Ubicación y características.

Valdejalón es, probablemente, la región vitivinícola más desconocida de Aragón, entre otros motivos porque no está reconocida como denominación de origen. Situada en el centro del triángulo que forman las DOs Campo de Borja, Cariñena y Calatayud y marcada por el discurrir del río Jalón, sus vinos se comercializan con el indicativo de vinos de la tierra, lo que en la nueva legislación europea se corresponde con una IGP (indicación geográfica protegida). Por eso tiene tanto mérito este pequeño proyecto encaminado a recuperar las viejas garnachas del lugar en un momento en que la zona apenas cuenta con estructura productiva. Detrás están el Master of Wine Fernando Mora, el enólogo Mario López y el abogado Francisco Latasa, experto en comercio internacional, todos ellos en la treintena. La historia de Fernando Mora es especialmente interesante. Ingeniero dedicado a la industria eólica, no ha parado hasta pasarse al sector del vino. Llegó a plantar 14 cepas en Alagón,Zaragoza y a intentar elaborar vino en su propia casa con un kit doméstico de esos que anuncian por Internet controlando la temperatura con hielo que colocaba en su bañera. En 2013 dejó su trabajo como ingeniero y en 2015 obtuvo el Diploma WSET. Hoy compatibiliza el trabajo en Frontonio con la asesoría enológica, las catas y la formación.




Contracorriente.

Los vinos de entrada de gama, se elaboran en la pequeña bodega familiar de Mario en Épila, situada tras la tienda donde su madre todavía vende vino a granel. El proyecto toma el nombre de San Frontonio, el patrón del municipio, del que se dice que fue decapitado por los romanos pero cuya cabeza arrojada al Ebro fue hallada río arriba a contracorriente. A ellos les gusta especialmente el concepto de ir a contracorriente. Trabajan directamente unas 25 hectáreas y compran algo de uva a terceros. La mayor parte está situada en el entorno de Épila, en la margen izquierda del río, a algo más de 300 metros donde predominan suelos arcillo-calcáreos, y una pequeña parte más al oeste, donde se superan los 600 metros y dominan las pizarras rojas. Son todo viñedos de secano en una zona de temperaturas extremas y con bajos índices de pluviometría en el entorno de los 300 litros/año. El primer Frontonio nació con la cosecha 2010, pero la gama actual es realmente amplia. La marca de entrada de gama es Botijo Rojo, todo garnachas en versión joven, una blanca y una tinta, y con crianza en madera en barricas usadas de 500 litros y cemento en el caso del Viñas Viejas.




Línea de vinos.

- La línea de Frontonio arranca con dos vinos de municipio bajo la marca Microcósmico, que incluye una garnacha tinta de distintos suelos con algo de pizarra, 8.000 botellas y un blanco de macabeo. El siguiente escalón, que podría corresponderse con un concepto de premier cru, se diferencia con una X en la etiqueta y aglutina los Frontonio Telescópico: Una garnacha tinta de un viñedo pizarroso a 750 metros, 5.000 botellas, un blanco de garnacha blanca y macabeo, 4.500 botellas y un energético monovarietal de cariñena de un viñedo de suelos arcillo-calcáreos de Épila, 4.000 botellas, que se trabaja en fermentador abierto de 4.000 litros y se cría entre nueve y 10 meses en barricas usadas de 500 litros. También con el símbolo de la X se comercializa una nueva experiencia de garnacha de altura y muy baja intervención envejecido en barricas de 456 litros. Con fruta muy pura y directa, se la ha bautizado como Frontonio Supersónico, 5.000 botellas. Muchas de las garnachas fermentan en lagos abiertos, aunque también se utiliza el acero inoxidable y las barricas. Para las malolácticas y la crianza se emplea bastante el cemento. La producción actual se sitúa en el entorno de las 100.000 botellas.
- La gama más alta se corresponde con los grand crus o garanchas de pago que, en el entorno de los 35-40 €, se comercializan como Frontonio a secas y se distinguen por sus etiquetas de color crema y el uso de lacre en lugar de cápsulas. Una de las más impresionantes es la garancha blanca (menos de 700 botellas), un blanco brutal con enorme profundidad y una acidez insospechada en tierras aragonesas. Existe también una garnacha tinta (poco más de 1.000 botellas) procedente de suelos arcillo-calcáreos y el tinto Las Alas de Frontonio (poco más de una barrica) que intenta embotellar el paisaje de un viñedo pizarroso situado a gran altitud.
- En 2019 salió al mercado su proyecto más ambicioso, El Jardín de las Iguales. Nace de un paraje abrupto y aislado situado en Alpartir, un municipio de la margen derecha del Jalón con viñedos compartidos entre Valdejalón y la DO Cariñena que se extienden por las faldas de la Sierra de Algairén. Uno de sus principales atractivos son la altitud que está por encima de los 700 metros y la orientación noreste que sirven muy bien a su propósito de elaborar garnachas cada vez más frescas. La gran joya del lugar es un viñedo de macabeo que han datado en 1890 y unas parcelas viejas de garnacha junto a las que se han plantado cinco hectáreas. Para la elaboración se ha recuperado una bodega con calados subterráneos en Alpartir a donde se ha trasladado también la elaboración de los Frontonio de gama media y alta. Bajo la marca de El Jardín de las Iguales se comercializará un blanco de gran profundidad elaborado con el viejo viñedo de macabeo, solo 900 botellas y una garnacha perfumada y vibrante, 1.300 botellas, con precios récord hasta la fecha en Aragón.
- Desde la cosecha 2015 cuentan con un segundo proyecto en Campo de Borja denominado Cuevas de Arom.

Origen.

El origen de la uva garnacha está localizado, según se ha comprobado ampelográficamente, en la región de Aragón, en el noreste de España. Desde allí fueron llevados a otros territorios de la Corona de Aragón, como Cerdeña o el Rosellón, en el sur de Francia. Uno de los primeros nombres que recibió fue "tinto aragonés”. En Cerdeña se conoce como cannonau, donde se afirma que se originó allí y que se extendió a otras tierras del Mediterráneo que estaban bajo el gobierno de Aragón. La garnacha ya estaba bien difundida a ambos lados del Pirineo cuando la región de Rosellón fue anexionada por Francia. A partir de ahí la vid se abrió camino a través de Languedoc y al sur de la región del Ródano, donde quedó bien asentada en el siglo XIX. A pesar de su preponderancia en las cercanas regiones de Navarra y Cataluña, la garnacha no fue plantada ampliamente en La Rioja hasta principios del siglo XX, cuando se replantaron los viñedos después de la epidemia de filoxera. Australia comenzó a plantar cepas de garnacha en el siglo XVIII, convirtiéndose en la variedad de uva de vino tinto más plantada del país hasta que fue superada por la syrah a mediados de los años sesenta. En el siglo XIX, los viticultores de California apreciaron la capacidad de la vid para producir altos rendimientos y soportar el calor y la sequía.




Características.

La variedad garnacha crece en cepas muy vigorosas de porte erguido, con elevada fertilidad y muy productivas. Los racimos son entre medianos y grandes, muy compactos y de bayas bastante uniformes, con pedúnculo corto. Las bayas son medianas de tamaño, esféricas, con epidermis de color rojo violeta oscuro, de difícil desprendimiento de su pedicelo. Su hollejo es fino, muy sensible a roces y con mucha pruina. La consistencia de su pulpa es blanda, muy jugosa, sin pigmentación. La garnacha tinta es una variedad muy sensible al mildiu tanto en hojas como en racimos, al black rot, a la excoriosis y a la yesca. Resiste muy bien al oídio, pero no al oídio tardío. Es muy sensible a distintos tipos de corrimientos ya sean fisiológicos, por frio, o inducidos por determinados patrones como Rupestris de Lot. Se ve bastante afectada por la polilla del racimo y los cicadélidos. Sensible a la necrosis bacteriana y a los virus del amarillo y bandeado de nervios, así como al desecado del raquis y por ello con altos requerimiento en magnesio. Su sensibilidad a la botritis y a la podredumbre ácida es media. No tolera bien los suelos muy húmedos o encharcados. Las cepas de garnacha son algo sensibles al corrimiento y poco a la eutipiosis y a los ácaros. Son cepas que resisten muy bien el viento y la sequía, adaptándose a cualquier tipo de suelo. Sus podas han de ser cortas, dando buenas producciones y de calidad al disponerse en espalderas, pero producciones excesivas reducen el color y minimiza su contenido en azúcar y pierde aroma. También es exigente en fósforo y boro. Poco exigente en nitrógeno.




Zonas de cultivo.

La garnacha está muy presente en todo el mundo, destacando Francia y España, aunque desde finales del siglo XX la superficie plantada ha ido decreciendo debido a que se han puesto de moda otras viñas como tempranillo, cabernet Sauvignon y merlot. En España es común en Borja y Cariñena, ambas en Aragón. Se usa en las zonas de Denominación de Origen Calificada de la Rioja y Priorato, además de en las áreas montañosas al suroeste de Madrid, al norte de la provincia de Toledo (D.O. Méntrida) y en Cebreros (Ávila). Otras regiones vitícolas con considerables plantaciones de garnacha incluyen Costers del Segre, L'Empordá-Costa Brava, La Mancha, Madrid, Penedés, Somontano, Tarragona, Terra Alta. Es una variedad recomendada en las comunidades autónomas de Aragón, Castilla-La Mancha, Castilla y León, Cataluña, Extremadura, Madrid, País Vasco y Comunidad Valenciana y otras con menor presencia. Es la uva protagonista de una gran mayoría de los vinos rosados de la D.O. Navarra. Vinos.

La garnacha es una uva que se utiliza, en muchas zonas, para mejorar el color y la graduación alcohólica de vinos de otras variedades. Los Los vinos jóvenes de garnacha tienen aromas de pimienta recién molida pero manteniendo aromas de frambuesa y moras. Al envejecer, con poca crianza en barricas de roble, los vinos mantienen su color potente, adquieren aromas a fruta madura, manzana y toques minerales, sobre todo los procedentes del Priorato. Son vinos de grado alcohólico elevado, afrutados, redondos y amables, con gran intensidad aromática (frutas negras muy maduras, ciruelas secas) y con buena capacidad de crianza.
