La uva Gewürztraminer tiene un origen incierto debido a la cierta predisposición que tiene a las mutaciones genéticas. La opción más aceptada, en cuanto a su origen, es que procede de Grecia, descendiente de la uva Aminea; de allí se habría trasladado a Termeno (Tramin) en el Alto Adige/Süd Tirol italiano, y en esta ciudad habría tomado la parte fundamental de su nombre, Traminer. En Tramin es donde comienza su apasionante historia; es conocida como Traminer desde hace más de mil años. El primer registro escrito donde aparece con este nombre data del año 1.000. En algún momento, sin fecha conocida y de forma natural, la Traminer blanca mutó genéticamente y su piel cambió, del blanco al rosa; esta mutación también produjo un cambio aromático, resultando una nueva variedad mucho más intensa, similar al moscatel, debido, en gran medida, a la una mayor acumulación de terpenos. La nueva variedad resultante de la mutación fue conocida como Gewürztraminer o Savagning Rosé, dependiendo de la zona de cultivo en Alemania o Francia. Características.

La uva gewürztraminer se desarrolla en cepas vigorosas, de porte erguido a semierguido, que prefiere suelos profundos y arcillosos con portainjertos débiles o medianamente vigorosos, suele cultivarse en espaldera y responde bien a podas largas. Su desborre es precoz y maduración de segunda época. Los racimos son de tamaño reducido a muy reducido, con forma troncocónica, medianamente compactos y poco uniformes, pedúnculo mediano. Las uvas son pequeñas, ovoides, pero de sección circular y difícil desprendimiento. El hollejo es grueso con un color característico verde rosado. La pulpa es blanda con tonos rosados al menos en las partes más iluminadas, su sabor tiene unos toques de moscatel, peculiares y muy agradables e intensos. Es una variedad que resiste muy bien al frío, aunque las heladas primaverales provocan daños irreparables sus ella. En España, la gewürztraminer está autorizada en: Aragón, Andalucía, Asturias, Castilla y León, Castilla-La Mancha, Cataluña, Extremadura, Navarra, La Rioja y la Comunidad Valenciana. La variedad riesling, también conocida como Riesler y Rieslinger, proviene de la selección de una vid silvestre alemana, originaria de la región del Rhin. Características.

La riesling es una uva que, aunque no es suficientemente reconocida por el público en general, sí lo es en los círculos de expertos en el tema, llegando a considerarse una uva de culto. Esta uva es muy utilizada en regiones con temperaturas más bajas, ya que es bastante resistente a las heladas, funcionando muy bien en terruños pobres, rocosos, ligeros y bien drenados. Se desarrollan en cepas de vigor medio alto, porte vertical que, debido a que son dan altas producciones, suelen tumbarse. El desborre y maduración son de media estación. Sus racimos son muy reducidos, compactos y con un pedúnculo corto y resistente, con gran uniformidad en sus uvas que se desprenden con dificultad. Las uvas son pequeñas, de sección circular pero aplanadas. Presentan un color verde pálido en la piel, aunque, al sobremadurar, se vuelve más intenso, estomas muy visibles y abundante pruina. Esta viña es sensible a la podredumbres gris, a la botritis y a la polilla del racimo, siendo muy atacada por el oídio y algo menos por el mildiu. Una vez la uva ha madurado es muy resistente a las heladas, sin embargo, por ser de desborre mediano y estar ubicada, por lo general, en climas fríos, es poco sensible a los fríos de la primavera. El ataque de la podredumbre gris o la sobremaduración da la posibilidad de obtener vinos licorosos. Su sensibilidad a la botritis, cuando se utiliza de manera adecuada, puede facilitar la elaboración de vinos dulces muy aromáticos tipo Sautermes. No debe abonarse con exceso de nitrógeno porque provocaría un exceso de hijuelos y de rebrotes. Es muy sensible al desecado del raquis por lo que se debe aportar magnesio en abundancia.




Zonas de cultivo.

La uva riesling se cultiva principalmente en Francia (Alsacia), Alemania, Suiza, Austria, Rusia, Eslovenia, Croacia, Hungria, Rumania, Norte de Italia, Norte de España, Australia y California en USA. Da lugar a diversas denominaciones de origen (D.O.) en los países en que más se cultiva, principalmente la mencionada Alemania, donde es la uva más cultivada, ocupando el 20.8% de su superficie de cultivo vinícola, para un total de 21.197 ha.2 Destacan también Francia, donde se cultiva en la región de Alsacia (21.9%, para un total de 3.350 ha),3 única región de Francia donde está permitido su cultivo.4 También ocupa superficies destacables de cultivo en Austria, Chequia, Luxemburgo, Italia y otros países. Salvo excepciones se cultiva siempre en zonas de clima fresco.




Vinos.

La uva riesling es la materia prima para elaborar vinos jóvenes muy afrutados. Esta variedad de uva también se utiliza para producir vinos secos que envejecen muy bien, tomando aromas que, sin dejar de ser afrutados, traen recuerdos de miel y, cuando son suficiente maduros, dan en nariz un aroma a pan recién horneado y también a galletas. Por lo general, en fase visual se observa un tono amarillo pajizo, con reflejos verdes brillantes. En nariz se aprecian aromas frutales y florales, se nota el limon, el pomelo, los cítricos en general, la manzana verde y el melocotón, las flores blancas, el anis, la tila, el comino y el hinojo también están presentes en sus vinos. El riesling desarrolla aromas minerales dependiendo del tipo del suelo en el que se encuentra establecido. Su boca es muy fresca de principio a fin, muy redondo, graso y glicérico, no exento de cuerpo. Los vinos de riesling tienen una marcada acidez, incluso sobremadurando las uvas. Por ser muy resistente a las heladas se utiliza para la elaboración del “eiswein” o vinos de hielo.

Origen.

La pinot gris es una variedad de uva, de la que se tienen noticias desde la Edad Media en la región de Borgoña, donde probablemente se la llamaba fromenteau. Llegó a Suiza desde Borgoña, junto a la pinot noir, a principios del siglo XIV. Según se cree, esta variedad era la favorita del Emperador Carlos IV de Luxemburgo, quien envió esquejes de esta vid, llevados por los monjes cistercienses, hasta Hungría. Los religiosos crearon viñedos de pinot gris en las laderas de Badacsony, a orillas del lago Balatón, en 1375. Poco después, la vid fue llamada szürkebarát, que significa "monje gris". En 1711, un comerciante alemán, de nombre Johann Seger Ruland, descubrió una uva creciendo silvestre en los campos del Palatinado. El subsiguiente vino que produjo fue conocido como ruländer y, posteriormente, se descubrió que esta vid era la pinot gris. Características.

La variedad Pinot Gris es una uva originaria de Borgoña donde le llaman Pinot Beurots. Investigadores de la Universidad de California en Davis, han determinado que la pinot gris tiene un perfil de ADN similar a la pinot noir y que la diferencia de color deriva de una mutación genética que ocurrió hace siglos. Las hojas y las cepas de ambas vides son tan similares que la diferencia de color es lo único que permite diferenciarlas. Las cepas de pinot gris son de vigor medio bajo, de porte erecto, desborre y maduración semitardíos a tardios. Su producción es escasa. Los racimos son pequeños, compactos, homogéneos, cilíndricos, alados, con ramificación claramente diferenciada y muchas veces largamente pedunculada. Las bayas del pinot gris son pequeñas de sección circular y perfil ligeramente elíptico. Su hollejo es grueso de color gris-rosado-marrón, con mucha pruina. La pulpa es compacta, jugosa y muy aromática. Es una viña que resiste bien el frío, no se ve muy afectada por las heladas, tanto las de invierno como las de primavera. Resiste muy poco la caliza activa y la sequía. Es muy sensible a la botritis ya la podredumbre gris y ácida. Es sensible black-rot, al desecado del raquis, a los ácaros, cicadélidos y a la polilla del racimo, sin embargo, es poco sensible a la excoriosis.




Zonas de cultivo.

La variedad Pinot Gris se asocia generalmente a las regiones vitícolas de Alsacia (Francia) y Oregon (Estados Unidos). La pinot blanc es una variedad de uva producto de una mutación genética de la pinot gris, que a su vez también es una mutación de la pinot noir. Características.

El pinot blanc es una variedad bastante vigorosa, mas productiva que el pinot noir o el pinot gris, presentando una regularidad en la producción. Se produce en cepas de porte semierecto cuya brotación y maduración es entre media y temprana, y su fertilidad es elevada. Los racimos de pinot blanco son de tamaño pequeño a mediano, cilíndricos o cónico-cilíndricos, con hombros marcados, compactos y homogéneos. Las uvas que conforman esos racimos son esféricas, de tamaño medio, con una piel verde amarillenta que va tomando tonos dorados al madurar. Las cepas de pinot blanco se deberían cultivar en suelos profundos, cálidos y pedregosos, muy bien adaptada a las zonas septentrionales. Es una variedad que, a pesar de ser de brotación relativamente temprana, resiste bastante bien al frío, pero bastante delicada en lo que a enfermedades de la vid se refiere. Es relativamente sensible a la clorosis.

La mayoría de las plantaciones francesas de esta variedad están en Alsacia, donde se usa la variedad para vinos sin gas y para el vino espumoso de la AOC Crémant d'Alsace
En Alemania se elaboran vinos variedad pinot blanc en las regiones vitivinícolas de Baden y el Palatinado, donde es conocida como weißer burgunder o weißburgunder. En los Estados Unidos se encucentra sobre todo en California. En Canadá, la pinot blanc es usada a menudo para hacer vino de hielo muy reputado en el valle del Okanagan. En Italia, es una cepa complementaria en muchas de su zonas vitivinícolas.




Vinos.

Los vinos monovarietales de pinot blanc se caracterizan por tener una fase visual nítida y brillante con capa amarilla pálido con algunos reflejos verdes. Su nariz es fresca, discretamente afrutada, con notas de manzana y toques florales que, sin ser exuberante, expresa perfectamente los aromas primarios. En boca el Pinot Blanc es un vino apertura casi inmediata, agradable, tierno con una acidez mediana. Los vinos con cuerpo de pinot blanc alsacianos tienen notas a especias y a ahumado, así como una acidez moderada aportada seguramente por la variedad auxerrois blanc.
