La denominación Gavi DOCG produce vinos blancos secos en las colinas que rodean la ciudad de Gavi, en Piemonte. El nombre deriva de Ga Va que significa "tierra de agujeros" en el dialecto local de Liguria, el centro de su zona de producción, y Cortese, la variedad local de uva de la que está hecho exclusivamente, y cuya existencia se informa desde el siglo XVII. Las regulaciones DOCG restringen la producción de Cortese di Gavi a la zona formada por las siguientes poblaciones: Bosio, Capriata d'Orba, Carrosio, Francavilla Bisio, Gavi, Novi Ligure, Parodi Ligure, Pasturana, San , Serravalle , Tassarolo.
Características.
Gavi D.O.C.G se produce tradicionalmente a partir de uvas 100% Cortese, cultivadas dentro de un área geográfica precisa, principalmente montañosa, del cinturón sur de la provincia de Alessandria. Hoy está más extendido en la provincia de Alessandria, especialmente en las colinas alrededor de Novi Ligure y Gavi, en parte en el Oltrepò Pavese y, en menor grado, alrededor de Verona. Las cepas cortese tienen una hoja de tamaño mediano, pentagonal, de cinco lóbulos, a veces de siete lóbulos, de un color verde oscuro con venas más claras. El racimo es mediano-grande, en forma de pirámide cónica, alado y suelto. Las bayas son medianas y grandes, elípticas con piel fina y cerosa, y de color amarillo dorado. Cuando se cosecha temprano, produce vino de buena acidez, poco estructurado ideal para elaborar jóvenes. Sin embargo, los racimos mejores y más maduros pueden producir un vino más complejo y elegante. El vino es amarillo pajizo, con matices verdes, aromas afrutados, con tintes de albaricoque y cítricos, flores blancas y hierbas. Su boca da frescura, tiene cuerpo, es suave y estructurado, maridando con productos del mar, como mariscos y pescados, por lo que a los lugareños les gusta servirlo con las capturas de la zona.
El clima.
El microclima de la zona de producción está caracterizado por abundantes precipitaciones de octubre a abril, 619 mm., con unos veranos calurosos y secos en los que la precipitación mínima en julio es de unos 38 mm. Templado por la influencia de los vientos del mar; la temperatura templada y la excelente insolación del mes de septiembre permite que las uvas maduren por completo, contribuyendo significativamente a las características organolépticas particulares del vino "Gavi docg". La diferencia de temperaturas entre la noche y el día caracteriza la última fase de la maduración de las uvas y también favorece la exaltación de los aromas típicos del Gavi docg.
Los vinos y sus uvas.
La denominación de origen controlado y garantizado " Gavi " o " Cortese di Gavi " está reservada para vinos blancos que cumplan las condiciones y requisitos establecidos en esta especificación de producción, para los siguientes tipos: Tranquilo, Espumoso, Espumoso, Reserva, Método clásico Reserva de vino espumoso. El vino Gavi Tranquillo, es un Vino Blanco, seco, con un 100% variedad de uva Cortese y un grado alcohólico del 10.50% Vol. Presenta un color amarillo pajizo más o menos intenso, un olor característico, delicado, con un sabor seco, agradable, con un sabor fresco y armonioso. El vino Gavi espumoso es un vino blanco espumoso, seco, 100% variedad de uva Cortese, con un grado alcohólico del 10.50%. Este vino blanco espumoso tiene una espuma fina y evanescente y un color amarillo pajizo más o menos intenso, un olor fino, característico, delicado, con un sabor seco, agradable, con un sabor fresco y armonioso. El vino Gavi Spumante, es un brut blanco espumoso, 100% variedad de uva Cortese, con una graduación del 10.50% Vol.Este vino blanco espumoso tiene una espuma fina y persistente y un color amarillo pajizo más o menos intenso, un aroma característico, fino y delicado con un sabor seco, agradable y armonioso. El Gavi Riserva, es un vino blanco Añejo, seco, 100% variedad de uva Cortese, con un grado alcohólico del 11% Vol. Este vino blanco envejecido presenta un color amarillo pajizo más o menos intenso, olor fino, característico, delicado, con un sabor seco, agradable y armonioso. El Gavi Riserva Método clásico es un vino brut espumoso envejecido, hecho con el 100% variedad de uva Cortese y un grado alcohólico del 11% Vol. Tiene una una espuma fina y persistente y un color amarillo pajizo más o menos intenso, un aroma característico y delicado con un sabor seco, agradable y armonioso.
Vinificación.
En las fases de vinificación, solo prácticas enológicas justas y constantes en el área son adecuadas para dar a los vinos sus características de calidad peculiares. Las prácticas de vinificación del vino Gavi DOCG incluyen, entre otras cosas: El rendimiento máximo de uvas en vino no debe superar el 70%. Si se superan estos parámetros dentro del límite del 5%, el excedente no tiene derecho al DOCG. Más allá de estos límites, caduca el derecho a DOCG para todo el producto. En cumplimiento del% de rendimiento de uva/vino y en presencia de ciertos requisitos de cultivo, se puede mencionar el término "Vigna". Los tipos "Riserva" de vino Gavi DOCG deben pasar por un período de envejecimiento, de la siguiente manera: Reserva : 12 meses de los cuales 6 de crianza en botella; Riserva Classico Método Vino Espumoso: 24 meses, 18 de ellos en botella.
Historia.
La Cortese di Gavi es una variedad de uva nativa de asentamiento antiguo probado en el área, del cual deriva un entorno y una adaptación centenaria al suelo y al clima. La vocación vitivinícola de Gaviese tiene orígenes antiguos, como lo demuestra el primer documento conservado en los Archivos Estatales de Génova, con fecha del 3 de junio de 972. Se habla del alquiler por parte del obispo de Génova a dos ciudadanos de viñedos en la localidad de Meirana. La primera referencia a las plantas de "viñas de todo Cortese" se encuentra en la correspondencia entre el castillo de Montaldeo y el marqués Doria, en 1659. En 1798, el conde Nuvolone, subdirector de la Sociedad Agrícola de Turín, redacta el borrador de la primera ampelografía de las viñas. cultivado en el territorio del Piamonte y cita a Cortese en la forma dialectal Corteis afirmando que: "tiene racimos bastante largos, bayas bastante grandes, cuando está maduro se vuelve amarillo y es bueno para comer, hace buen vino, es abundante y se conserva".
