De un amarillo brillante, se trata de un licor cítrico dulce y fresco con notas florales en nariz, de cuerpo medio y un agradable amargor final. La bergamota es un cítrico muy popular en Italia y, de hecho, cuenta con Denominación de Origen propia. La Antica Distilleria Quaglia nació en 1906 en Piamonte e incluye este licor entre sus espirituosos junto con otros aguardientes y vermuts. Os proponemos una particular versión del Corpse Reviver, un cóctel revividor que ya se incluía en el libro The Savoy Cocktail Book, escrito por Harry Craddock, uno de los barmans más famosos del Savoy Hotel de Londres entre 1920 a 1930. Para elaborarlo, se necesitan 25 ml de licor de bergamota, 25 ml de ginebra, 25 ml de aperitivo blanco, 25 ml de zumo de limón y un golpe de absenta. La destilería de Castelnuovo Don Bosco nació en los años inmediatamente posteriores a la unificación de Italia, en las colinas bañadas por el sol, entre las colinas de Monferrato y Turín. Siempre ha sido considerada una de las grandes tierras tradicionales del vino. Fue comprado en 1906 por Giuseppe Quaglia, que se acomete ciertas reformas entre ellas la creación de un pozo para el abastecimiento de agua y también la creación de una caldera para producir vapor. En 1930 el negocio de la empresa es continuada por su hijo Carlo, que bajo la sabia dirección de su padre, aprende los secretos de la destilación, refina y moderniza la zona de embotellado, aumenta en gran medida la capacidad de producción de hasta emplear a 35 trabajadores.
Trayectoria.
En 1967 se unió a la tercera generación de destiladores de la empresa con su sobrino José, que sigue la
tradición familiar. Siempre con los fotogramas originales continúa la producción de aguardiente clásico que funciona como una sola aguardientes de uva, particularmente refinados y preciosos. Hoy en día, la dirección es la nieta de Charles Knight, dedicado con entusiasmo a la actividad aportando nuevas ideas y energía; el enriquecimiento de la gama de productos actuales, sigue la regulación piamontesa artesanal por excelencia, incluyendo el uso de mejores materias primas de origen natural: Son productos como Ratafià de cerezas Pecetto, la artemisa, Barolo Chinato y crema de gianduja. Con respeto a la tradición y la autenticidad, continúa estando presente en la actividad de esta empresa, que a través del trabajo de cuatro generaciones, mediante una actualización constante y el progreso continuo, ha hecho satisfacer plenamente las demandas de los clientes, ofreciendo un producto que plasma los mejores orígenes y materias primas.
