Nardini selecciona principalmente orujo de uvas de bayas rojas típicas de las estribaciones de Veneto y Friulian, como Cabernet, Sauvignon y Merlot, caracterizadas por un perfil aromático intenso y complejo, creando una mezcla única junto con uvas de bayas blancas como Pinot Blanc y Friulano. El control de calidad de la grappa comienza con la selección del orujo que se realiza siguiendo los ritmos naturales de la cosecha. La conservación perfecta del orujo es el primer gran secreto del destilador. Dentro de las 24 horas posteriores a la vinificación, el orujo se entrega desde las bodegas y se lleva a la destilería, donde se almacena en ausencia de aire, sin agregar levaduras, para garantizar la alta calidad del destilado en el producto terminado.
Destilación.
La tradición a menudo se percibe como algo lejano, un recuerdo que se confunde con el mito. Para la familia Nardini, por otro lado, significa la capacidad de transmitir alta calidad y fusionarla con técnicas de fabricación modernas. Incluso hoy en día, el método de vapor, el flujo discontinuo en calderas de vacío en Bassano del Grappa y el flujo continuo en columnas en Monastier, es la base para la destilación del orujo para extraer el corazón de la grappa. Las destilerías Bassano y Monastier trabajan en concierto, creando una armonía de sabores y matices. La mezcla que se forma a partir de la unión de las dos producciones y las diferentes añadas es la base de toda la gama de grappas Nardini. Con respecto a la sostenibilidad ambiental, el orujo agotado se separa y se convierte en un nuevo recurso para ser utilizado en otros sectores, como la cosmética.
Destilería Nardini 1779.
Grappa Nardini se produce en Bassano del Grappa desde 1779, cuando Bortolo Nardini llegó por primera vez desde la región de Trentino. Originalmente en su camino hacia Venecia, Nardini se detuvo en esta pequeña y bulliciosa ciudad, estratégicamente situada a los pies de los Prealps, un área rica en viñedos en las orillas del río Brenta y una importante vía de comercio. Aquí, en el lado este del famoso puente de madera cubierto de Palladio, Bortolo Nardini abrió la que ahora es la destilería de grappa más antigua de Italia. En la sede de Nardini, en el puente, todavía se puede encontrar la histórica Grapperia donde la séptima generación de la familia continúa manejando el negocio con la misma pasión que su fundador, combinando de manera experta tradición e innovación.
Destilerías.
Hoy en día, Grappa Nardini se produce en dos destilerías: una en Bassano del Grappa y otra en Monastier, ambas en la región del Véneto, en el norte de Italia. La grapa, obtenida de la destilación del orujo de uva, es el destilado tradicional y único italiano. El orujo de uva se obtiene exclusivamente en las estribaciones del noreste de Veneto y Friuli, y es seleccionado por los mismos miembros de la familia Nardini. El orujo de uva desechado en la producción del vino, se almacena en la destilería dentro de las 24 horas posteriores al prensado, siguiendo un proceso de fermentación natural, en un estado hermético y sin la ayuda de levadura, lo que disminuiría la calidad del destilado final. La destilación se realiza en otoño, después de la temporada de cosecha, utilizando el método tradicional de vapor sellado al vacío. La Grappa Nardini es entonces cuidadosamente seleccionada basándose en dos siglos de experiencia y con la ayuda de los más modernos sistemas de control de calidad.
El proceso.
En Bassano, la destilación se realiza aún en una olla tradicional. El vapor de agua es forzado a través del orujo de uva fermentado naturalmente, en un sistema sellado al vacío, que permite una menor temperatura de destilación y evita el sobrecalentamiento del orujo que dañaría irreparablemente el sabor y el perfil aromático del producto final. En Monastier se utiliza la técnica continua de destilación al vapor, dando como resultado un sabor limpio y equilibrado del destilado final. En ambas plantas, el producto destilado se envía a la columna de destilación donde se encuentra la concentración y selección de la parte noble, o “corazón” de la grappa.
Este es un proceso manual llevado a cabo por el maestro destilador usando métodos tradicionales. En un rectificador especial, el corazón de la grappa se vuelve a destilar para perfeccionar la calidad (doble rectificación). Las palabras “doppia rettificata” en la etiqueta original son la prueba de que Nardini siempre ha adoptado este proceso para garantizar la más alta calidad de sus destilados. El producto obtenido de las dos destilerías se mezcla luego por expertos para garantizar un sabor y perfil aromático consistentes, luego se filtra en frío en la fase final de producción; este complejo método, implementado por Nardini, garantiza un producto uniforme de la más alta calidad.
Como empresa con conciencia ambiental, Nardini ha adoptado un sistema para la reutilización del orujo destilado y su transformación en nuevos recursos. Después de la destilación, el orujo se recupera y se seca para separar sus componentes, que luego se utilizan en la industria de cosméticos, alimentos y piensos.

Después de más de dos siglos, la grappa sin crianza Nardini, con su franco, intenso y limpio sabor, sigue siendo líder indiscutible del mercado en el sector de grappa premium.
