El área geográfica delimitada por el DOC Maremma Toscana cae en la parte sur de la región de Toscana y, en particular, en todo el territorio administrativo de la provincia de Grosseto, una de las más grandes de Italia, delimitada al oeste, a lo largo de la franja costera, junto al mar. Tirreno, al norte desde las fronteras con la provincia de Livorno, al sur desde la provincia de Lazio de Viterbo y al este desde las fronteras con las provincias de Pisa y Siena. Las viñas adecuadas para la producción de los vinos DOC Maremma Toscana son las que se cultivan tradicionalmente en la zona, Sangiovese, Ciliegiolo, Canaiolo negro, Alicante, Trebbiano toscano, Ansonica, Malvasía larga y Vermentino blancas, flanqueadas por variedades alóctonas como Merlot, Cabernet Sauvignon, Syrah, Chardonnay, Sauvignon y Viognier. Tanto los vinos blancos como los tintos se producen según las técnicas tradicionales. Los rosados provienen principalmente de las variedades Sangiovese y Ciliegiolo, el novello de la variedad Sangiovese. El espumoso, tanto con el método Martinotti en autoclave, tanto con el método tradicional de segunda fermentación en la botella, dall'Ansonica y Vermentino. Las pasas se obtienen de uvas más o menos secas, utilizando la técnica de "vinsanto", principalmente con bayas blancas, Trebbiano toscano y Malvasía blanca, cuidadosamente seleccionados y secados en habitaciones adecuadas, para posteriormente proceder a su vinificación, conservándolos y envejeciéndolos, en barricas tradicionales durante un período adecuado. También se pueden obtener con una cosecha tardía: De ese modo se produce un exceso de maduración de las uvas en la planta, más o menos acentuada, (cosecha tardía, en los tipos de blancos, Ansonica, Chardonnay, Sauvignon, Trebbiano, Vermentino y Viognier).
Área de producción.
El área geográfica dedicada a la producción del vino DOC Maremma Toscana se extiende sobre las colinas Maremma de Grosseto, en un territorio adecuadamente ventilado, brillante y favorable para el desempeño de todas las funciones vegetativas-productivas de los viñedos. El área de producción de vino Maremma Toscana DOC se encuentra en la provincia de Grosseto e incluye todo el territorio de la provincia.
Vinificación.
En las fases de vinificación, solo las prácticas enológicas justas y constantes en la zona, son adecuadas para dar a los vinos sus características de calidad peculiares. Las prácticas de vinificación del vino Maremma Toscana DOC incluyen, entre otras cosas que el rendimiento máximo de las uvas en el vino Maremma Toscana DOC no debe ser mayor del 70% para las variedades de uva blanca, roja y; del 50% para vinos de cosecha tardía; del 40% para vinos Passito y del 35% para Vin Santo. Si se superan estos parámetros y dentro del límite del 75%,(38% para el tipo "Vin Santo", 45% para los tipos "Passito", 55% para los tipos "Cosecha tardía"), el excedente no puede tener derecho al DOC. Más allá de estos porcentajes ó limites, caduca el derecho a DOC para todo el producto. Otro factor es que el vino DOC Maremma Toscana Rosato debe obtenerse vinificando las uvas de bayas rojas. Otra cuestión a cumplir, es que el vino DOC Maremma Toscana Novello debe obtenerse vinificando las uvas de acuerdo con la técnica de maceración carbónica durante al menos el 40% de la producción. Otra cuestión a cumplir es que el vino DOC Maremma Toscana Passito debe obtenerse con secado natural de las uvas al aire o en habitaciones adecuadas, con posibilidad de deshidratación parcial con aire ventilado, hasta alcanzar una concentración alcohólica total en volumen no inferior al 15,50%. También el vino DOC Maremma Toscana Vin Santo debe obtenerse con secado natural de las uvas al aire o en habitaciones adecuadas, con posibilidad de deshidratación parcial con aire ventilado, hasta alcanzar un contenido de azúcar no inferior al 26%. Otra norma de obligado cumplimiento, es que el vino DOC Maremma Toscana Spumante pertenece a la categoría " Vino espumoso de calidad " y puede ser espumoso tanto con el método Martinotti como con el método clásico, o con referencia, respectivamente, en un autoclave o en una botella. También, la designación de los vinos Maremma Toscana DOC, el término " Vigna " puede mencionarse siempre que sea seguido por el topónimo relativo y que se respeten ciertas prácticas de vinificación.
En las etiquetas de cada tipo de vino DOC Maremma Toscana, es obligatorio informar el año de producción de las uvas, con la excepción del tipo de vino espumoso.
