El enólogo.

Olivier Rivière es un enólogo inquieto y muy admirado por su gran capacidad técnica, tanto en el campo como en la bodega, un hombre que escucha el terreno, la viña, y sabe interpretarla. Sus vinos son honestos, fieles reflejos del terruño y de las uvas, que cultiva tanto en la Rioja Alavesa, como en Arlanza y Navarra. Por el momento. Olivier Rivière ha trabajado en diferentes bodegas de renombre, y codo a codo con personalidades importantes del mundo del vino (Elian da Ros, Fréderic Cossard, Domaine Leroy, Telmo Rodríguez...). Su proyecto Olivier Rivière Vinos comienza en Rioja en el año 2006 y a él se une Antoine Habera en el año 2012. Los viñedos se cultivan sin utilizar ningún tipo de herbicidas ni abonos químicos, y los tratamientos se realizan exclusivamente a base de productos biológicos, aplicados sólo cuando son estrictamente necesarios. La vendimia es manual y la vinificación se lleva a cabo sin añadir levaduras. Con pequeños proyectos en Rioja, Arlanza y Navarra, el francés Olivier Rivière es uno de los más claros representantes de la nueva hornada de pequeños productores que han surgido en España en la última década. Llegó a nuestro país en 2004 para trabajar con Telmo Rodríguez, pero muy pronto empezó a comprar uva y elaborar por su cuenta. En los últimos años además se ha hecho con viñedos propios en distintas zonas que, fiel a su filosofía borgoñona, elabora por separado. El primero fue en el paraje El Quemado, en Covarrubias, un valle olvidado de la Ribera del Arlanza (Burgos); luego llegaron Alto Redondo en Dicastillo (Navarra) y más recientemente varias viñas en el entorno de Laguardia (Rioja). Asesora enológicamente a Bodegas Lacus en Rioja, en cuyas instalaciones de Aldeanueva de Ebro elabora también sus riojas.




Su filosofía y sus vinos.

Para Rivière el foco de atención está en el viñedo y en la obtención de uvas de alta calidad. Elabora normalmente por municipios o viñedos y apuesta por depósitos de vinificación pequeños: tanques de cemento o tinas de roble de 2.000 a 5.000 litros. A menudo emplea raspón en fermentación y definitivamente apuesta por volúmenes grandes para la crianza: barricas de 300 y 500 litros.
En Rioja trabaja con uvas de distintos puntos de la denominación. Elabora dos blancos que buscan complejidad y desarrollo en botella, ambos trabajados en barrica y con uvas de Labastida: El Bastid, antes llamado Jequitibá, y el más reciente, original, complejo y muy sorprendente Mirando al Sur, que se cría en botas de Jerez. En tintos, Rayos Uva, es un coupage de uvas de Rioja Baja (tempranillo, garnacha y graciano). Ganko es un original coupage de garnacha y mazuelo a partes iguales que se elabora con uvas de Cárdenas (valle del Najerilla) y vinifica habitualmente con raspón, lo que imprime frescura y carácter balsámico. Desde la cosecha 2013 elabora Las Viñas de Eusebio, con uvas propias y alquiladas en el entorno de Laguardia y Losares, a partir de una viña vieja de 1930 en propiedad en Navaridas que da notable profundidad y más concentración al vino. El grupo de vinos de parcela se cierra con Pozo Alto, que se elaboró por primera vez en 2015 y es una original y vibrante combinación de graciano con un 20% de tempranillo y garnacha, una selección muy específica dentro de un viñedo más amplio ubicado en Leza. El proyecto de Ribera del Arlanza está centrado en los tempranillos cultivados en el paraje específico de Covarrubias, caracterizados por su altitud y microclima diferenciado. Originariamente incluía dos tintos: uno de municipio, El Cadastro, elaborado con uvas de tres parajes diferentes; y la etiqueta de pago El Quemado, junto con el muy escaso blanco Basquevanas, que se elabora recopilando las uvas blancas, mayoritariamente de albillo real, que se encuentran repartidas en los distintos viñedos y que no se elabora en todas las añadas. Posteriormente se ha lanzado La Vallada, que se elabora con uvas de un viticultor local. Respecto a Alto Redondo, su garnacha navarra, está centrada en la recuperación de un pequeño y viejo viñedo cuyos escasos rendimientos no le permiten elabora el vino todos los años.

Origen.

Hasta hace no demasiado tiempo, se tenía la sospecha de que la tempranillo y la pinot noir estaban emparentadas, pero recientes investigaciones ampelográficas descartan casi al cien por ciento esa posibilidad. La vitis vinífera es, en España, el antecesor común a la mayoría de las vides cultivadas actualmente y fue introducido en la zona sur de la Península Ibérica por los fenicios. Posteriormente se extendió por toda España, aunque sólo existen algunas referencias al nombre tempranilla. En el siglo XII, en el Libro de Alexandre, se mencionan las uvas por el nombre “tempraniella” refiriéndose a zonas que hoy se encontrarían en la Ribera del Duero. Hasta el siglo XVII, esta variedad se cultivaba exclusivamente en la España continental, donde las condiciones climáticas del tercio norte de la península eran las más apropiadas para su desarrollo. En el siglo XVII los colonizadores españoles llevaron a América semillas de tempranillo, manteniéndose prácticamente inalterada genéticamente hasta la actualidad. La uva tempranillo está actualmente disfrutando de un “renacimiento” en la producción vinícola mundial, sobre todo como resultado de los esfuerzos de una "nueva ola" de cultivadores españoles, que mostraron que era posible producir vinos de gran carácter y calidad en zonas fuera de la región riojana.




Características.

La uva tempranillo es una variedad de ciclo corto con brotación en época media y maduración temprana, de buena fertilidad y alta producción que suele ser regular. Las cepas de esta variedad son vigorosas y de porte muy erguido. Producen racimos grandes, con hombros marcados, compactos, uniformes en el tamaño y en el color de las bayas, su pedúnculo es de tamaño medio y poco lignificado, excepto en la base. Las uvas tienen un tamaño entre mediano y grande, con epidermis muy oscura y tonalidades azuladas, esféricas y muy implantadas en su pedicelo lo que las hace de difícil desprendimiento. El hollejo es grueso y su pulpa, sin apenas pigmentación, es blanda, carnosa y muy jugosa. Esta variedad de uva también recibe el nombre de Cencibel, Temprana, Tinto fino, Tinta fina, Tinta de Toro, Tinta del Pais, Ull de llebre, Tinto Roriz Primerenc, Aranda, Argand, Chinchillana, Marinera, Santa Ana, Santiaguera, Ullada. Debido a su gran sensibilidad a las plagas y enfermedades, particularmente la filoxera que devastó las vides en el siglo XIX, y aún amenaza actualmente los viñedos, la tempranillo española ha sido a menudo injertada en portainjertos más resistentes, de lo que resulta un estilo de uva ligeramente diferente a aquellos hoy cultivados en Chile y Argentina. La uva tempranillo es muy regular en el cuajado, muy sensible a plagas y enfermedades, poco resistente a la sequía extrema y a las temperaturas altas. Variedad muy sensible a las enfermedades de la madera especialmente eutipiosis y complejo de la yesca. También es muy sensible al oídio, polilla del racimo, a los cicadélidos y a los ácaros, así como a las roturas por viento intenso si no están los sarmientos bien entutorados. Tiene una resistencia media al mildiu y al black rot. Soporta bastante bien los fríos de primavera ya que en este caso la brotación se retrasa. Poco sensible a la excoriosis. Tolera bien la sequía salvo si ésta es muy extrema. Responde bien a los aportes hídricos.




Zonas de cultivo.

A pesar de su aparente fragilidad, la tempranillo viajó ampliamente durante el último siglo, después de mucho ensayo y error, se ha establecido en un sorprendente número de países por todo el mundo. En España se encuentran viñedos de esta variedad en casi la totalidad del país, estando autorizada en 38 Denominaciones de Origen y considerada como variedad preferente en 14 de ellas. Se está adaptando muy bien en la viticultura de sudamérica. Durante la última década, han plantado tempranillo cultivadores de lugares tan lejanos como Australia, los Estados Unidos y Sudáfrica.




Vinos.

Los vinos de tempranillo suelen elaborarse en coupage, pero siendo muy mayoritariamente tempranillo, normalmente más del 90% de la mezcla. Se suelen aportar proporciones de otras variedades como garnacha, mazuela, graciano, merlot y cabernet Sauvignon, para aportarle azúcar y acidez. Los vinos de tempranillo tienen un carácter muy singular, con mucho cuerpo, acidez suave y taninos secos. Es una variedad que integra a la perfección con el roble, danto resultados espectaculares con su crianza en barricas de roble, tanto francés como americano, que aportan notas de vainilla y coco, frutas y sabores especiados.

Origen.

Esta uva fue cultivada por primera vez en Francia, en el año 1866, donde había sido creada diez años antes por Henri Bouschet, al cruzar las variedades petit bouschet y garnacha, la primera de ellas ya había sido creado por su padre, Louis Bouschet. El resultado de ese cruce fue una uva muy intensa en su color, con mças calidad que la teinturier du Cher. Al ser una uva con muy buen rendimiento, y un mantenimiento fácil, ganó popularidad entre los productores de vino franceses, especialmente en los años que siguieron a la epidemia de filoxera. A finales del siglo XIX había plantaciones de garnacha tintorera en Bordeaux, Borgoña, el Valle del Loira y en Alentejo (Portugal). La uva fue ampliamente conocida en los Estados Unidos durante los años de la Ley Seca. Los agricultores californianos del Valle Central descubrieron que su pulpa era tan carnosa y jugosa que se podía fermentar su zumo hasta en el tercer prensado, mucho más productiva que otras uvas como la chardonnay y la merlot, que normalmente sólo incluyen el jugo del primer o segundo prensado.




Características.

La garnacha tintorera se desarrolla en cepas vigorosas, de porte tumbado, con buena fertilidad aunque una producción escasa. Su desborre es de media estación y madura precozmente, así como su agostamiento. Los racimos son de tamaño medio, con uvas uniformes en tamaño, pero no en color, poco compactos, con raquis, pedúnculos y rodetes pigmentados. Las uvas son medianas, esféricas, color azul oscuro, casi negro, con cicatriz estilar muy presente, hollejo grueso y recubierto de mucha pruina. La pulpa, de sabor neutro, es compacta, carnosa y jugosa, con mucha pigmentación. Es una variedad sensible al mildiu y a la excoriosis, y en menor medida a la necrosis bacteriana, eutipiosos, la yesca y demás enfermedades fúngicas de la madera. Es atacada por la polilla del racimo, los cicadélidos y la podredumbre ácida. El oídio, la botritis y los ácaros no le afectan demasiado, así como la sequía, pero su producción es mucho mejor cuando tiene una suficiente humedad, pues requiere altos niveles hídricos. Gusta de suelos profundos y es sensible a los fríos de la primavera, aunque se comporta bien ante las bajas temperaturas del invierno. En España se cultiva en pocos lugares. Se encuentra en el interior de la provincia de Alicante y este de Albacete, en el Corredor de Almansa e interior de Galicia.




Vinos.

La garnacha tintorera da vinos muy intensos, por lo que no se suele vinificar sola, sino que se utiliza para aportar color a la mezcla con tintos de zonas frías, que tienen menos grados y color. Esta variedad es rica en polifenoles (beneficiosos para la salud). Su vino envejece bien, tiene acidez media armonizada con aromas a frutos negros. Hasta hace unos años no había vinos monovarietales de tintorera; ahora los amantes del vino muestran más interés por la Garnacha, está de moda. Sus vinos raciales e intensos hacen que esta variedad esté muy bien considerada en la cultura vinícola, pues da mostos intensamente coloreados, con graduación elevada, muy tánicos y ásperos, con equilibrada acidez. Los vinos de tintorera son muy densos, alcohólicos, coloreados y con intensos aromas a frutas rojas.
