Los suelos de la Denominación de Origen Protegida Alicante son areno-francos y arenosos, y tienen por tanto una granulometría y textura especialmente aptos para el cultivo de la vid. Son suelos con elevada porosidad y permeabilidad, que facilitan el drenaje y evitan la retención de agua. De esta forma se evita la proliferación de hongos fitopatógenos. Con la materia orgánica y la fertilización adecuada del suelo con sales de hierro, los suelos de la DOP Alicante son óptimos para la vid, tal y como se concluye en el Informe del Proyecto de Zonificación de la DO Protegida Alicante publicado por el Grupo de Investigación Aplicada en Agroquímicos y Medio Ambiente de la Universidad Miguel Hernández de Elche.
Variedades.
La combinación de suelos muy especiales, climas templados y humedades relativas, configuran al paisaje alicantino como muy propicio para el desarrollo del viñedo. De hecho, las circunstancias históricas atestiguan el buen desarrollo de muchas hectáreas y la gran riqueza de variedades en todas las comarcas, aunque con notable relevancia para la huerta de la ciudad de Alicante. Las variedades de mayor implantación y mejor acondicionamiento de la DOP Vinos Alicante son: El Moscatel de Alejandría, Monastrel, Garnacha y otras variedades. La benevolencia del clima mediterráneo, sin embargo, oculta ciertas condiciones muy peculiares. Y en este caso, es la diversidad de climas que posee Alicante y que da origen a muchas otras variedades: desde las condiciones de humedad o la riqueza de los suelos de la Marina Alta por ejemplo; a las temperaturas extremas tanto en invierno como en verano y el estrés hídrico del Vinalopó, que sirve de modelo en cuanto adaptación del viñedo al cambio climático y la gran influencia del secano en la confección de vinos de alta expresión.
El origen.
El origen del vino alicantino está dentro de las leyendas y fábulas, que rodean las raíces históricas de los vinos de todas las regiones. En nuestra provincia fueron los iberos los que empezaron a cultivar la vid para uso familiar, aunque ya existía anteriormente en forma silvestre. Posiblemente fueron los fenicios quienes en la primera mitad del primer milenio antes de Jesucristo nos introdujeron la vid. Los romanos fueron grandes cultivadores de este fruto. Los restos arqueológicos, sobre todo en la zona del Marquesado, confirman la presencia de ánforas vinarias y de grandes “Villae”, destinadas a la agricultura de la vid, e incluso se han hallado restos de una fábrica de ánforas de este tipo. Hay noticias muy vagas de nuestros vinos en la baja Edad Media, y parece que hasta las viñas y su producción se sumergen en un pozo oscuro y profundo, propio por otra parte de esta época. Las primeras noticias escritas nos van llegando curiosamente de poetas árabes que cantan en sus versos las excelencias de aquellos vinos, y en el libro del “Repartiment” ya hay apartados en los que se otorgan donaciones de viñas en diversos pueblos de la provincia. Pero es a partir del siglo XV cuando verdaderamente entran nuestros vinos en la historia documentada. En el yacimiento arqueológico de Benimaqua de Denia se encuentra uno de los lagares más antiguos de Europa, pegado al mar y con vocación de exportación, algo común durante toda la historia de los Vinos Alicante DOP.
El Renacimiento.
Fernando el Católico en 1510 prohibió la distribución en Alicante de vinos procedentes de otras tierras. Felipe II en 1596 confirma el privilegio anterior: “La Collita de Vi sia la Mes principal de la qual se sustenta molta gent així principal com plebeyos”. Todos estos privilegios vienen dados para proteger el vino autóctono ya que la fama de ellos había traspasado nuestras fronteras, tal como relata Jerónimo Múnzer, que en 1492 en su libro “Itinerarium sive prereginatio per Hispaniam …”, escribe, refiriéndose a Alicante, “en la parte oriental de esta tierra elabórase mucha cantidad de vino blanco, pero es aún mas el que llaman tinto de Alicante, de gran mercado en Inglaterra, Escocia, Flandes y otros lugares de Europa… el día que paramos en la ciudad vimos en el puerto 26 naves de Vizcaya, de Flandes y de otros países que iban por cargamento de vino”. Durante los siglos XVII y XVIII continúa con auge la producción de vino alicantino, pero sólo se podía exportar por el puerto de Alicante el producido en su término. En estos años están en plena producción los de Orihuela, Jijona, Monforte y Novelda. Este monopolio de 1510 se termina en 1756 permitiéndose ya la exportación de vinos procedentes del interior de la provincia, con ciertas limitaciones, y se tiene que esperar hasta el 25 de febrero de 1834 para que la liberación del comercio del vino de la provincia sea total. Y entramos ya en el siglo XIX, siglo de Oro de la producción vitivinícola de Alicante.
El siglo XIX.
Prácticamente en este siglo todos los pueblos tenían superficies dedicadas a este cultivo, y se crea en Cocentaina la primera estación enológica de España para intentar frenar la llegada de la filoxera a estas zonas. Ha sido el nuestro un vino con “Denominación real”, vino de cardenales del Renacimiento, de reyes de Francia y de príncipes de la literatura. Tenemos testimonios valiosos y curiosos que hablan por sí solos de la fama de nuestros caldos, como por ejemplo, El Duque de Saint Simón, cuenta en sus memorias que cuando el Rey Sol, Luis XIV de Francia, estaba a las puertas de la muerte, consumido por la gangrena, el único alimento que admitía era bizcochos mojados en vino de Alicante. Ha sido también el vino de las marinas más célebre así como de sus almirantes. El almirante Julio Guillen Tato escribe que el vino de Alicante, ha sido el primero que dio la vuelta al mundo, ya que acompañó a El Cano en su segundo viaje alrededor del globo. A mitad del siglo XIX, primero el Oidium y la filoxera después, arrasan los viñedos franceses. Se firma un tratado comercial preferencial con este país que supone un auge increíble para nuestros vinos. Llegamos a finales de este siglo a tener 93.000 hectáreas y una producción de más de 1.200.000 hectolitros. En la actualidad no superamos las 10.000 Has. y la producción es de unos 400.000 Hls. En 1892 se termina el tratado francés y empieza la excedencia y sobreproducción, pasando a ser un problema en la viticultura alicantina. En esta época se decía “Diez años más de tratado con Francia y Alicante hubiese podido enlosar con luises de oro el magnífico Paseo de la Explanada”. La ruptura con el tratado supuso consecuencias trágicas para España y claramente para Alicante. Finalmente se hace necesario hablar del afamado Fondillón, vino alicantino que ha ocupado en su historia las mejores mesas del mundo. Las únicas citas históricas documentadas que tenemos actualmente, decían que la variedad Monastrell era la materia prima de este vino. El verdadero Alicante debe hacerse de uvas de Monastrell, y de aquellas resulta aquel vino, espeso, de un sabor dulce, con alguna aspereza, tan deseado en todas las naciones. En la obtención de este vino, en la huerta de Alicante y zonas costeras se limpiaban los racimos y se asoleaban. En las zonas del interior la mayor parte del Fondillón se obtenía de uvas ya muy asoleadas en la propia vid las cuales eran cosechadas bastante después de la vendimia normal; tras el pisado se pasaba el mosto con toda su casca a toneles de roble, en los que fermentaba durante un mes. La cantidad de azúcar producido con este sistema proporcionaba con facilidad vino de hasta 18º y se trasvasaba luego a toneles con solera. En el catálogo de vinos de Maisonnave de finales del siglo pasado figuran entre otros los siguientes precios de ventas: vino Alicante Fondillón 800 francos/hectolitros, Málaga 135, Porto, 153, Xerez 204, Valdepeñas 60. Sólo viendo estos precios nos indica el prestigio del Fondillón.
El siglo XX.
Es una época de cierta frenada del cultivo, pues cambia el modelo productivo y económico de la provincia de Alicante, optándose por el modelo turístico e industrial y por otros cultivos más rentables para la época. Sin embargo es destacable que toda esta historia de los Vinos Alicante DOP consigue asentarse con la creación de la “Denominación de Origen Alicante” en el año 1932 y con la constitución de su primer “Consejo Regulador” en el año 1957. Son años estos de intentos de organizar el sector, de aglutinar la producción, de incentivar la mejora de la calidad y de los embotellados, del cambio en la elaboración para acercarse al consumidor moderno. Todos estos cambios maduran en la década de los años 90 cuando comienzan a llegar nuevas bodegas que suman innovación a las tradicionales y vuelve otra vez a hablarse de los Vinos Alicante DOP, hasta alcanzar el momento de madurez que hoy viven con nuevas instalaciones, nuevos vinos, enólogos jóvenes y viticultores, premios, reconocimientos y la mejora en la difusión de toda esta amplia cultura vitícola.
