La AOC y las especificaciones.

Una denominación de origen controlada (AOC) es la combinación de un entorno físico y biológico, una comunidad humana tradicional y un terruño que da todo su carácter al producto. Identifica y protege un producto cuyas etapas de desarrollo siguen prácticas y conocimientos que se controlan dentro de un área geográfica definida. Las reglas para hacer coñac se enumeran y enmarcan en las especificaciones, garantizando características que hacen que el producto sea original y único. El cumplimiento de las especificaciones está garantizado por Cognac Interprofession (BNIC), reconocida como una Organización de Defensa y Gestión (ODG). Las especificaciones para la denominación "Cognac" o "Eau-de-vie de Cognac" o "Eau-de-vie des Charentes", desarrolladas por ODG Cognac, están aprobadas por el decreto n° 2015-10 de 7 Enero 2015. Estas especificaciones están vigentes. La secuencia es así, en primer término, las especificaciones establecen el vínculo con el origen, el terruño, los métodos de producción, para posteriormente definir y caracterizar el producto. El envejecimiento del Cognac.

La edad de un eau-de-vie corresponde a la edad del componente más joven que entra en su mezcla. El Cognac no se puede comercializar sin haber realizado un envejecimiento mínimo de 2 años, sin interrupción, exclusivamente en un contenedor de madera de roble. Los términos de envejecimiento más utilizados son: VS, término que se usa para coñacs con al menos 2 años de envejecimiento. El término VSOP, tiene que tener al menos 4 años de envejecimiento; otros términos que se usan son: "Reserva", "Viejo", "Raro", "Real" y "Muy superior antiguo pálido". Y el término XO, tiene que tener al menos 10 años de envejecimiento; Otros términos "Hors d'Age", "Extra", "Ancestral", "Ancêtre", "Or", "Gold", "Impérial", "Extra Old". El término XXO ó también llamado Extra Extra Old, son específicos para brandies que tienen un envejecimiento de 14 años o más. El coñac es tradicionalmente el fruto de la mezcla de espíritus de diferentes edades y añadas, pero no es obligatorio. Cognac mantiene la edad que tenía cuando se embotella toda su vida, porque, a diferencia del vino, el alcohol ya no evoluciona bajo el vidrio. El envejecimiento de los espíritus de Cognac se lleva a cabo sin interrupción exclusivamente en un contenedor de madera de roble.

Áreas de producción.

Usted entiende, no se llama coñac lo que quiere: solo los aguardientes de vinos de la Región Delimitada pueden reclamar la denominación de coñac (o brandy de coñac ). Desde 1909, esta región demarcada cubre más de un millón de hectáreas (¡casi la superficie del Líbano de todos modos!) Y se extiende sobre Charente Marítimo, una gran parte de Charente y sobre un puñado de municipios en Dordoña y Deux-Sèvres. El viñedo Cognac , que cubre casi 75,000 hectáreas de esta área, es el viñedo más grande de Europa con variedades de uva blanca. El carácter y la personalidad del eaux-de-vie de este inmenso viñedo están estrechamente vinculados a las características del suelo: el área de producción de coñac se ha dividido en 6 añadas. El viñedo de coñac tiene alrededor de 4.500 viñedos que producen vino blanco para la producción de coñac. Se planta principalmente con Ugni Blanc, marginalmente de Folle Blanche y Colombard, y se divide en 6 añadas concéntricas, cada una de las cuales es la expresión de un suelo, una tierra, un paisaje. La Grande Champagne y Petite Champagne,nada que ver con el famoso vino espumoso, pero con el América Campania designación de Great Plains, son el "corazón" de la viña. Aquí es donde nacen los aguardientes muy finos, con un ramo predominantemente floral y que requieren un envejecimiento prolongado. Los Borderies , redondos y dulces, traen un perfume de violeta e iris. Las aletas Bois con un ramo que evoca uvas prensadas promueven un envejecimiento más rápido de los espíritus. Los Good Woods, dispersos en medio de otras culturas y bosques, traen aromas frutales.Los bosques de terruño que florecen en suelos arenosos junto al océano y en las islas ofrecen un sabor característico de terruño.

La fabricación de un Cognac.

Entre el cultivo de la vid y el nacimiento de un coñac, no se trata de empujar la naturaleza o apresurarse: aquí, el paso del tiempo es un aliado precioso. ¡Pueden pasar varios años, incluso varias décadas, entre la cosecha y la degustación de un coñac!. Inmediatamente después de la cosecha, que algunos viticultores siguen realizando a mano, generalmente a principios de octubre, se prensan las uvas y se fermenta el jugo. Así, los vinos blancos obtenidos tienen un grado alcohólico muy bajo, que permite una buena concentración de aromas y una alta acidez favoreciendo la conservación natural del vino. Luego, el coñac se obtiene, y esta es su marca registrada, por la doble destilación de los vinos en alambiques de cobre calentados por llama directa. Obeniendo una proporción aproximadad de 7 litros de vino para obtener 1 litro de brandy. Durante los meses de invierno, las destilerías de Charente trabajan día y noche. Es decir, el ciclo de destilación dura aproximadamente 24 horas y requiere atención constante de la caldera. Después de este proceso, el envejecimiento es el paso esencial para que un brandy se convierta en Cognac. Durante esta larga etapa en barricas de roble, el envejecimiento puede durar varias décadas, bien protegido en la oscuridad de una bodega, el brandy evoluciona, se transforma, se redondea en aromas y caracteres enriquecedores de la madera: límpidos en la barrica, tomará durante años reflejos que van desde el amarillo dorado hasta el marrón fuego. Para finalizar, El coñac es el resultado de mezclar espíritus de diferentes añadas y edades. Algunos Cognacs están hechos de la mezcla de más de cien brandies diferentes. Esta etapa requiere una nariz de gran sutileza, una memoria olfativa excepcional pero, sobre todo, una experiencia y una intuición que se adquieren con los años. La asamblea está a cargo del maestro de la bodega que, como un perfumista, seleccionará y se casará con los espíritus, equilibrará las alianzas, armonizará los personajes, expresará las sutilezas para crear un Cognac único.
