Ubicación e historia.
Oltrepo Pavesen es una parte de la provincia de Pavie, en la grande región Lombarda, en Italia. Oltrepo Pavesen es una denominación de orígen. Desde el año 2007 los vinos spumente también se pueden beneficiar de esta denominación de origen, (Oltrepò Pavese metodo classico). Para los vinos tintos se usan varias variedades de uvas, como el Barbera, Bonarda, Buttafuoco, Cabernet Sauvignon, Pinot Nero o Sangue di Giuda. Los blancos de Oltrepo Pavesen se producen con las variedades siguientes: Chardonnay, Cortese, Malvasia, Moscato, Pinot Nero, Riesling y Sauvignon. Esta denominación se extiende sobre una superficie de 1.100 km2. El área de Oltrepò Pavese DOC es parte del cinturón de los Apeninos que desde Piamonte va hacia Emilia-Romagna, una franja montañosa al sur de Lombardía conocida por ser el punto de encuentro de cuatro regiones: Lombardía, Piamonte , Liguria y Emilia Romagna. Esta zona es rica en culturas, idiomas, tradiciones y diferentes tipos de cocina, pero bien integrados entre sí. Los vinos que se obtienen son grandes y complejos, caracterizados por notas florales acompañadas de notas de frutas maduras y fragancias de vegetales secos, con notas herbáceas y picantes. Son vinos particularmente frescos, caracterizados en boca por una agradable nota ácida y buena estructura. Finalmente, las áreas más adecuadas para el cultivo de uvas destinadas a la elaboración del vino tinto se extienden en la zona montañosa entre Torrazza Coste y Zenevredo y se caracterizan por pendientes pronunciadas y crestas gruesas. Las bandas adecuadas son las más calientes cerca de la llanura y ubicadas en altitudes entre 100 y 300 m., con pendientes principalmente expuestas hacia el sur/oeste y también con pendientes pronunciadas. Los vinos tintos que se obtienen tienen la máxima expresión en términos de color, estructura, contenido de alcohol y complejidad. La nariz tiene notas florales de violetas, toques de frutas rojas, fruta cocida (ciruela ), verdura seca (paja) y picante. En boca muestran un gran cuerpo debido a la estructura y buen contenido de alcohol y una acidez limitada. Finalmente, hay áreas de doble propósito , como el área de los municipios de Mornico Losana, Pietra de 'Giorgi, Montù Beccaria, Montalto Pavese y Borgo Priolo, que son más soleadas y cálidas con pendientes orientadas principalmente hacia el sur/oeste. Las altitudes son en promedio entre 150 y 350 m con excelentes exposiciones incluso a altitudes más altas (350 - 450 m). Son áreas con un excelente potencial tanto para la producción de uvas finas de vino blanco como para la elaboración de vino tinto. Origen.
La pinot gris es una variedad de uva, de la que se tienen noticias desde la Edad Media en la región de Borgoña, donde probablemente se la llamaba fromenteau. Llegó a Suiza desde Borgoña, junto a la pinot noir, a principios del siglo XIV. Según se cree, esta variedad era la favorita del Emperador Carlos IV de Luxemburgo, quien envió esquejes de esta vid, llevados por los monjes cistercienses, hasta Hungría. Los religiosos crearon viñedos de pinot gris en las laderas de Badacsony, a orillas del lago Balatón, en 1375. Poco después, la vid fue llamada szürkebarát, que significa "monje gris". En 1711, un comerciante alemán, de nombre Johann Seger Ruland, descubrió una uva creciendo silvestre en los campos del Palatinado. El subsiguiente vino que produjo fue conocido como ruländer y, posteriormente, se descubrió que esta vid era la pinot gris. Hasta los siglos XVIII y XIX, la uva era popular en Borgoña y en Champaña, pero las malas cosechas en la zona hicieron que decayera. En Alemania ocurrió algo similar, pero los viticultores de principios del siglo XX fueron capaces de desarrollar clones que producían cosechas más consistentes y fiables.
Características.
La variedad Pinot Gris es una uva originaria de Borgoña donde le llaman Pinot Beurots. Investigadores de la Universidad de California en Davis, han determinado que la pinot gris tiene un perfil de ADN similar a la pinot noir y que la diferencia de color deriva de una mutación genética que ocurrió hace siglos. Las hojas y las cepas de ambas vides son tan similares que la diferencia de color es lo único que permite diferenciarlas. Las cepas de pinot gris son de vigor medio bajo, de porte erecto, desborre y maduración semitardíos a tardios. Su producción es escasa. Los racimos son pequeños, compactos, homogéneos, cilíndricos, alados, con ramificación claramente diferenciada y muchas veces largamente pedunculada. Las bayas del pinot gris son pequeñas de sección circular y perfil ligeramente elíptico. Su hollejo es grueso de color gris-rosado-marrón, con mucha pruina. La pulpa es compacta, jugosa y muy aromática. Es una viña que resiste bien el frío, no se ve muy afectada por las heladas, tanto las de invierno como las de primavera. Resiste muy poco la caliza activa y la sequía. Es muy sensible a la botritis ya la podredumbre gris y ácida. Es sensible black-rot, al desecado del raquis, a los ácaros, cicadélidos y a la polilla del racimo, sin embargo, es poco sensible a la excoriosis.

La variedad Pinot Gris se asocia generalmente a las regiones vitícolas de Alsacia (Francia) y Oregon (Estados Unidos). Pero su cultivo se ha extendido a muchas otras zonas de todo el mundo, siendo también cultivada en Borgoña, California, Alemania, Italia, Australia, Nueva Zelanda, Argentina, Austria, Canadá, Chile, Hungría, Italia, Moldavia, Rumania, Sudáfrica, Eslovenia, Suiza y Ucrania.
