Cooperativa Agrícola San Isidro de Loja, ha cumplido más de 50 años de historia, desde que el 3 de Octubre del año 1958 se registrasen oficialmente sus estatutos. Producimos principalmente Aceite de Oliva Virgen Extra, Espárrago Verde y Cereales. Nuestro Aceite de Oliva Virgen Extra es de excelente calidad, con unas características muy definidas por nuestra zona que lo hacen único, siendo las variedades predominantes la Hojiblanca en más de un 80% y la Picual en casi un 20%, procedentes de las más de 12.500 hectáreas de olivar que nuestros cosecheros cultivan. Nuestro Espárrago Verde procede de la magnífica Vega del Genil, y de las tierras de secano que rodean la Sierras de Loja y Monte Hacho se obtienen cereales tradicionales como Trigo duro, Blando y Cebada.
Unión de tradición y modernidad.
Cooperativa San Isidro de Loja nace en el año 1958 con el objetivo de unir los esfuerzos de sus socios para comercializar los productos que estos cosechan, de forma que las explotaciones agrícolas de la comarca, sean el motor económico de muchas familias que viven de la agricultura, facilitando así que nuestro medio rural sea medio de presente y futuro sostenible para las nuevas generaciones.
Producimos un aceite de oliva virgen de excelente calidad, el cual tiene unas características muy definidas por nuestra zona que lo hacen inigualable, la singularidad y riqueza de nuestro suelo y el clima de esta comarca, típicamente mediterráneo pero fuertemente influenciado por la Sierra de Loja, es el espacio propicio para las variedades de olivos aquí cultivados, siendo las variedades predominantes la Hojiblanca en más de un 80% y en menor medida la Picual. La Cooperativa tiene más de 1.300 socios con una producción media anual de más de 50 millones de kg de aceituna que producen sobre 13 millones de kg de Aceite de Oliva, y una producción media anual de espárrago verde de más de 3.5 millones de kgs. Tanto el Aceite de Oliva Virgen como el Espárrago Verde producidos responden a la experiencia agrícola heredada de padres a hijos, acreditada desde hace siglos en la región, pero además, nuestros productos están controlados y certificados desde su producción hasta su comercialización y venta al cliente final, aplicando modernas técnicas de producción, trazabilidad y control de calidad. Tenemos implantadas las normas de Producción Integrada «Calidad Certificada» de la Junta de Andalucía, Calidad Rural y Global-Gap, para lo cual disponemos de departamento técnico de asesoramiento y control de las explotaciones y fabricación. Además la labor de nuestro equipo humano, con el apoyo de un equipamiento técnico de última generación, nos permiten obtener productos de clara personalidad diferenciadora, elaborados a partir de métodos respetuosos con la Naturaleza, que garantizan la plena riqueza de sabor y olor en un aceite de oliva de excepcional calidad y un espárrago verde fresco inmejorable.
Normas de producción.
Tenemos implantadas las normas de Producción Integrada «Calidad Certificada» de la Junta de Andalucía, Calidad Rural y Global Gap, para lo cual disponemos de departamento técnico de asesoramiento y control de las explotaciones y fabricación. Además la labor de nuestro equipo humano, con el apoyo de un equipamiento técnico de última generación, nos permiten obtener productos de clara personalidad diferenciadora, elaborados a partir de métodos respetuosos con la Naturaleza, que garantizan la plena riqueza de sabor y olor en un aceite de oliva de excepcional calidad y un espárrago verde fresco inmejorable. Nuestra capacidad de proceso nos permite eliminar por completo el almacenamiento del fruto por largos períodos, molturándose diariamente toda la producción posible. Toda la maquinaria está construida en acero inoxidable y el proceso productivo controla la calidad del producto obtenido, con un sistema de trazabilidad novedoso que se ha desarrollado de manera que controla el producto desde la misma finca, manteniendo los cuadernos de campo de cada parcela, registrando todas las características de la explotación, el sistema de laboreo, los fertilizantes y los tratamientos fitosanitarios utilizados por el cosechero, todo ello supervisado por el departamento técnico bajo la norma de Producción Integrada. De este modo se consigue armonizar el sistema de producción de los cosecheros para que hagan un correcto laboreo y obtengan una excelente calidad del producto. Así pues, la aceituna recién recolectada separada por calidades y controlada analíticamente es procesada en nuestra novedosa almazara, molturándose a bajas temperaturas para preservar las cualidades naturales del aceite de oliva. Todo ello unido a una correcta informatización, organización e higiene apoyadas por un personal con una amplia experiencia en el sector, hacen que tengamos unas características como almazara que nos hacen hoy por hoy modelo a seguir como productores. El Aceite de Oliva una vez extraído pasa un primer proceso interno de selección mediante cata por nuestro propio panel test, pasando posteriormente a ser analizado por laboratorio oficial en características fisco-químicas y organolépticas. Se envasa únicamente los aceites catalogados como Virgen Extra, destinados al mercado nacional e internacional.
