Historia.
Fundada en 1551 por Jaume Codorníu, el enorme prestigio de esta firma hoy ya convertida en uno de los grupos bodegueros más importantes de Europa- se ha cimentado a lo largo de casi cinco siglos de historia marcados por el buen hacer de la familia Raventós y el impulso que dio al sector del cava, de cuyo desarrollo es directamente responsable. La historia moderna de Codorníu comenzó 1872, año en el que Josep Raventós Fatjó, tras un aleccionador viaje a la región de Champagne, elaboró su primer cava con tres variedades de uva locales (Macabeo, Xarello y Parellada) siguiendo el método tradicional o champenoise de la doble fermentación. Desde ese momento, la bodega no ha hecho más que crecer hasta convertirse en una de las empresas más famosas e importantes del país gracias, sobre todo, a la enorme calidad de sus vinos y cavas y también, por qué no decirlo, a sus novedosas y creativas campañas de publicidad.
Pioneros.
También hemos de tener en cuenta que las cavas Codorníu del Penedés fueron las primeras en utilizar la variedad Chardonnay para la elaboración de sus cavas hace más de 30 años. También fueron pioneros, en el 2002, en hacer el primer cava rosado 100% Pinot Noir. Y por último, en 2010, elaboran el primer cava Blanc de Noirs con Pinot Noir. Para hacer todos los cavas Codorníu, la bodega, tiene la misma premisa, "el mejor cava nace en el viñedo". Así, cuidan de sus propios viñedos. Cada variedad esta plantada en la zona que creen que le es más favorable. Tienen tres zonas distintas, con diferentes suelos y climas, Penedés para las variedades tradicionales, Conca de Barberà para la Pinot Noir y Costers del Segre para Chardonnay y Pinot Noir más frescas. Las parcelas las vendimian y se fermentan por separado. Cada fruto, según su variedad y características, lo destinan a un tipo de cava diferente con un único objetivo: conquistar todos los paladares.
450 años de historia.
Codorníu es sinónimo de la historia de una familia de viticultores que se remonta al siglo XVI. Es la empresa familiar más antigua de España y una de las más antiguas del mundo. Actualmente cuenta con más de 450 años de historia. Manuel Raventós, el gran impulsor de Codorníu, contrató en 1895 al arquitecto modernista Josep Puig i Cadafalch (coetáneo de Gaudí) para ampliar la bodega. El edificio que construyó simboliza la fructífera alianza entre la naturaleza y la labor humana y es un homenaje de piedra al silencio del cava. Desde 1976 son Monumento Histórico Artístico y uno de los más impresionantes ejemplos de arquitectura dedicada a la elaboración y crianza de cavas. Bajo tierra en un dédalo de cavas subterráneas es donde, desde hace un siglo, los cavas Codorníu realizan la segunda fermentación y crianza a una temperatura siempre constante. En 1872, Josep Raventós Fatjó elaboró cava por primera vez en España siguiendo el Método Tradicional y utilizando uvas autóctonas del Penedés: Macabeo, Xarel·lo y Parellada. De esta manera instauró una industria completamente nueva en la región y vinculó la marca Codorníu a la historia del cava.
Viticultura sostenible.
Un buen cava se elabora con uvas de máxima calidad. Es por ello que Codorníu selecciona cautelosamente las uvas y cuida minuciosamente los viñedos. Desde hace muchos años, se aplica la técnica de viticultura sostenible, es decir, se deja que la naturaleza siga su curso y sólo se interviene cuando hay desajustes. Es así como Codorníu aúna tradición e innovación en el proceso de elaboración del cava controlando cada etapa del proceso hasta la entrega del producto final al consumidor.
Fechas de la historia de Codorníu.
1551.- Primera referencia documentada de la actividad vitivinícola de Jaume Codorníu.
1659.- Matrimonio entre la heredera Anna Codorníu y el viticultor Miquel Raventós.
1872.- Josep Raventós crea la primera botella de cava mediante el denominado Método Tradicional en España.
1885.- Manuel Raventós da un gran impulso al cava y a Codorníu como gran productor.
1895.- Se proyecta la construcción de las cavas en Sant Sadurni. Del diseño y construcción de la bodega se encarga el arquitecto Josep Puig i Cadafalch, quien, con Gaudí, fue uno de los representantes más destacados de la gran escuela arquitectónica modernista catalana.
1915.- Inauguración de las nuevas Cavas Codorníu, hito del modernismo catalán.
1976.- Las Cavas Codorníu son declaradas Monumento Histórico Artístico Nacional.
1983.- Nace el cava líder en España, Anna de Codorníu, que introduce la uva Chardonnay.
2001.- Codorníu cumple 450 años.
2002.- Codorníu crea el primer cava rosado elaborado al 100% con la variedad tinta Pinot Noir.
2010.- Nace Reina Mª Cristina Blanc de Noirs, primer cava blanco elaborado con Pinot Noir.
2016.- Colección de cavas de prestigio Ars Collecta.

Origen.
Según cuenta la historia, el origen de la uva albariño se sitúa en el siglo XII, época en la que fue importada por unos monjes de Cluny (Francia) que se situaron en tierras gallegas, más concretamente en el Monasterio de Armenteira (Pontevedra), desde donde se extendió al resto de Galicia y norte de Portugal, aunque hay opiniones que sitúan el origen de esta uva en Galicia en la época de los romanos. Independientemente de cuál sea el origen, lo cierto es que es la variedad por antonomasia de uva blanca gallega, y la asociación con su cultura y gastronomía está presente en nuestra mente al igual que las queimadas, las meigas y la tarta de Santiago. Decir albariño es decir Galicia, variedad con la que se elaboran los vinos del mismo nombre.
Características.
La uva albariño se produce en cepas altas, vigorosas que con un desborre precoz y una maduración media/tardía, presentan una fertilidad elevada. Los racimos son de tamaño medio, no demasiado compactos y con pedúnculo corto. Las uvas son de tamaño reducido, uniformes, esféricas y con una epidermis de color verde pálido amarillento en maduración, suave y delicada, aunque en su estrujado presenta un hollejo grueso. Su pulpa es blanda, muy jugosa y con apenas pigmentación, con sabor y aromas peculiares y característicos florales intensos. La albariño también es conocida con los sinónimos albarina, alvarín blanco, alvarinha, alvarinho, azal blanco, galego y galeguinho. Es una cepa que resiste bastante bien a botritis y mildiu, sin embargo, es atacada con facilidad por el oídio y las sequías.
Zonas de cultivo.
Los viñedos de uva albariño se localizan principalmente en Galicia (España), más concretamente en la zona conocida como Rías Baixas en la provincia de Ponteverdra. También existen plantaciones en otras regiones españolas como Cantabria, Castilla y León y Cataluña y en las portuguesas de Monção y Melgaço, en el noroeste del país, que linda con la zona Gallega de Rías Baixas. Las principal Denominación de Origen que utiliza esta uva es la D.O. Rías Baixas así como a la Indicación Geográfica Protegida Vino de la Tierra de Barbanza e Iría, también en Pontevedra. También viñedos de albariño en las áreas vitícolas de California.
Vinos.
Sus monovarietales son los vinos blancos más prestigiosos de Galicia. Presentan una graduación alcohólica elevada y una acidez notable. Son caldos muy potentes en aroma con notas intensas afrutadas y con matices florales. Algunos expertos estiman algo negativo ese “exceso” de aromas afrutados, calificándolos de empalagosos. Pare evitar este, según ellos, defecto, la crianza puede ser una buena opción. es de las pocas uvas blancas españolas que permite una óptima crianza sobre lías. La mayor parte de los vinos se consumen jóvenes, aunque, como se comentó con anterioridad, algunas bodegas los elaboran con crianza en barrica.
