Características de los vinos.

Los vinos serán blancos, rosados y tintos para las siguientes categorías: vino, vino de aguja, vino de aguja gasificado. Y serán blancos y rosados para los vinos espumosos de calidad. Los vinos que podrán elaborarse y comercializarse amparados por esta I.G.P. deberán presentarse a consumo, con al menos las características descritas a continuación: La acidez volátil de los vinos dispuestos para el consumo no será superior a 0,8 g/l expresada en ácido acético, excepto para los vinos blancos, rosados, dulces y semidulces y para aquellos con un grado alcohólico mayor de 13% Vol. que hayan sido sometidos a algún proceso de envejecimiento en cuyo caso el límite máximo será de 1 g/l y para los vinos sometidos a un período de envejecimiento superior a dos años el límite máximo de acidez volátil será de 1,2 g/l. Los vinos de la IGP “Extremadura” serán vinos limpios y brillantes, con aromas francos en los que se aprecien las características de la uva de la que proceden y la técnica de elaboración y conservación utilizada, y en boca serán equilibrados. No presentarán sensaciones de oxidación, excepto en los casos en que los vinos hayan sido sometidos a crianzas oxidativas. No presentaran defectos de aroma, sabor o color. Los vinos blancos deben de tener un color amarillo con tonalidades desde el verde, aceradas a ligeramente pardas, aromas francos y frutados y/o florales y/o vegetales, y gusto fresco y equilibrado. Los vinos blancos con envejecimiento en mdadera tendrán un color amarillo pálido a dorado, aromas con presencia de madera de gusto equilibrado con recuerdos a roble. Los vinos rosados tendrán un color rosa con tonalidades violáceas a anaranjadas, aromas francos y frutales y notas florales; gusto fresco y equilibrado. Los vinos tintos, tendrán un color rojo con tonalidades violáceas, aromas francos y frutados y/o florales, con gusto equilibrado. Los vinos tintos con envejecimiento en madera presentarán un color rojo con tonalidades violáceas a tejas, con aromas con recuerdos a madera y gusto equilibrado y persistente. Los vinos de aguja y los gasificados en nariz serán vinos limpios e intensos con aromas propios de la variedad, frescos y afrutado con una buena integración del carbónico endógeno, o bien del añadido en el caso del vino de aguja gasificado. Al abrir la botella desprende lentamente las burbujas sin formas espumas de forma patente. En el caso de los vinos blancos predominaran los tonos amarillos de los más pálidos a los más dorados. En los rosados encontraremos las tonalidades rosas, con reflejos de fresas, grosellas o salmón. Para los tintos los tonos rojos presentarán reflejos violáceos, granates, púrpuras o rubí. Y por último, los vinos espumosos de calidad, deberán presentar en boca un ligero cosquilleo debido al desprendimiento y buena integración del gas carbónico. Los compuestos aromáticos existentes en el vino base, junto a los procedentes de la segunda fermentación, y todos ellos arrastrados y potenciados por el desprendimiento del gas carbónico, consiguen el desarrollo de una característica gama de aromas, todos ellos muy sutiles y de gran complejidad. Destacan además de los perfumes varietales, los desarrollados por la autolisis de las levaduras que recuerdan a pastelería, tostados, frutos secos, caramelo, etc. En el caso de los vinos blancos predominaran los tonos amarillos de los más pálidos a los más dorados.




Variedades de uva.

La elaboración de los vinos protegidos por la IGP «EXTREMADURA» se realizará exclusivamente con uvas de las variedades autorizadas, en la Comunidad Autónoma de Extremadura, por la legislación de la Unión, en las variedades blancas: Alarije o Subirat parent, Borba, Cayetana Blanca, Pardina o Jaén blanco, Macabeo o Viura,
Chardonnay, Montúa o Chelva, Beba o Eva, Malvar, Parellada, Pedro Ximénez, Verdejo, Doña Blanca o Cigüente, Sauvignon Blanc, Gewürztraminer, Moscatel de Alejandría, Moscatel de grano Menudo, Perruno, Riesling, Torrontes, Viognier, Xarello. Zona geográfica y clima.

El clima dominante en Extremadura es el mediterráneo, pero matizado por la advección de masas de aire marítimo procedentes del Atlántico. Los centros de acción principales son el frente polar, que descarga sus masas de aire húmedas y el anticiclón de las Azores. Las horas de sol anuales sobrepasan las 2.600 horas, donde la radiación solar tiene un índice medio superior a 5 Kwh. por metro cuadrado, con datos en algunos años próximos a las 3.000 horas según el Mapa Solar de España elaborado por la Agencia Estatal de Meteorología, siendo de los más altos del país. Las precipitaciones son escasas en casi toda la región. La mayor parte de ella recoge menos de 600 mm anuales, y en el centro de la provincia de Badajoz no se alcanzan los 400 mm. Una de las características más notables, sobre todo en las regiones más secas es la irregularidad interanual. La época más lluviosa del año es la primavera, seguida del otoño. Son las épocas en las que llega la masa de aire polar marítimo que trae el frente polar. El anticiclón de las Azores predomina en verano y aleja las lluvias. Encontramos tres, y hasta cuatro, meses de aridez en casi toda la región. Las temperaturas medias anuales oscilan entre 16 y 17 ºC. Los inviernos son más suaves que en el interior de la península ibérica debido a la influencia oceánica por la
cercanía a la costa atlántica portuguesa, sin barreras naturales intermedias El verano llega a ser muy caluroso en toda la región superando las medias los 25 °C, alcanzándose unas máximas diurnas que superan los 41 °C. Es pues un verano caluroso cuyas temperaturas son mayores de las que debería tener en teoría, por la proximidad atlántica. La latitud de la región determina que el grado de insolación sea elevado. Esto, unido a la influencia del mencionado anticiclón de las Azores y a la reducida altitud media de la región, que oscila entre 200 y 400 metros, determina la elevada temperatura media de la región en dicha época.

Origen.

El origen de la viognier es desconocido, aunque se cree que es una vid antigua, posiblemente originaria de Dalmacia (en la actual Croacia). Una leyenda dice que el emperador romano Probo llevó esta vid al Ródano en el 281 d. C., también se dice que esta vid fue empacada con la syrah en un barco mercante, que fue por el Ródano en dirección a Beaujolais, y que fue capturado por un grupo de forajidos (conocidos como culs de piaux) cerca de la actual Condrieu. Así como se desconoce a ciencia cierta cuál es el origen de esta uva, su nombre también ese viognier es oscuro. Probablemente provenga del nombre de la ciudad francesa de Vienne, donde había un puesto avanzado de los romanos. Otra leyenda dice que el nombre proviene de la expresión romana via gehenne, que significa "carretera del valle del Infierno". Probablemente, este nombre fuese en alusión a la dificultad de cultivar esta uva. En 2004 el análisis de ADN de la Universidad de California en Davis demostró que la uva era una pariente cercana de la variedad freisa, del Piamonte, y que era prima de la variedad nebbiolo.




Características.

La cepa de variedad viognier presenta un pámpano de porte horizontal y produce racimos compactos, de tamaño pequeño, con pedúnculo visible y poco lignificado, con desborre de primera época y brotación temprana. Su maduración también es temprana, aunque en menor medida. Las bayas son de tamaño pequeño, redondas, esféricas y de coloración verde-amarilla. La calidad potencial del vino de viognier depende también de la viticultura y del clima. El hollejo es grueso. El mosto tiene un muy alto contenido en azúcares y de una baja a muy baja acidez. La uva requiere una estación de crecimiento larga y cálida, para madurar por completo, pero un clima muy cálido puede hacer que la uva desarrolle altos niveles de azúcares que den lugar a un alto grado alcohólico antes de que estas notas aromáticas se desarrollen. Su cultivo es difícil, debe podarse a poda larga moderada, dando bajos rendimientos de forma natural. Se suele plantar con densidad de plantación bastante elevada, dependiendo de la zona entre 4.000 y 6.000 cepas por hectárea. Esta variedad de viñedo es, como todas las cepas de brotación temprana, ligeramente sensible a las heladas primaverales. Aunque es bastante vigorosa tiene una sensibilidad media al viento, por lo que se recomienda su disposición en espalderas. No presenta ninguna sensibilidad particular a ninguna enfermedad y/o plaga, salvo el oídio. Se adapta muy bien a terrenos ácidos y a climas húmedos, siendo muy sensible a sequías extremas. Da mejores rendimientos en suelos profundos, aunque no necesariamente excesivamente fértiles.




Zonas de cultivo.

La viognier es una variedad noble de uva blanca, originaria de Ródano, en Condrieu, que se cultiva poco incluso en su lugar de origen, pero con mayor éxito en Languedoc-Rosellón (Francia). En Francia la viognier es la única variedad permitida en las denominaciones de Condrieu y Château Grillet, que se encuentran en el lado oeste del río Ródano, a unos 40 km de Lyon. En España podemos encontrar algunas viñas viognier en el Priorat, Jumilla, Castilla la Mancha y Castilla y León. A partir de la década de los ochenta, las plantaciones de viognier en los Estados Unidos y Canadá han aumentado enormemente. La Costa Central de California es el mayor productor de USA. Argentina y Chile tienen cantidades significativas de viognier. Se han realizado pequeños cultivos en Brasil y Uruguay. En Australia, el lugar donde está más extendida es el valle Edén, en Australia Meridional, donde se hacen vinos varietales y donde también se mezcla con shiraz.




Vinos.

En algunas regiones vinícolas, la viognier es fermentada junto con la uva tinta syrah, para aportar color y buqué al vino. Los vinos elaborados con variedad viognier dan como resultado unos vinos muy perfumados y afrutados y de un final muy largo en boca. Los vinos de viognier son bien conocidos por sus aromas florales y por los terpenos También hay muchos aromas que dependen del terruño, las condiciones climáticas y la antigüedad de las vides. Aunque algunos de estos vinos, sobre todo aquellos de vides antiguas y de vendimia tardía, son aptos para la crianza la mayoría son realizados para ser consumidos jóvenes. Los vinos de viognier de más de tres años de edad tienden a perder muchos de sus aromas florales. La crianza de estos vinos a menudo un vino muy fresco pero con un aroma flojo.
