Alrededor de 1850, se descubrieron los efectos medicinales de la quinina, una sustancia que le da su característico sabor amargo a la tónica. La quinina, la cual proviene de la corteza de los árboles de quinio, era básica para evitar que los soldados británicos que estaban en las indias adquirieran la malaria. El gran problema se presentaba a la hora de dar a los soldados su ración de quinina ya que era tan amarga que nadie la quería tomar. Se probo de mezclar con agua y azucar para disimular el sabor. Algunos soldados mezclaban este preparado con su ración reglamentaria de ginebra y comenzaron a elaborar a principios de 1860 los primeros gin-tonics aunque a años luz de los actuales, claro. Poco tiempo después se patentaron las recetas de las tónicas y se les añadió gas pasándose a denominar como aguas tónicas de las indias o Indian Tonic Water. La empresa británica Fentimans, fundada en 1905, nos propone su propia receta de tónica añadiendo a la fórmula dos puntos que la diferencian: parte del carbónico de la tónica proviene de la fermentación natural de los botánicos y que entre sus aromatizantes incluye una hierba llamada lemongrass y con dificil traducción, la cual le confiere un aroma y sabor peculiares. En nariz, la tónica Fentimans nos muestra leves notas cítricas y terrosas de quinina. En boca, el carbónico es fino y aparece en segundo plano. Predominan las notas cítricas gracias al limón y al lemongrass, las cuales le aportan frescor. La sensación de amargor final es muy agradable y queda bien encajada entre la dulzor y la acidez de la tónica.
