Barbadillo es una empresa familiar, cien por cien española, que ha sabido aunar tradición y modernidad, mirar al futuro sin renunciar a sus orígenes y convertir las esencias del sur en su inequívoca seña de identidad. Actualmente es propietaria de 500 hectáreas de viñedos repartidos en dos fincas "Gibalbín" y "Santa Lucía", situadas en la zona del "Jerez Superior" La historia de Barbadillo se remonta a 1821, año en el que empezó a elaborar manzanilla. Desde entonces, no ha dejado de evolucionar buscando siempre vinos que sorprendan y dejen huella. Con 500 hectáreas de viñedo propio, 17 bodegas de crianza en Sanlúcar de Barrameda y una planta de vinificación de uvas blancas y tintas, Bodegas Barbadillo es una de las mayores bodegas del Marco de Jerez. Barbadillo es un apellido que se remonta a 1821, año en el que los emprendedores burgaleses Benigno Barbadillo y Manuel López Barbadillo se instalan en Sanlúcar de Barrameda. La primera manzanilla que se lanza al mercado se llamaba Divina Pastora, justo seis años después, en 1826. No sería hasta 1954 que se constituye la empresa. Adscritos a las denominaciones Jerez-Xèrés-Sherry, Manzanilla - Sanlúcar de Barrameda, Vinagre de Jerez, Brandy de Jerez, cuentan con un viñedo propio de 500 hectáreas de extensión y un parque de botas de 31.800 botas.




Los viñedos.

En el viñedo se cultiva las variedades blancas Palomino, Sauvignon blanc y Chardonnay y en cuanto a las tintas, las variedades Tempranillo, Cabernet, Merlot, Syrah y Tintilla de Rota. Todas ellas cultivadas sobre suelos de Albariza, con vendimias manuales y mecanizadas. De la bondad de su clima y la generosidad de su tierra, nace un vino único, que ha hecho universal su nombre : La Manzanilla. Hoy por hoy Barbadillo es el mayor criador de manzanillas de todo el Marco de Jerez, con marcas tan reconocidas y prestigiosas como Solear y Muyfina. Pero Bodegas Barbadillo está viviendo ahora, además, momentos de cambio, de progreso, de evolución emprendiendo otros proyectos capaces de ampliar su campo de trabajo, como es el caso de la adquisición de Bodegas o Viñedos Vega Real en la D.O. Vinos Tierra de Cádiz.

La Indicación Geográfica Vinos de la Tierra de Cádiz representa una de las apuestas más interesantes del actual panorama de los vinos de mesa andaluces. Bajo este nombre, se agrupan un buen número de bodegas que producen con esmero y paciencia un producto de gran calidad tanto en vino blanco como en tinto. Las indicaciones geográficas designan a un producto agrícola o alimenticio concreto que posee un origen geográfico determinado, y cuya calidad o reputación se debe a dicho lugar de origen. De acuerdo con la normativa de la Unión Europea, se protege la indicación geográfica protegida (IGP) si el vínculo del nombre del producto con el medio geográfico sigue presente en al menos una de las etapas de la producción, de la transformación o de la elaboración. Sobra decir, que la provincia de Cádiz ya cuenta con dos denominaciones de origen por excelencia en el vino, como son Jerez y Manzanilla de Sanlúcar. Se hace necesario, por tanto, aprovechar también el gran conocimiento y la tradición que posee la provincia gaditana para la elaboración de vinos tintos y blancos. El clima.

Los vinos de la Tierra de Cádiz se elaboran con las uvas procedentes de horizontes abiertos, dominados por terrenos llano o suavemente ondulados y colinas de escasa pendiente, cuyos suelos son, predominantemente, terrenos calizos, con buena retentiva de la humedad y evitan la evapotranspiración, además de arcillas y arenas. El clima de la zona es cálido mediterráneo con influencia oceánica, disfrutando de temperaturas comprendidas entre los 5° de mínima en invierno y los 35° de máxima en verano, con un riesgo mínimo de heladas. Las viñas son mecidas por dos vientos, el levante, que sopla desde el interior y es seco y cálido, y el poniente, que procede del océano, aportando humedad y frescura. La Tierra de Cádiz no es una zona de lluvias demasiado copiosas, con unos trescientos días de sol al año, llegando a 1.000 horas de luz en verano.




Variedades de uva.

Los vinos de la Identificación Geográfica Vinos de la tierra de Cádiz son caldos elaborados con las variedades tintas: Syrah, Monastrell, Merlot, Tintilla de Rota, Petit Verdot, Cabernet Franc, Garnacha Tinta, Tempranillo, y Cabernet Sauvignon, y con las blancas: Garrido, Palomino, Chardonnay, Moscatel, Mantía, Perruno, Macabeo, Sauvignon Blanc y Pedro Ximénez, y, recientemente, se han añadido las variedades Verdejo, Riesling, Mollar Cano y Graciano, pudiendo elegir cada productor aquellas que mejor funcionan en su proceso de elaboración, y en las cantidades adecuadas.




Los vinos.

La I.G.P. Vinos de la Tierra de Cádiz elabora vinos blancos, rosados y tintos. Los tintos jóvenes tienen una fase visual con tonos violáceos tirando a rojo rubí, con aromas afrutados y una boca armónica con cuerpo. Después de pasar por barricas de roble, los tintos adquieren un color a cereza picota intenso, con nariz potente, amplia y muy equilibrada, dando una boca profunda, amplia y persistente. Los rosados tienen un color brillantes, aromas afrutados y un sabor fresco y ligero. Los blancos jóvenes aportan una fase visual entre amarillo pálido e intenso, con toques afrutados en nariz y una boca fresca y ligera. Cuando se envejecen en barrica el amarillo toma tonos dorados intensos, la nariz mantiene la fruta, pero adquiere toques de madera al igual que en boca.

Origen.

El Palomino es la variedad base de los vinos de Jerez, traído en el siglo XVI por las tropas de Flandes y perfectamente adaptado a las características del medio y clima de las comarcas vitícolas andaluzas y extremeñas. La variedad blanca de uva palomino es una variedad autóctona española, utilizada en la elaboración de los vinos generosos de jerez y manzanilla, concretamente, la variedad es muy predominante en el Marco de Jerez, el triángulo formado por las localidades gaditanas de Jerez del Frontera, Sanlúcar de Barrameda y El Puerto de Santa María y que abarca, además las localidades de Chiclana, Chipiona, Puerta Real, Rota, Trebujena y Lebrija, de donde proceden estos vinos de fama mundial, donde representa el 95% del viñedo. Es una variedad complementaria para la elaboración de vinos en otras denominaciones españolas, concretamente, según el mapa interactivo del reparto de las variedades de uva españolas, Andalucía agrupaba cerca de 9.000 hectáreas de viñedo de esta variedad. Pero el dominio de la palomino en estas latitudes no siempre fue tan absoluto. la palomino fino se fue imponiendo poco a poco y lo venía haciendo ya desde el XVIII y XIX, pero su crecimiento y aumento de presencia fue a más de manera meteórica tras las replantaciones posteriores a la llegada de la plaga de la filoxera.




Características.

Dos son las claves del éxito de esta variedad, por un lado, su carácter neutro, perfecto para la elaboración de los vinos generosos. Por otro, su perfecta adaptación a las épocas del año idóneas para la vendimia en el marco. La palomino es una variedad de brotación y maduración tardía que resulta muy resistente a la sequía y sabe vivir en condiciones de adversidad. Sus racimos son grandes y tienen forma piramidal mientras que las bayas de las uvas son esféricas, aunque irregulares, de tamaño mediano y de un color que oscila entre el verde y el amarillo. También es conocida como palomino, palomino blanco, Chipiona y pinchito. Es una variedad muy resistente a la sequía y a los intensos calores estivales, bien adaptado, si el patrón es adecuado a los suelos calizos, en los que muy difícilmente muestra clorosis férrica. Es sensible a la rotura de sarmientos por el viento y es muy conveniente establecer las cepas en espaldera y podas en cordón. Es muy sensible al mildiu, al oídio, sobre todo en ataques a los racimos, a la podredumbre gris, la botritis y a los ataques de la polilla del racimo. No se ve muy afectada por las enfermedades de madera.




Zonas de cultivo.

Destaca el cultivo en Jerez, donde representa el 95% del viñedo. Se cultiva en la zona formada por Jerez de la Frontera, El Puerto de Santa María, Sanlúcar de Barrameda y Trebujena, todas ella comunidades gaditanas. Está admitido su uso, como variedad complementaria, en vinos de otras procedencias, como Tierra del Vino de Zamora y D.O. León. Según la normativa, es una variedad recomendada para la comunidad autónoma de Andalucía (donde es conocida como listán, palomino y palomino fino).




Vinos.

Con la variedad palomino se elaboran varios vinos de los considerados generosos secos. En los vinos de Jerez hay dos grandes ramales o familias: las que pertenecen a la crianza biológica y las que pertenecen a la crianza oxidativa. Además, están los amontillados y palos cortados a medio camino entre las dos crianzas. Todos ellos utilizan la variedad palomino en su elaboración, de hecho, los únicos vinos elaborados en Jerez que no utilizan la variedad palomino son los vinos dulces, que se elaboran con pedro ximénez y moscatel. Además, la variedad palomino también se utiliza para elaborar vinos jerezanos generosos licorizados con cierto dulzor, clasificados como pale cream, medium y cream.
