignificado. En ocasiones con una primera ramificación pedunculada y separada del resto del racimo. Con tamaño de bayas muy uniforme, estas son de tamaño pequeño a medio, de forma ligeramente elíptica, aunque en algunos materiales esta característica apenas es visible excepto en las racimas. Su piel es negro azulada y cicatriz estilar muy marcada, muy abundante en pruina, hollejo grueso y resistente y muy difícil de desprender de su pedúnculo. La pulpa no tiene pigmentación, es consistente y de jugosidad limitada. La uva syrah también es conocida como como shiraz, sirah, sérine, candive, hignin, sirac, syra, biaune, balsamia. Es una variedad que se adapta bien a todo tipo de suelos, siempre que no tengan excesos de humedad. El viento produce bastantes daños en esta cepa si sus sarmientos no están bien tutorados y sujetos, se recomienda utilizar espalderas altas. Es muy sensible a la eutipiosis, a la sequía y a la clorosis férrica, así como a los ácaros. Sensible al mildiu y al black rot, a la polilla del racimo, a la fitotoxicidad por herbicidas, especialmente al diurón. Es poco sensible al oídio al principio de su brotación, pero su sensibilidad aumenta a partir de la cierna. Tolera bastante bien la botritis, pero cuando la maduración es excesiva puede verse afectada por ella. No suele verse afectada por corrimiento de racimo. No es una cepa que requiera de altos niveles de magnesio pero sí de nitrógeno, fósforo y potasio. Sus injertos deben hacerse sobre portainjertos que resistan bien la clorosis férrica. Se puede realizar la poda en pulgares cortos o en Guyot y se desaconseja despuntarla.

Hoy en día podemos encontrar la variedad syrah en toda Europa, pero también en Australia, Argentina, Chile, Sudáfrica y California. En España el cultivo de la variedad syrah se extiende prácticamente por toda su geografía, siendo recomendada su plantación en las Denominaciones de Origen en Cataluña, Extremadura, Comunidad Valenciana, Andalucía, Aragón, Asturias, Baleares, Canarias, Cantabria, Castilla-La Mancha, Comunidad de Madrid, Navarra, Murcia, viña syrah.




Vinos.

La uva shyrah produce vinos de buena calidad, amables y sabrosos, con un alto grado alcohólico. Los tintos shyrah tienen mucho color y cuerpo, por tener gran cantidad de extracto seco. Son opulentos, vigorosos, potentes, de textura sedosa, con cuerpo, gran cantidad de taninos y materias colorantes, un característico aroma a violeta y cassis, y ligeros toques ahumados. Tienen una gran capacidad de envejecimiento donde mantienen bastante bien su color y no adquieren exceso aroma a madera, aunque sí tienen toques de cuero, alquitrán y ahumado, y ligeramente a vainilla. Es un vino con una capa oscura muy cubierta, con intensidad, aromático, un vino que ha adquirido mucha fama a nivel mundial. En nariz aromas a fruta madura, recordando a las grosellas, las violetas, las moras silvestres y a las frambuesas, manteniendo aromas a pimiento o canela y clavo. El color es intenso, refinado, sólido y austero, especiado y de acidez destacable.El vino syrah se utiliza mucho en coupages con Cabernet Sauvignon y Merlot.

Origen.

Hasta hace no demasiado tiempo el origen de esta uva no estaba claro, existiendo muchos mitos y conjeturas. Se hablaba del origen de Sauvignon como derivada del francés sauvage, que significa salvaje, y podría hacer referencia a tratarse de una viña silvestre nativa de Francia. Otra teoría era que la uva tenía orígenes antiguos y que quizás había sido la uva bitúrica, usada para hacer el antiguo vino romano al que hizo referencia Plinio el Viejo. Otra teoría sostiene que la uva se originó en la región española de la Rioja. Los verdaderos orígenes de esta variedad se descubrieron en 1996 al estudiarse genéticamente en el Departamento de Viticultura y Enología la Universidad de California en Davis, con un equipo liderado por Carole Meredith. Estos estudios determinaron que la cabernet Sauvignon fue el resultado de la mezcla de dos tipos de uva en Francia: Cabernet Franc y Sauvignon Blanc, aunque se supone que esta mezcla fue producida siglos anteriores a su nacimiento, alrededor del siglo XVII ya que lo más común en Burdeos era recoger todas las variedades de uva en una sola.




Características.

La clave de su éxito es que se trata de una variedad de fácil cultivo. Por ello, se adapta a una gran variedad de suelos, climas y latitudes. De hecho, desde Francia, la uva se ha extendido por Europa y por América. Es una variedad vigorosa, de brotación medio-tardía, cuyas cepas presentan un pámpano de porte erguido ramificadas, con muchas racimas, de desborre tardío y maduración de media estación.Los racimos son muy pequeños, de forma cónica, compacidad media y con tamaño de bayas muy uniforme que se desprenden con facilidad cuando están maduras. Pedúnculo corto y poco lignificado. Ocasionalmente alados. Las uvas son pequeñas, esféricas, su piel es muy oscura, azulada, con mucha pruina, la pulpa es dura y jugosa, ligeramente pigmentada cuando madura y sin pigmentación en las primeras fases del enverado, cpm sabor herrbáceo intenso y con fuerte sensación astringente. Su hollejo muy grueso. A la cabernet sauvignon se le conoce también por otros nombres como Vidure, Bidure, Burdeos, Carbouet. Es una variedad sensible a la eutipiosis, al mildiu, al oídio, a los cicadelidos y a los acaros. Resiste bastante bien al complejo de hongos de la madera, a la excoriosis y sobre todo a la botritis, así como a la podredumbre. En épocas de sequía intensa su maduración se complica, evolucionando de manera deficiente. Se adapta bastante bien a cualquier tipo de suelo, aunuque los mejores resultados se obtienen en terrenos de grava, sin exceso de agua, algo ácidos y bien expuestos. Es bastantes sensible a la carencia de magnesio, que se asocia a la desecación del raquis de los racimos. Resiste bastante bien los fríos primaverales y los vientos. Apenas se ve afectada por corrimientos de racimo. Despuntes precoces inducen la aparición de muchos hijuelos y abundantes racimas, por lo que su calidad se deteriora. Requiere podas largas y en guyot para su adecuada producción. El rendimiento de esta variedad está comprendido entre 2-14 toneladas por Ha, dependiendo del vigor de la viña.




Zonas de cultivo.

Es una planta de viña de uvas de vino tinto muy extendida en todo el mundo. Actualmente la uva Cabernet Sauvignon se cultiva en Francia, España, Italia, Chile, California, Australia y Argentina principalmente. A nivel mundial, la superficie que ocupa el cabernet sauvignon es de 341,000 Ha. Es la segunda variedad tinta más plantada (2015), después de la variedad china Kyoho (uva de mesa), ocupando la décima posición en el ranking mundial de variedades de vid plantadas. Las superficie de cabernet Sauvignon supone el 4% de la total de viñedos en el mundo.




Vinos.

El estilo de la cabernet sauvignon está muy influenciado por la madurez de las uvas en el momento de la cosecha. Mientras menos maduras están, mayor es su contenido de pirazinas y pueden exhibir sabores pronunciados a pimiento verde y a vegetales. Cuando es cosechada demasiado madura, los vinos pueden tomar sabores amermelados y pueden tener aromas a grosellas negras guisadas. Algunos viticultores escogen cosechan sus uvas en diferentes niveles de madurez para incorporar diferentes elementos y añadirle más complejidad al vino. El prensado de la uva cabernet Sauvignon produce un zumo oscuro, intenso y muy vivo, austero y tánico. Cuando el vino de cabernet sauvignon es joven normalmente exhibe un fuerte sabor a cerezas negras y a ciruela, aromas a grosella, pimineto verde y también en ocasiones notas de menta y aceitunas recién recolectadas o monte bajo y hierbas aromáticas. Posee un hollejo muy grueso del que se extraen muchos taninos dulces lo que permite su largo envejecimiento. Si la madera es suave, da vinos de textura y fineza muy agradables, con aromas a chocolates, a tabaco y en parte a mina de lápiz, pero conservando su característico aroma a grosella y en ocasiones a pimiento. El vino monovarietal puede carecer de suavidad y redondez, por eso se utiliza mucho con coupages con otras variedades como merlot o syrah. Son muy aptos para el envejecimiento, pudiendo elaborarse extraordinarios vinos de guarda.

Origen.

La variedad Petit Verdot es una uva tinta clásica para los ensamblaje de los vinos en la región de Burdeos. Su origen no es preciso, incluso se cree que su cultivo en la región es anterior al de la cabernet sauvignon. Sus características sugieren una procedencia de latitudes más cálidas que la zona de la Gironde. La petit verdot está emparentada con las cepas Tressot y Duras. Estas variedades pudieron haber sido introducidas por los romanos en su avance hacia el interior desde el Mediterráneo. En un principio se plantó en la región de Burdeos y, al no poder ser utilizada para los propósitos que se tenía pensado, las vides de esta variedad, los viticultores comenzaron a reemplazarse a mediados del siglo XX y cayó en el olvido. Desde hace pocos años, esta cepa goza de un resurgimiento en Burdeos.




Características.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia La uva petit verdot se desarrolla en cepas muy fértiles, medianamente vigorosas, porte semierguido y entrenudos muy cortos. Su brotación y maduración son tardías. Los racimos son reducidos de tamaño, poco compactos y con un pedicelo muy largo. Las bayas son pequeñas, esféricas, muy uniformes en todo el racimo, con piel oscura de color violeta, con una cicatriz estilar muy marcada, rodete grueso y pedicelos largos, de difícil desprendimiento. Su hollejo es grueso y su pulpa, sin pigmentación, es compacta, muy jugosa y con sabor que recuerda a las frambuesas. Al ser una uva de brotación temprana y maduración tardía, la viña petit verdot es sensible al clima helado de los comienzos de la primavera y del invierno, lo que dificulta su cultivo. Es una variedad muy rústica, con buena adaptabilidad a todo tipo de suelos y a la sequía, poco sensible al mildiu, al oídio y bastante resistente a la podredumbre gris. Es muy sensible a la polilla del racimo y a los ácaros y tiene elevados requerimientos en magnesio y fósforo, y bajas necesidades en nitrógeno y potasio.




Zonas de cultivo.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia donde, debido a sus características climáticas, tienen ciertos problemas para la maduración, por lo que fue sustituida por otras variedades más adecuadas, pero hace algunos años se volvió a plantar en Burdeos. En España, donde fue introducida en 1991, en Ronda, por el enólogo Juan Manuel Vetas, se están obteniendo vinos muy interesantes por disponer de un mayor número de horas de insolación y una temperatura media más alta. Es variedad autorizada para las Comunidades autónomas de Andalucía, Castilla-La Mancha, Castilla y León, Extremadura, Región de Murcia y Comunidad Valenciana. También se encuentran plantaciones de viñedos de petit verdot en Australia, país que cuenta con la mayor extensión territorial de esta vid, Argentina y , Estados Unidos, específicamente California.




Vinos.

Las características organolépticas de los vinos de petit verdot se podrían caracterizar por una fase visual de color rojo violáceo, intenso, brillante, con aromas de frutos rojos, ciruelas y moras combinadas con una nariz más acaramelada, vainilla y moca, adquiridos en su crianza en barrica, por lo que presenta una gran complejidad aromática. En boca tiene un gran gran volumen, muy graso y carnoso con una acidez bien marcada. Los taninos son dulces y bien equilibrados con la dulzura de la fruta y de la madera. Sus aromas también se han comparado a las virutas del plátano y del lápiz. Adquiere fuertes tonos violáceos durante el proceso de maduración. Cuando la uva alcanza su plena madurez, produce vinos con mucho cuerpo con taninos cautivadores y ricos en color. Debido a esto, petit verdot ganó su fama como una uva de mezcla popular en los vinos de Burdeos, pero hoy solo juega un papel más pequeño en las mezclas.
