La ley del vino.

Hasta hace unos 10 años, sólo el 10% de la producción vinícola italiana estaba regulada por leyes vinícolas. En 1963 el gobierno italiano quiso poner fin a la anarquía reinante en el mundo del vino y poner un poco de orden, instaurando un sistema de denominaciones de origen basado en el sistema francés de AOC. Sin embargo, el sistema pecaba de excesiva rigidez y no garantizaba la calidad. Esto hizo que numerosos productores comenzaran a trabajar alejados del sistema, dado que muchas veces las DOC eran un obstáculo más que un beneficio. Cuando no se estaba de acuerdo, a la única categoría de vino a la que podían acudir era a la de vino da tavola, vino de mesa, la más baja. El ejemplo más claro lo tenemos en la Toscana, durante los años 80, donde un gran número de los vinos de mayor entidad eran vinos de mesa, de tavola, sin denominación. En 1992 la legislación, a través de la Ley Goria, trajo un cambio radical en el concepto de denominación de origen, con el origen geográfico y la defensa del terruño como epicentro. Los vinos que demuestren durante cinco años su calidad adquirirán una DOC y cinco años más tarde podrán aspirar a situar en el gollete de la botella la garantía del estado de una DOCG. También prevé esta ley que todas las denominaciones que no tengan una calidad contrastada desciendan de escalón: cuando se hizo la ley, se suponía que más de 50 perderían su condición de DOC y unas cuantas la de DOCG. A día de hoy todavía se espera que descienda la primera. El ascensor de subida si ha funcionado pero el de bajada no se ha estrenado y eso que unas cuantas lo piden a gritos. Esta ley trajo consigo una nueva categoría, los vinos con IGT. Los vinos italianos se pueden clasificar como vino de tavola, IGT, DOC, DOCG.




Denominación de Origen Controlada.

Salvo excepciones, las denominaciones de origen pueden corresponder a nombres geográficos, como: Cirò, Soave, Orvieto, Castelli Romani, Barolo, Valtellina, Franciacorta, Colli Bolognesi, Roero, Valpolicella…., y en otros casos, el nombre de la variedad precede al nombre geográfico, como Brunello di Montalcino, Albana di Romagna, Aglianico del Vulture, Vermentino di Gallura, Sagrantino di Montefalco, Primitivo di Manduria….Producidos en una zona delimitada, normalmente pequeña o de dimensiones medianas. Llevan siempre su nombre geográfico. El reglamento de producción es más severo que el de los IGT y llegan a los consumidores previos análisis químicos y sensoriales por parte del estado. Sus características de calidad serán determinadas por la cepa y el área de producción. Las denominaciones de origen son las encargadas de fijar los rendimientos de producción por hectárea, el grado alcohólico mínimo, el tiempo de crianza mínimo y las castas autorizadas en los ensamblajes de las distintas zonas vinícolas. Para llegar a ser denominación de origen se tiene la obligación de superar el examen de una comisión de cata que es el garante de tipicidad y calidad de los vinos. La DOCG puede concederse a un vino que ha alcanzado un notable prestigio durante al menos cinco años y ya está clasificado como DOC. Los vinos deberán corresponder a las características propias de su denominación y gozar de una reseñable reputación en Italia y en el extranjero siendo reconocida su calidad. En las DOC se admite vender el vino a granel o en damajuanas, los vinos DOCG deben ser comercializados en recipientes menores a 5 litros y llevan la garantía del Estado que certifica mediante la garantía del origen, la calidad y permite numerar los vinos. En las microzonas o subzonas también un propietario puede alcanzar excepcionalmente la DOC o DOCG. Serán reconocidas cuando el producto sea de alta calidad y contribuya a la promoción y el prestigio de los vinos italianos más allá de sus fronteras. El nombre de esta minúscula zona debe ser utilizado independientemente del resto de la denominación de origen. La mención Superiore se refiere al grado alcohólico del vino que debe ser medio grado más que la exigencia mínima de la denominación. Aunque suelen ser los vinos de mayor fuste de cada denominación.

Origen.

Hasta hace no demasiado tiempo el origen de esta uva no estaba claro, existiendo muchos mitos y conjeturas. Se hablaba del origen de Sauvignon como derivada del francés sauvage, que significa salvaje, y podría hacer referencia a tratarse de una viña silvestre nativa de Francia. Otra teoría era que la uva tenía orígenes antiguos y que quizás había sido la uva bitúrica, usada para hacer el antiguo vino romano al que hizo referencia Plinio el Viejo. Otra teoría sostiene que la uva se originó en la región española de la Rioja. Los verdaderos orígenes de esta variedad se descubrieron en 1996 al estudiarse genéticamente en el Departamento de Viticultura y Enología la Universidad de California en Davis, con un equipo liderado por Carole Meredith. Estos estudios determinaron que la cabernet Sauvignon fue el resultado de la mezcla de dos tipos de uva en Francia: Cabernet Franc y Sauvignon Blanc, aunque se supone que esta mezcla fue producida siglos anteriores a su nacimiento, alrededor del siglo XVII ya que lo más común en Burdeos era recoger todas las variedades de uva en una sola.




Características.

La clave de su éxito es que se trata de una variedad de fácil cultivo. Por ello, se adapta a una gran variedad de suelos, climas y latitudes. De hecho, desde Francia, la uva se ha extendido por Europa y por América. Es una variedad vigorosa, de brotación medio-tardía, cuyas cepas presentan un pámpano de porte erguido ramificadas, con muchas racimas, de desborre tardío y maduración de media estación.Los racimos son muy pequeños, de forma cónica, compacidad media y con tamaño de bayas muy uniforme que se desprenden con facilidad cuando están maduras. Pedúnculo corto y poco lignificado. Ocasionalmente alados. Las uvas son pequeñas, esféricas, su piel es muy oscura, azulada, con mucha pruina, la pulpa es dura y jugosa, ligeramente pigmentada cuando madura y sin pigmentación en las primeras fases del enverado, cpm sabor herrbáceo intenso y con fuerte sensación astringente. Su hollejo muy grueso. A la cabernet sauvignon se le conoce también por otros nombres como Vidure, Bidure, Burdeos, Carbouet. Es una variedad sensible a la eutipiosis, al mildiu, al oídio, a los cicadelidos y a los acaros. Resiste bastante bien al complejo de hongos de la madera, a la excoriosis y sobre todo a la botritis, así como a la podredumbre. En épocas de sequía intensa su maduración se complica, evolucionando de manera deficiente. Se adapta bastante bien a cualquier tipo de suelo, aunuque los mejores resultados se obtienen en terrenos de grava, sin exceso de agua, algo ácidos y bien expuestos. Es bastantes sensible a la carencia de magnesio, que se asocia a la desecación del raquis de los racimos. Resiste bastante bien los fríos primaverales y los vientos. Apenas se ve afectada por corrimientos de racimo. Despuntes precoces inducen la aparición de muchos hijuelos y abundantes racimas, por lo que su calidad se deteriora. Requiere podas largas y en guyot para su adecuada producción. El rendimiento de esta variedad está comprendido entre 2-14 toneladas por Ha, dependiendo del vigor de la viña.




Zonas de cultivo.

Es una planta de viña de uvas de vino tinto muy extendida en todo el mundo. Actualmente la uva Cabernet Sauvignon se cultiva en Francia, España, Italia, Chile, California, Australia y Argentina principalmente. A nivel mundial, la superficie que ocupa el cabernet sauvignon es de 341,000 Ha. Es la segunda variedad tinta más plantada (2015), después de la variedad china Kyoho (uva de mesa), ocupando la décima posición en el ranking mundial de variedades de vid plantadas. Las superficie de cabernet Sauvignon supone el 4% de la total de viñedos en el mundo.




Vinos.

El estilo de la cabernet sauvignon está muy influenciado por la madurez de las uvas en el momento de la cosecha. Mientras menos maduras están, mayor es su contenido de pirazinas y pueden exhibir sabores pronunciados a pimiento verde y a vegetales. Cuando es cosechada demasiado madura, los vinos pueden tomar sabores amermelados y pueden tener aromas a grosellas negras guisadas. Algunos viticultores escogen cosechan sus uvas en diferentes niveles de madurez para incorporar diferentes elementos y añadirle más complejidad al vino. El prensado de la uva cabernet Sauvignon produce un zumo oscuro, intenso y muy vivo, austero y tánico. Cuando el vino de cabernet sauvignon es joven normalmente exhibe un fuerte sabor a cerezas negras y a ciruela, aromas a grosella, pimineto verde y también en ocasiones notas de menta y aceitunas recién recolectadas o monte bajo y hierbas aromáticas. Posee un hollejo muy grueso del que se extraen muchos taninos dulces lo que permite su largo envejecimiento. Si la madera es suave, da vinos de textura y fineza muy agradables, con aromas a chocolates, a tabaco y en parte a mina de lápiz, pero conservando su característico aroma a grosella y en ocasiones a pimiento. El vino monovarietal puede carecer de suavidad y redondez, por eso se utiliza mucho con coupages con otras variedades como merlot o syrah. Son muy aptos para el envejecimiento, pudiendo elaborarse extraordinarios vinos de guarda.

Origen.

Se sospecha que la variedad sangiovese fue la usada para la elaboración del vino romano. Hay autores que afirman que los etruscos tomaron esta vid cuando era salvaje para cultivarla por primera vez, poniendo los primeros viñedos en la Toscana. La sangiovese es una uva tinta, cuyo nombre tiene su origen en el latín "Sanguis Jovis", que significa sangre de Júpiter en referencia al dios romano Júpiter. Existe una leyenda que atribuyen el nombre a los monjes de la localidad de Santarcangelo di Romagna, lo que hoy en día es la provincia de Rímini, en la región de Emilia-Romaña, Italia. El primer documento, que hace referencia a esta uva, del que se tienen noticias es un escrito fechado en 1590, cuya autoría se atribuye a Giovanvettorio Soderini (también conocido con el seudónimo de Ciriegiulo). Soderini llama a la uva sangiogheto, y dice que esta uva de la Toscana produce vinos muy buenos, pero, si los productores no tienen cuidado, este se puede avinagrar. Aunque no se puede afirmar con total rotundidad que ambas uvas sean la misma, muchos estudiosos del vino consideran que es la primera mención a esta variedad. En 1738, Cosimo Trinci describió a los vinos de sangiovese como excelentes cuando se integraba en vinos multivarietales pero duramente ácidos cuando se trata de vinos monovarietales. En el siglo XVIII la sangiovese comienza a tomar nombre y popularidad debido a su expansión por la Toscana, llegando a convertirse en una de las variedades más cultivadas en la zona, junto con la malvasía y la trebbiano. En la década de los setenta, los viticultores de la Toscana introdujeron nuevas técnicas de elaboración, mezclando variedades de uva de fuera de Italia, como la cabernet Sauvignon, envejeciendo los caldos en barricas de roble, creando de este modo vinos que fueron etiquetados comercialmente como Súper Toscanos.




Características.

Existen alrededor de 14 variedades de uva Sangiovese, siendo la Brunello y la Prugnolo Gentile, que son uvas que crecen mejor en alturas bajas porque la piel tarda más tiempo en madurar, las más famosas. Las uvas son violetas, gruesas de piel, extremadamente ácidas y de contenido tánico moderado o alto, dependiendo del clon. Se desarrollarán en todo su esplendor en suelos calizos con climas cálidos y secos. Las vides suelen ser muy resistentes a las enfermedades, pero las bayas se pudren muy fácilmente. Las uvas Sangiovese son violetas, de piel gruesa, muy ácidas, de contenido tánico moderado o alto. Su maduración es tardía. Aportan aromas frutales, florales y especiados al vino, aunque éstos pueden ser fácilmente opacados en los blends tintos si las uvas utilizadas no son de la mejor calidad. Esta variedad es muy afín al suelo calizo y a climas cálidos y secos. En estas condiciones, sus características varietales se desarrollan en toda su plenitud. Es una uva de buena calidad y apreciada por su alto contenido de ácido, taninos firmes y naturaleza equilibrada. Son característicos los sabores salados de cerezas oscuras y fruta de hueso negra que pueden estar respaldados por notas secundarias de hojas de tomate y hierbas secas. Si el vino es joven puede tener un acabado algo amargo. El uso del roble se ha vuelto más popular y esto culmina hacia los sabores más ricos de las uvas, tendiendo hacia la ciruela y la frambuesa silvestre. Las sinonimias de la uva Sangiovese son, Nielluccio, Sangioveto, Sangiovese Grosso, Sangiovese Piccolo, Brunello, Prugnolo Gentile, Morellino.




Zonas de cultivo.

Se pueden encontrar viñedos de sangiovese en cualquier parte del mundo, no obstante, la tierra natal de esta uva es Italia, que es además su principal productor, sobre todo en la Toscana. La variedad de uva sangiovese también está implantada en otras zonas de Italia como Lacio, Umbría, Marche y también en Corcega. Los italianos emigrados al continente americano plantaron viñedos de esta variedad, tanto en Norteamérica como en Sudamérica, siendo los principales ejemplos de esta expansión las zonas de California en EE. UU. y Mendoza en Argentina. También se pueden encontrar viñedos de sangiovese en Francia, Chile, Brasil, Sudáfrica y Australia.




Vinos.

Todos los clones de Sangiovese tienen una maduración relativamente lenta, lo que resulta en una temporada de crecimiento extendida y en vinos más ricos, fuertes y de mayor duración que los elaborados a partir de variedades de maduración temprana. Cuando se anima a las vides a producir mayores rendimientos, la acidez naturalmente alta del vino se acentúa y su color característico se diluye notablemente. Se experimentan dificultades adicionales debido a la fina capa de la uva, que la hace susceptible a la putrefacción en condiciones húmedas. Hay grandes vinos hechos con Sangiovese, como el chianti, rosso di Montalcino, Montepulciano o el brunello. Los vinos elaborados con Sangiovese pueden envejecer bien, pero gran parte de ellos están pensados para beberse 1 o 2 años después de la cosecha. Los más longevos de buena añada se puede guardar hasta 20 años. Las características aromáticas de la sangiovese varían mucho según el lugar donde crezca. Los brunellos se caracterizan por los frutos rojos: grosellas, fresas, frambuesas, mermeladas, compota de frutas...; por los perfumes florales: violetas, gladiolos...; por los aromas terrosos: monte bajo, setas...; y por los aromas terciarios: especias, tabaco, alquitrán, ahumados, barnices (en algunas ocasiones los encontramos y provienen de la crianza en "botti", grandes botas de roble, en general usadas). Los chiantis, por su parte, nos presentan una gama aromática variada: cerezas amargas, frutos rojos maduros, mermeladas, compota de frutas, violetas, gladiolos, herbáceos (heno recién cortado)... El vino nobile di Montepulciano nos presenta también frutos rojos, además de aromas terrosos (hongos Boletus edulis , trufa, sotobosque), flores (violetas), frutos secos (almendras)...
