La denominación.
El área vitivinícola de la denominación DOC Colli Tortonesi consta de treinta municipios ubicados en la parte sureste del Piamonte , todos con un denominador común: la predisposición geológica y climática para albergar una viticultura de alta calidad. La característica de todos los vinos del Colli Tortonesi DOC es el marcado sabor, debido a los suelos arcillosos y marrones, que transfieren litio a las uvas y, en consecuencia, al vino, dándoles características únicas. Los vinos obtenidos, gracias a su particular mineralidad, tienen una fuerte predisposición al envejecimiento, incluso en el caso de los blancos. El Timorasso es una vid que se encuentra en las colinas de Tortona desde la antigüedad. Olvidada a lo largo de los años, recientemente ha sido recuperada por los productores y su fama ha crecido hasta convertirse en la bandera del Colli Tortonesi. El rendimiento del vino determina los numerosos éxitos sancionados con premios y posiciones principales en concursos de vinos.
Vinificación.
En las fases de vinificación, solo las prácticas enológicas justas y constantes en la zona son adecuadas para dar a los vinos sus características de calidad peculiares. Las prácticas de vinificación del vino Colli Tortonesi DOC incluyen, entre otras cosas, que, el rendimiento máximo de las uvas en el vino Colli Tortonesi DOC no debe exceder el 70% y el 65% para los tipos de croata, croata Riserva, Timorasso y Timorasso Riserva; si se superan estos parámetros dentro del límite del 5%, el excedente no puede tener derecho a DOC.
