La ley del vino.

Hasta hace unos 10 años, sólo el 10% de la producción vinícola italiana estaba regulada por leyes vinícolas. En 1963 el gobierno italiano quiso poner fin a la anarquía reinante en el mundo del vino y poner un poco de orden, instaurando un sistema de denominaciones de origen basado en el sistema francés de AOC. Sin embargo, el sistema pecaba de excesiva rigidez y no garantizaba la calidad. Esto hizo que numerosos productores comenzaran a trabajar alejados del sistema, dado que muchas veces las DOC eran un obstáculo más que un beneficio. Cuando no se estaba de acuerdo, a la única categoría de vino a la que podían acudir era a la de vino da tavola, vino de mesa, la más baja. El ejemplo más claro lo tenemos en la Toscana, durante los años 80, donde un gran número de los vinos de mayor entidad eran vinos de mesa, de tavola, sin denominación. Denominación de Origen Controlada.

Salvo excepciones, las denominaciones de origen pueden corresponder a nombres geográficos, como: Cirò, Soave, Orvieto, Castelli Romani, Barolo, Valtellina, Franciacorta, Colli Bolognesi, Roero, Valpolicella…., y en otros casos, el nombre de la variedad precede al nombre geográfico, como Brunello di Montalcino, Albana di Romagna, Aglianico del Vulture, Vermentino di Gallura, Sagrantino di Montefalco, Primitivo di Manduria….Producidos en una zona delimitada, normalmente pequeña o de dimensiones medianas. Llevan siempre su nombre geográfico. El reglamento de producción es más severo que el de los IGT y llegan a los consumidores previos análisis químicos y sensoriales por parte del estado. Sus características de calidad serán determinadas por la cepa y el área de producción. Las denominaciones de origen son las encargadas de fijar los rendimientos de producción por hectárea, el grado alcohólico mínimo, el tiempo de crianza mínimo y las castas autorizadas en los ensamblajes de las distintas zonas vinícolas. Para llegar a ser denominación de origen se tiene la obligación de superar el examen de una comisión de cata que es el garante de tipicidad y calidad de los vinos. La DOCG puede concederse a un vino que ha alcanzado un notable prestigio durante al menos cinco años y ya está clasificado como DOC. Los vinos deberán corresponder a las características propias de su denominación y gozar de una reseñable reputación en Italia y en el extranjero siendo reconocida su calidad. En las DOC se admite vender el vino a granel o en damajuanas, los vinos DOCG deben ser comercializados en recipientes menores a 5 litros y llevan la garantía del Estado que certifica mediante la garantía del origen, la calidad y permite numerar los vinos. En las microzonas o subzonas también un propietario puede alcanzar excepcionalmente la DOC o DOCG. Serán reconocidas cuando el producto sea de alta calidad y contribuya a la promoción y el prestigio de los vinos italianos más allá de sus fronteras. El nombre de esta minúscula zona debe ser utilizado independientemente del resto de la denominación de origen. Esta disposición es un reconocimiento oficial de la idea de pago o cru como sucede en la Borgoña y la defensa de las particularidades de un pedazo de terreno que se diferencie del resto. Las subzonas históricas que han servido a la idea general de la denominación pueden utilizar el término Classico. La palabra Riserva conserva su carácter original para vinos que han envejecido el tiempo mínimo exigido por cada denominación. Aunque el concepto es diferente al español puesto que no es necesario que tenga más tiempo de crianza en madera sino que salga un año después de la versión de añada, también puede referirse a una selección de las mejores uvas de una finca. La mención Superiore se refiere al grado alcohólico del vino que debe ser medio grado más que la exigencia mínima de la denominación. Aunque suelen ser los vinos de mayor fuste de cada denominación.

Origen.

La Corvina es una variedad de uva tinta originaria del norte de Italia, que se cultiva principalmente en la región italiana del Veneto. También es conocida como Corvina Veronese o Cruina, y en Europa como Cassabria, corvina veronese o cruina. En el Véneto la corvina es confundida de forma frecuente con la corvinone, una uva tinta utilizada generalmente en la producción del vino de uvas secas. A lo largo de un buen tiempo, la corvinone se ha considerado un clon de la corvina, pero el perfil de ADN ha probado que son dos variedades de uvas diferentes. En 2005, un estudio genético demostró que la corvina era familiar de la uva rondidella del Véneto.




Características.

Las cepas de corvina producen uvas de pequeño tamaño, con bajos niveles de taninos y poco color, pero tienen hollejos gruesos que son para el secado y protegen a la uva de la podredumbre. Es una uva de maduración tardía, propensa a dar producciones elevadas que pueden pueden afectar reduciendo la calidad del vino. Durante el desarrollo de la cepa se observa que los primeros brotes no generan frutos. Las plantas precisan de pérgolas para desarrollar tallos largos y generar más brotes. Normalmente se junta con otras uvas para que el vino adquiera el color que le falta.




Zonas de cultivo.

La zona principal donde podemos encontrar esta uva es sobre todo en la región del Veneto. Aunque en Italia es importante, no ha sido muy exportada, pudiendo encontrarse en Australia y en Argentina, donde se ha comenzado a experimentar en los últimos años con esta uva, utilizando proporciones de Malbec para darle el color.




Vinos.

La corvina se usa con otras variedades para crear los vinos tintos regionales de Bardolino y Valpolicella, que tienen un suave sabor afrutado con notas de almendra. Estas mezclas incluyen a las variedades rondinella y molinara (y rossignola para el vino posterior). También es usada para la producción de amarone y recioto. La corvina produce vinos de cuerpo ligero o medio con un luminoso color carmesí. Las uvas tienen mucha acidez y pueden producir vinos con notas a tarta y a almendra. Al final deja notas a guinda. Origen.

La variedad rondinella es una uva tinta de origen italiano que crece sobre todo en la región del Véneto, y que se usa en vinos de Valpolicella y Bardolino. Se mezcla a menudo con la corvina, cuyo ADN evidencia que ambas uvas están emparentadas, y con la molinara. La uva tiene sabores más bien neutrales, pero es empleada por los agricultores debido a sus buenos rendimientos. Además de en el norte de Italia, podemos encontrarla en Argentina. Se cree que está relacionada con las uvas garganega y refosco dal peduncolo rosso.




Características.

Los racimos de rondinella son entre medianos y grandes, cilíndrico piramidales, bastante compactos, flanqueados por una o dos aletas, a veces con pedúnculos cortos, medianos y poco lignificados. Las uvas son de tamaño mediano, esféricas, piel media cerosa, de color negro muy azulado, con reflejos púrpura y pulpa jugosa. Las cepas son muy resistentes a las enfermedades de la uva y produce uvas que, aunque no tienen necesariamente una elevada cantidad de azúcares, se secan bien para su uso en la producción del vino de pasas y de mezclas de recioto.




Vinos.

Los vinos de esta variedad son afrutados, con un hermoso color rojo rubí brillante, muy poco tánico, moderadamente rico en alcohol y casi siempre con una buena acidez. Tiene aromas de almendra amarga, cereza, fresa y cereza. El famoso Amarone italiano se produce después de dejar secar las uvas en bastidores o en esteras de paja, mezclándose, en la mayoría de los casos, con otras variedades de uva como la corvina y la corvinona.
