Estrategia comercial y de desarrollo.

Cuando tenía 18 años, Mathilde lo dejó todo y se fue a estudiar administración de empresas a China, donde se especializó en estrategia internacional de negocios. Allí aprendió mandarín. Tomaba las clases en ese idioma que luego le sería tan útil para estar al cargo de la estrategia comercial y de desarrollo de negocio del grupo Chapoutier. Llevar el apellido Chapoutier a veces puede ser una presión añadida. No obstante, a ella le ha servido para llevar a cabo este proyecto sin complejos, con el que transmite al mundo su concepción del vino, más cercana y relajada. En un viaje por la Provenza, Mathilde se enamoró de unos viñedos ubicados al pie de las montañas de Sainte Victoire y los vinos que a partir de ellos elaboraba la propiedad Grand Ferrage. En cierto modo los apadrinó y sacó lo mejor de ellos como asesora. Finalmente, terminó comprando la bodega y es allí donde elabora sus vinos ahora. La brújula que aparece en las etiquetas de estos vinos, diseñadas por ella misma, representa lo que para Mathilde significa el vino, siempre ligado a los viajes. Un símbolo de su visión personal del mundo del vino, reflejo de su manera de vivir su actividad en este sector. Además, con ellos defiende una cultura vinícola más hedonista, ligada más a la gastronomía que a la intelectualidad. De hecho, estos vinos parecen estar especialmente creados para acompañar platos de comida casera mediterránea o, simplemente, para disfrutar este verano al fresco con amigos.




Tradición unida a innovación.

La casa M. Chapoutier posee hoy día la propiedad vitivinícola más importante de Hermitage, con 34 hectáreas de las 115 ha de la denominación de origen. La adopción del cultivo biodinámico en todos sus cultivos, uniendo la tradición con la innovación, junto a la excepcional calidad de sus vinos, han convertido a esta casa en el marco de referencia de una de las denominaciones históricas de Francia. Desde sus orígenes en 1808, varias generaciones han ido conformado una de las más bellas casas vitivinícolas del valle del Rhône. En el transcurso de los años sus propiedades se han ido extendiendo y diversificando en el corazón de las mejores tierras de las denominaciones de origen Hermitage, Crozes-Hermitage, Saint-Joseph, Côte-Rôtie, Condrieu, Châteauneuf-du-Pape, Banyuls, Coteaux d'Aix, y Tricastin. El cultivo biodinámico.

Pero lo esencial de la revolución emprendida por Michel, es el haber apostado por el cultivo biodinámico, iniciando con ello un cambio radical en la forma de abordar el cultivo de la vid. Su objetivo es poner en práctica una agricultura del siglo XXI, dejando que se exprese libremente el terruño, respetando sus ciclos y equilibrios naturales y considerándolo como una fuente de vida, cuyas riquezas deben preservarse. La totalidad de viñedos de la casa M. Chapoutier se cultivan hoy por Biodinámica, lo que se traduce en tres aspectos básicos:
I. El terreno. Tratado con gran respecto, sin adicción de abonos químicos, produce rendimientos muy bajos, ayudado de una poda severa, viñas viejas y una selección de masas.
II. El biotipo. Cuidado sin necesidad de uso de pesticidas, o herbicidas.
III. La identidad del vino de pago. Métodos de vinificación tradicional, levaduras indígenas y ausencia de fermentación a baja temperatura.




Iniciativas originales.

Su carácter innovador y generoso han llevado a Michel a tomar iniciativas originales también en otros campos. Las etiquetas de sus vinos se han sobreimpreso en braille. Este espíritu de respecto por la vida y el suelo, combinado con la audacia de adoptar soluciones que mejoren el mundo en que vivimos, convierten a esta casa en una joya de la viticultura mundo.

Origen.

El origen de la viognier es desconocido, aunque se cree que es una vid antigua, posiblemente originaria de Dalmacia (en la actual Croacia). Una leyenda dice que el emperador romano Probo llevó esta vid al Ródano en el 281 d. C., también se dice que esta vid fue empacada con la syrah en un barco mercante, que fue por el Ródano en dirección a Beaujolais, y que fue capturado por un grupo de forajidos (conocidos como culs de piaux) cerca de la actual Condrieu. Así como se desconoce a ciencia cierta cuál es el origen de esta uva, su nombre también ese viognier es oscuro. Probablemente provenga del nombre de la ciudad francesa de Vienne, donde había un puesto avanzado de los romanos. Otra leyenda dice que el nombre proviene de la expresión romana via gehenne, que significa "carretera del valle del Infierno". Características.

La cepa de variedad viognier presenta un pámpano de porte horizontal y produce racimos compactos, de tamaño pequeño, con pedúnculo visible y poco lignificado, con desborre de primera época y brotación temprana. Su maduración también es temprana, aunque en menor medida. Las bayas son de tamaño pequeño, redondas, esféricas y de coloración verde-amarilla. La calidad potencial del vino de viognier depende también de la viticultura y del clima. El hollejo es grueso. El mosto tiene un muy alto contenido en azúcares y de una baja a muy baja acidez. La uva requiere una estación de crecimiento larga y cálida, para madurar por completo, pero un clima muy cálido puede hacer que la uva desarrolle altos niveles de azúcares que den lugar a un alto grado alcohólico antes de que estas notas aromáticas se desarrollen. Su cultivo es difícil, debe podarse a poda larga moderada, dando bajos rendimientos de forma natural. Se suele plantar con densidad de plantación bastante elevada, dependiendo de la zona entre 4.000 y 6.000 cepas por hectárea. Esta variedad de viñedo es, como todas las cepas de brotación temprana, ligeramente sensible a las heladas primaverales. Aunque es bastante vigorosa tiene una sensibilidad media al viento, por lo que se recomienda su disposición en espalderas. No presenta ninguna sensibilidad particular a ninguna enfermedad y/o plaga, salvo el oídio. Se adapta muy bien a terrenos ácidos y a climas húmedos, siendo muy sensible a sequías extremas. Da mejores rendimientos en suelos profundos, aunque no necesariamente excesivamente fértiles.




Zonas de cultivo.

La viognier es una variedad noble de uva blanca, originaria de Ródano, en Condrieu, que se cultiva poco incluso en su lugar de origen, pero con mayor éxito en Languedoc-Rosellón (Francia). En Francia la viognier es la única variedad permitida en las denominaciones de Condrieu y Château Grillet, que se encuentran en el lado oeste del río Ródano, a unos 40 km de Lyon. En España podemos encontrar algunas viñas viognier en el Priorat, Jumilla, Castilla la Mancha y Castilla y León. A partir de la década de los ochenta, las plantaciones de viognier en los Estados Unidos y Canadá han aumentado enormemente. La Costa Central de California es el mayor productor de USA. Argentina y Chile tienen cantidades significativas de viognier. Se han realizado pequeños cultivos en Brasil y Uruguay. Vinos.

En algunas regiones vinícolas, la viognier es fermentada junto con la uva tinta syrah, para aportar color y buqué al vino. Los vinos elaborados con variedad viognier dan como resultado unos vinos muy perfumados y afrutados y de un final muy largo en boca. Los vinos de viognier son bien conocidos por sus aromas florales y por los terpenos También hay muchos aromas que dependen del terruño, las condiciones climáticas y la antigüedad de las vides. The production region of A.O.C. Condrieu is located in La región vitivinícola francesa situada en el norte del Ródano, cerca de Vienne y al sur de la Côte-Rôtie. Los viñedos se encuentran en las siete comunas de Limony, Chavanay, Malleval, Saint-Michel-sur-Rhône, Saint-Pierre-de Boeuf, Vérin y Condrieu. Estas comunas se encuentran en los departamentos franceses de Ardèche, Rhône y Loire en las empinadas laderas de las estribaciones del Macizo Central en la margen derecha del Ródano. Las cuatro comunas más meridionales también pueden producir vino bajo el AOC de Saint-Joseph. Los vinos elaborados en este AOC son exclusivamente blancos, de la variedad Viognier, que pueden haberse originado en la región. Dentro de Condrieu se encuentra el enclave AOC de Château-Grillet, que produce vinos que también son 100% Viognier.
