La uva.

Es una variedad de uva de piel oscura cuyo lugar de origen es la región de Piamonte, esta región cuenta con denominación de origen controlado y garantizado (DOCG) que han sido proporcionadas exclusivamente a la Dolcetto.
Las DOCG más considerables se les atribuye a viñedos ubicados cerca de Dogliani, Diano d'Alba y Ovada mientras que la denominación de origen controlada (DOC) se le ofrece a los vinos italianos como el Dolcetto de Alba, Acqui y Asti.
