Generalidades.

Lambrusco di Sorbara es un vino típico de la región de Emilia Romagna, una zona muy conocida de la península italiana. Más concretamente, estos apreciados vinos se producen en un área que incluye doce municipios en la provincia de Módena, incluidos Bomporto, Nonantola, Carpi y la aldea homónima de Sorbara. La uva.

La uva Lambrusco di Sorbara es una variedad autóctona de orígenes antiguos, que se deriva de la domesticación de las vides silvestres ( Vitis Labrusca , también mencionada por Plinio el Viejo ), también llamada " uzeline " u " oseline " debido al hecho de que, creciendo espontáneamente en el límite del bosque, fueron saqueados por pájaros que los codiciaron. Esta naturaleza un tanto salvaje todavía se encuentra en las características peculiares del vino, caracterizadas por una notable acidez y un sabor con toques amargos. Lambrusco di Sorbara toma su nombre de la aldea de Sorbara en el municipio de Bomporto , en la provincia de Modena . El área clásica e históricamente más adecuada se encuentra entre los ríos Panaro y Secchia. Es un área con suelos principalmente aluviales, caracterizados por suelos arenosos, generados por antiguos depósitos de ríos.




La acinellatura.

El Lambrusco de Sorbara es una vid vigorosa y productiva con una maduración media tarde. Se caracteriza por el fenómeno de la acinellatura que se debe a una anomalía floral que causa una pérdida significativa de producto (en algunos años hay pérdidas de producción que exceden los dos tercios de la cosecha). El vino.

Hoy en día, alrededor del 15% del vino producido en la región esta bajo el amparo de unos 20 títulos DOC, y solo una pequeña fracción bajo sus dos DOCG, Albana di Romagna DOCG y Colli Bolognesi Classico Pignoletto DOCG.En Emilia Romagna el lambrusco, suele ser de aguja, dulce y amable. Normalmente es tinto aunque se puede vinificar blanco y rosado, puede ser vino seco o espumoso, pero eso sí, siempre es hecho para ser bebido en un periodo de tiempo relativamente corto, pues con el tiempo pierde propiedades.Lambrusco di Sorbara tiene unas características organolépticas inherentes a su color, sabor y aroma que nunca ha decepcionado a ninguno de sus consumidores. Lambrusco tiene un color rojo rubí brillante, con una espuma rosa. Su nariz aporta un aroma fragante y expresa aromas florales de violeta y frutales de cereza, fresa y fruta roja. En boca es fresco, afrutado, equilibrado y armonioso, con un final sabroso. Tiene una espuma evanescente y muy viva, hermosa a la vista y agradable al gusto. Su contenido de alcohol es 10.5% vol. Debe servirse a una temperatura ambiente de 14-16 ° C y combina perfectamente con platos simples pero sabrosos como zampone, carne hervida, tortellini, tagliatelle, lasaña a la boloñesa, verduras y quesos, albóndigas fritas y salami.
