Orígen e Historia.

En los años 60, José Medina funda la primera bodega que lleva el nombre de su presidente. Este negocio fue desarrollándose con gran éxito durante los siguientes años, por lo que se van adquiriendo distintas marcas, siendo la última adquisición Williams & Humbert, que hoy en día da nombre a todos los negocios de la familia. William & Humbert, uno de los productores y distribuidores de bebidas espirituosas y vinos más renombrados del mundo entero, es el responsable de la icónica gama rones Dos Maderas. William & Humbert
Esta es la bodega, ubicada en el triángulo que se forma entre El Puerto de Santa María, Sanlúcar de Barrameda y Jerez de la Frontera. La región se caracteriza por el microclima que se forma gracias a los ríos Guadalquivir y Guadalete. William & Humbert son dueños, además de su casa central, de la compañía de distribución española Sovisur. Actualmente, esta bodega comercializa sus productos en más de 80 países y está realizando un programa de diversificación donde sobresalen la elaboración de vinos de Jerez y también en zonas como Rioja, Rueda y Ribera del Duero, además de la elaboración de brandys, ron y productos gourmet (quesos y derivados del cerdo ibérico).

Elaboración.

La gama de los rones Dos Maderas se produce a partir de la mezcla de rones de Barbados y Guyana, hogar de la mejor caña de azúcar y, por lo tanto, los mejores rones. Mientras que los rones de Barbados son suaves y ligeros con bouquets y sabores refinados, los de Guyana se caracterizan por tener más cuerpo, lo que los hace perfectos para mezclarse con otros. La mezcla de ambos rones se añeja por diez años en el Caribe antes de ser enviada a las instalaciones de William & Humbert en Jerez de la Frontera, una de las bodegas más grandes de Europa. Allí, gracias a la experiencia en la producción de Jerez y Brandy de Jerez, los rones pueden pasar a la etapa final. El último paso consiste en desarrollar la magnífica personalidad de los rones en botas de roble americano en las que previamente reposaron por más de dos décadas los famosísimos Dos Cortados y Don Guido. Estas botas aportan a la mezcla de rones sabores y aromas que la vuelven única.

Vinos Tierra de Cádiz.

La Indicación Geográfica Vinos de la Tierra de Cádiz representa una de las apuestas más interesantes del actual panorama de los vinos de mesa andaluces. Bajo este nombre, se agrupan un buen número de bodegas que producen con esmero y paciencia un producto de gran calidad tanto en vino blanco como en tinto. Las indicaciones geográficas designan a un producto agrícola o alimenticio concreto que posee un origen geográfico determinado, y cuya calidad o reputación se debe a dicho lugar de origen. De acuerdo con la normativa de la Unión Europea, se protege la indicación geográfica protegida (IGP) si el vínculo del nombre del producto con el medio geográfico sigue presente en al menos una de las etapas de la producción, de la transformación o de la elaboración. Sobra decir, que la provincia de Cádiz ya cuenta con dos denominaciones de origen por excelencia en el vino, como son Jerez y Manzanilla de Sanlúcar. Se hace necesario, por tanto, aprovechar también el gran conocimiento y la tradición que posee la provincia gaditana para la elaboración de vinos tintos y blancos. Cádiz es una indicación geográfica utilizada para designar los vinos de mesa de la comarca vitícola andaluza de Cádiz, que abarca los términos municipales de Arcos de la Frontera, Chiclana de la Frontera, Chipiona, El Puerto de Santa María, Jerez de la Frontera, Vejer de la Frontera, Prado del Rey, Puerto Real, Rota, Sanlúcar de Barrameda, Olvera, Setenil, Villamartín, Bornos, Trebujena y San José del Valle, en la provincia de Cádiz, España. Esta indicación geográfica fue reglamentada por la Junta de Andalucía en 2005, que está trabajando en su consideración como Denominación de Origen, siendo actualmente Indicación Geográfica Protegida.

El clima.

Los vinos de la Tierra de Cádiz se elaboran con las uvas procedentes de horizontes abiertos, dominados por terrenos llano o suavemente ondulados y colinas de escasa pendiente, cuyos suelos son, predominantemente, terrenos calizos, con buena retentiva de la humedad y evitan la evapotranspiración, además de arcillas y arenas. El clima de la zona es cálido mediterráneo con influencia oceánica, disfrutando de temperaturas comprendidas entre los 5° de mínima en invierno y los 35° de máxima en verano, con un riesgo mínimo de heladas. Las viñas son mecidas por dos vientos, el levante, que sopla desde el interior y es seco y cálido, y el poniente, que procede del océano, aportando humedad y frescura. La Tierra de Cádiz no es una zona de lluvias demasiado copiosas, con unos trescientos días de sol al año, llegando a 1.000 horas de luz en verano.

Variedades de uva.

Los vinos de la Identificación Geográfica Vinos de la tierra de Cádiz son caldos elaborados con las variedades tintas: Syrah, Monastrell, Merlot, Tintilla de Rota, Petit Verdot, Cabernet Franc, Garnacha Tinta, Tempranillo, y Cabernet Sauvignon, y con las blancas: Garrido, Palomino, Chardonnay, Moscatel, Mantía, Perruno, Macabeo, Sauvignon Blanc y Pedro Ximénez, y, recientemente, se han añadido las variedades Verdejo, Riesling, Mollar Cano y Graciano, pudiendo elegir cada productor aquellas que mejor funcionan en su proceso de elaboración, y en las cantidades adecuadas.

Los vinos.

La I.G.P. Vinos de la Tierra de Cádiz elabora vinos blancos, rosados y tintos. Los tintos jóvenes tienen una fase visual con tonos violáceos tirando a rojo rubí, con aromas afrutados y una boca armónica con cuerpo. Después de pasar por barricas de roble, los tintos adquieren un color a cereza picota intenso, con nariz potente, amplia y muy equilibrada, dando una boca profunda, amplia y persistente. Los rosados tienen un color brillantes, aromas afrutados y un sabor fresco y ligero. Los blancos jóvenes aportan una fase visual entre amarillo pálido e intenso, con toques afrutados en nariz y una boca fresca y ligera. Cuando se envejecen en barrica el amarillo toma tonos dorados intensos, la nariz mantiene la fruta, pero adquiere toques de madera al igual que en boca.
