Descripción.
D.O.C.G. Moscato d'Asti es la denominación de origen que distingue al famoso moscato del Piamonte, uno de los vinos más apreciados en Italia. Aunque la cuna de esta zona de producción es la ciudad de Asti, ésta abarca además cerca de 50 municipios de las provincias de Cuneo, Asti y Alessandria, sumando 9.700 hectáreas de viñedo de la variedad moscato, también conocida como moscatel de grano menudo. El moscato d’Asti nacido de esas uvas es un blanco dulce, de bajo grado alcohólico, notable frescura y elegantes aromas florales y de fruta de hueso, que suele ser el acompañante perfecto para todo tipo de postres. Dentro de la misma D.O.C.G. también figura el Asti spumante, un espumoso dulce, que con el prosecco y el lambrusco, es el vino elaborado en Italia más exportado. El Moscato d’Asti se caracteriza por su denominación de origen controlada garantizada, de ahí que su etiqueta lleve las siglas D.O.C.G., que es garante del rigor de los métodos de producción y de la alta calidad de la uva Moscato Bianco que se usa en su elaboración. Esta uva se ha venido cosechando en el Piemonte por cientos de años, donde los viñedos cubren un área de 9.700 hectáreas en los montes a lo largo del río Tanaro. Estos montes de formas alargadas o redondeadas han sido declarados por la UNESCO como Herencia para la Humanidad. En estos cerros hay 52 comunidades donde se elabora el Moscato d’Asti usando solo las mejores uvas. Estas comunidades están localizadas en las provincias de Asti, Alessandria, y Cuneo. Durante los primeros días de septiembre, la Moscato Bianco produce particulares aromas que anuncia el principio de la época de vendimia. Estas uvas son recogidas, en su mayoría, a mano.

El área fue demarcada en 1932 e incluye 52 municipios ubicados en los territorios de las provincias de Alessandria, Asti y Cuneo. El área total del viñedo de moscatel blanco es de aproximadamente 9700 hectáreas, y más de 4000 empresas están involucradas en la producción. El Docg MOSCATO d'ASTI es el Moscato más famoso de nuestro país y uno de los productos más característicos de la viticultura piamontesa. Al igual que ASTI Dolce Docg, es el portador de una historia completamente italiana, hecha de gestos impecables, respeto por la tradición y mejoras constantes. Conocer el MOSCATO d'ASTI en todas sus notas significa no dejarlo nunca más. Conviértalo en un compañero para los momentos más especiales pero no solo. Para los agricultores que trabajaban la tierra, por ejemplo, era el mejor vino para combinar con una merienda salada genuina. Dulce, pero no empalagoso, tiene un aroma inimitable, un sabor delicado e intenso, que recuerda a las glicinias y tilos, duraznos y albaricoques con toques de salvia, limón y azahar. Un verdadero vino tradicional que, con el tiempo, ha alcanzado niveles de calidad extraordinarios también gracias a la difusión de la tecnología moderna. En particular, el vinculado a la cadena de frío, que permitió mantener los aromas y sabores de las uvas en el vino y estabilizar el producto, permitiendo su conservación y transporte. Este vino tiene un componente aromático intenso en armonía con ese azúcar y un bajo contenido de alcohol que lo hace único. En un nivel de producción, difiere de Asti docg sobre todo para la fermentación, que se detiene cuando se alcanza el contenido de alcohol de aproximadamente 5% vol. Además, Moscato d'Asti, aunque no es un vino espumoso, mantiene una vivacidad que lo hace inconfundible. El MOSCATO d'ASTI Docg está sujeto a los mismos controles que los de Asti Spumante. Con el documento, el Consorcio también estableció el Consejo del MOSCATO d'ASTI Docg para proteger el producto de las imitaciones, aumentar su nivel de calidad y mejorar su imagen.

Origen.
Hay teorías que remontan el origen de los ancestros de la moscatel en el antiguo Egipto y en los comienzos de la antigua Persia (c. 3000-1000 a. C.), aunque algunos ampelógrafos, como Pierre Galet, creen que la familia de la variedad moscatel fue propagada durante el periodo de la antigüedad clásica (c. 800 a.C. a 600 a. C.) por griegos y romanos. Sin embargo, aunque que la producción doméstica de vino tiene una larga historia en el antiguo Egipto y en Persia y a que los escritores clásicos como Columella y Plinio el Viejo describieron como moscatel a variedades como la anathelicon moschaton y apianae, diciendo que eran muy dulces y atractivas para las abejas (en latín apis), no hay evidencias históricas sólidas de que esas antiguas uvas de vino fueran miembros de la familia moscatel.
Características.
La familia moscatel es muy numerosa, con más de 200 miembros distintos,sin embargo, a pesar de esta diversidad solo un puñado de variedades de uva moscatel son ampliamente utilizadas en la producción de vino. Entre ellas está la moscatel de grano menudo, la moscatel de Alejandría, la moscatel de Hamburgo y la muscat ottonel. Las cepas de variedad moscatel son poco vigorosas y de porte erguido, desborre medio y maduración más bien tardía, dando rendimientos bajos. Su maduración es variable, existiendo muchos racimos que retrasan esta maduración, especialmente si la producción es elevada, maduran en función de la ubicación y altimetría de la parcela donde estén plantadas. Los racimos son grandes, poco compactos y heterogéneo, tanto en tamaño de baya como en el color del hollejo. Las uvas son grandes de forma circular, pero con tendencia a sección longitudinal elíptica, con una pulpa blanda, muy jugosa, con sabor característico amoscatelado. Su hollejo es grueso y consistente. Si hay algo que caracteriza esta variedad, esto es, sin duda, su elevado grado de azúcar, al tiempo que su fuerte aroma frutal. Las cepas de moscatel requieren de temperaturas elevadas tras el enverado para poder alcanzar una maduración adecuada, resisten bien a la sequía y se adaptan perfectamente a distintos tipos de suelos. Las temperaturas bajas producen que su madera no agoste bien, adaptándose bien a podas cortas en vaso. Si las podas son largas puede provocar un exceso de producción lo que daría como consecuencia una reducción en la calidad perdiendo parte de su tipicidad y aromas. Es muy sensible al oídio y al mildiu, también al frío y sensible a la polilla del racimo, a los insectos y al frío.
Zonas de cultivo.
Es una cepa típicamente mediterránea, que precisa sol y la influencia del mar por lo que se cultiva sobre todo en países que cumplan con esa característica. Existen viñedos de uva moscatel en Austria, Chipre, España, Grecia, Italia, Malta y Portugal. En España su cultivo por excelencia es en Valencia, Alicante, Canarias y Málaga.
Vinos.
Los vinos de moscatel tienen una potente aromaticidad, dando lugar a buenos caldos en suelos calizos y excelentes en silícicos. Usada como uva de mesa por su sabor amoscatelado, pulpa firme y hollejo de espesor medio. Además de utilizarse como uva de mesa produce elegantes mistelas y buenos blancos secos, dulces y espumosos, todos ellos con aromas potentes, elegantes y florales. También se adicionan en coupages para aromatizar el conjunto. En Málaga se utiliza para elaborar vinos aromáticos.

Me encanta, básicamente por tres razones. La primera: porque tiene una excelente relación calidad / precio. La segunda: para conocer un buen blanco, tiene muy buenos aromas y sabores. La tercera: porque se produce en un lugar digno de conoce. Así que tengo, una gama amplia de buenas razones.
