Bodegas Thesaurus Miguel Martín: Brand.
Español [ ES ]Mimando viñedos desde 1920.
Bodegas Thesaurus, propiedad de la familia Martín Verástegui, está ubicada en los municipios vallisoletanos de Olivares de Duero y Cigales. Para la elaboración de sus vinos selecciona uvas de las denominaciones de origen de Ribera del Duero, Rueda y Cigales. La Ribera es idónea para el cultivo de la vid, con el terruño más bien calcáreo y a una altitud de entre 750 y 850 metros. Su cercanía al río Duero, junto con las extremas temperaturas, hacen fuerte a la planta y genera las condiciones perfectas para el cultivo de la variedad tempranillo, la más abundante en el territorio nacional y una de las más completas y equilibradas que existen. Los viñedos de los que se extrae la uva tienen entre 15 y 60 años y su recolección se realiza con una selección muy rigurosa de cada fruto. El proceso es controlado por el Consejo Regulador de la D.O. Ribera del Duero. Bodegas Thesaurus mezcla la tradición familiar, la experiencia generacional de su equipo y la innovación tecnológica para elaborar los mejores vinos en las distintas D.O.
La familia Martín Verástegui.
Los miembros de la familia Martín Verástegui han sido bodegueros por varias generaciones que se remontan a comienzos del siglo pasado cuando Gregorio Martín comercializaba sus vinos en un carretón tirado por mulas por los caminos de Castilla. Desde entonces, la empresa por él iniciada ha seguido un progreso ascendente y hoy día, la cuarta generación elabora vinos en cuatro diferentes Denominaciones de Origen (D.O. Ribera del Duero, D.O. Rueda, D.O. Cigales e I.G.P. Vino de la Tierra de Castilla y León) utilizando las variedades tintas Tempranillo y Garnacha, y las blancas Verejo, Sauvignon Blanc y Pedro Ximénez. La familia Martín Verástegui adora su tierra, mima mucho el viñedo, inspecciona y analiza la uva hasta su completa satisfacción y se guía por el clima, la naturaleza y el patrimonio que le rodea. Arriesga y juega con el factor humano y lo complementa con los más modernos sistemas de vinificación.
Bodega Ribera del Duero.
Las instalaciones de Bodegas Thesaurus Ribera cuentan con varias salas que albergan los diferentes sistemas necesarios en cada etapa. Una sala de depósitos de acero inoxidable, un laboratorio para realizar análisis de las diferentes muestras, una bodega construida bajo tierra con capacidad para 600 barricas y, por último, una zona de reposo de las botellas. Además de una sala de catas, donde los visitantes pueden disfrutar de sus excelentes vinos. La modernidad de sus instalaciones, junto con algunos elementos mantenidos a lo largo de los años, la convierten en un lugar único para visitar y sentirse más cerca de los tesoros de la Ribera del Duero.
Cuidada elaboración.
El primer paso para la elaboración del vino es la vendimia, en el caso de Bodegas Thesaurus, se realiza en cajas y/o de forma mecanizada. Una vez recolectados los racimos, se vierten sobre una plataforma vibratoria de última generación y se llevan hacia la mesa de selección, donde se realiza un tratamiento exclusivo de cada uva. Posteriormente se realiza el proceso de fermentación con temperaturas controladas entre 26 y 28 ºC, con remontados diarios y con una duración de 10 a 15 días. Las levaduras que se utilizan son autóctonas de la zona. Tras el descube, se lleva a cabo el prensado para obtener el vino prensa, rico en aromas y taninos. El siguiente proceso es la fermentación maloláctica, donde el ácido málico se convierte en láctico y donde se minimiza el carácter ácido del vino, lo que produce una sensación más agradable y voluminosa en boca. Una vez descubado, se lleva a cabo el trasiego a las diferentes barricas.
Matices característicos.
El proceso siempre finaliza con un período de crianza en botella, dando tiempo a los vinos a estabilizarse, ensamblarse y redondearse. En el caso del vino roble, su tiempo en botella es de al menos 2 meses, mientras que los crianzas se envejecen durante 6 meses y, en caso de los vinos de selección de la familia, 12 meses. Así se consigue que los vinos salgan a la venta en el momento óptimo de consumo. A lo largo de todo el proceso, una dirección técnica compuesta por dos enólogos y Gregorio Martín, su fundador, se encargan de revisar y vigilar la evolución de los vinos, de forma que siempre se encuentren en su momento óptimo de maduración para lograr los matices que los caracterizan.
Bodega Cigales.
Bodegas Thesaurus Cigales es, desde el año 2017, el centro logístico de ambas bodegas. Está ubicada en dicho término municipal, rodeada de viñedo y olivos. En su interior dispone de una sala de catas, una amplia terraza para eventos, oficinas y una sala de elaboración con depósitos de acero inoxidable con una capacidad de 150.000 litros de vino. Centra su elaboración en el vino rosado, que comienza durante la vendimia manual en viñedos situados en Cubillas de Santa Marta, Trigueros del Valle y Cigales. Una vez recogida la uva, se vuelca en la tolva para proceder al despalillado y se traspasa a los depósitos, donde a través del proceso de sangrado, se obtiene el mosto yema, de gran calidad. A continuación se descuba y se estruja para obtener el mosto prensa. Posteriormente, se realiza el proceso de fermentación con temperaturas controladas entre 21 y 24 ºC, con remontados diarios y con una duración de 8 a 12 días. Las levaduras que se utilizan son autóctonas de la zona.
Barricas de máxima calidad.
La bodega cuenta con barricas bordelesas de 225 litros, de las más prestigiosas tonelerías. Tanto estas como el grado de tostado se han ido seleccionando con el paso de los años y las diferentes prácticas hasta finalmente encontrar el tostado justo para que madera y el vino se ensamblen correctamente y den lugar a grandes vinos equilibrados y elegantes. Los tipos de barricas que se emplean son: barricas de roble americano, barricas de roble francés, barricas con duelas de roble americano y tapas de roble francés y barricas de roble centroeuropeo (húngaro).
Crianza en Roble.
Bodegas Thesaurus elabora robles con un periodo de 4 a 6 meses de crianza en barrica americana y francesa, crianzas con 12 meses en barrica americana, francesa y mixta; y vinos de selección de la familia con 18 meses en barrica americana, francesa y centroeuropea.

La variedad viura, también muy conocida como macabeo, es una variedad de uva blanca utilizada en la elaboración de vino. Existe controversia al origen de la uva viura, en parte debido a la tardía detección de la sinonimia entre viura y macabeo. Hay autores que sitúan su origen en Asia Menor, aunque la primera cita de viura la ubica en los Pirineos orientales franceses, en contraposición a otras opiniones que colocan su origen en la región de Aragón. Por tanto, desde el punto de vista vitivinícola, se desconoce a ciencia cierta su origen, pero se puede asegurar, sin temor a equivocarse, que los primeros vinos de uva viura se elaboraron en un área situado entre el sureste de Francia y el noreste de España.
Características.
Las viña viura es una variedad rústica que se adapta con facilidad a distintos tipos de suelos, aunque se desaconseja para lugares frescos y húmedos o demasiado secos, ya que tiene facilidad para el desecamiento y a la senescencia y caída precoz de las hojas. Es una uva formada en racimos grandes, compactos y con pedúnculo corto, con forma cónica larga, rodeados de hojas grandes formadas por cinco lóbulos con un seno peciolar poco abierto o incluso cerrado. Las uvas son de color amarillo dorado, de un tamaño mediano, esféricas y uniformes y que, en su estrujado, producen un hollejo grueso. Es una variedad con cepas bastante vigorosas, de porte erguido y de alto rendimiento productivo, tanto por hectáreas como en mosto. Su fertilidad es alta, así como sus rendimientos. Esta variedad es muy sensible a las polillas y a la botrytis cinerea o podredumbre gris. Su sensibilidad al oídio y la necrosis bacteriana es media alta, así como a los ácaros. Por el contrario, no es demasiado sensible al mildiu y al corrimiento de racimo. Es una uva de brotación relativamente tardía, así como su maduración mientras su desborre es temprano, lo que la hace sensible a las heladas.
Zonas de cultivo.
Las regiones que producen vino blanco a partir de esta uva son principalmente La Rioja y Penedés, siendo muy usada para la elaboración de cava en Cataluña, aunque también se elaboran vinos blancos con uva viura en Aragón, Castilla la Mancha, Valencia y Extremadura. En Francia es habitual en la región de Languedoc-Rosellón. Es la variedad más utilizada para los vinos de Rioja, los espumosos de Rueda y muy principal en la elaboración del cava.
Vinos.
La variedad viura es muy polivalente, apta para la fermentación en barrica y, según las condiciones de cultivo, permite obtener distintos tipos de vinos blancos secos, espumosos o incluso vinos dulces naturales. Son vinos ligeros y agradables, equilibrados en acidez y azúcar y de color pálido. En nariz da lugar a vinos con aromas florales y frutales, como la manzana, de intensidad media alta. En boca produce vinos ligeramente astringentes que, cuando han sido vendimiados tardíamente y son envejecidos en madera, recuerdan a la miel y frutos secos. También son utilizados en el coupage de los tintos jóvenes o de crianza, imprimiendo acidez al conjunto, sobre todo cuando se ha hecho una vendimia precoz en la zona centro, o cuando el cultivo es en climas frescos. El grado alcohólico de estos vinos ronda 13,6º con acidez media de 5,3.
