Origen.

La nero d'Avola es una variedad de uva tinta de vitis vinífera que, con toda probabilidad, fue llevada a Sicilia por los Fenicios, siendo allí la variedad de uva más importante y de mayor calidad, además de una de las variedades con mejor calidad de Italia. Los análisis ampelográficos de la variedad indican que, genéticamente, procede de una uva griega hibridada con alguna casta salvaje autóctona siciliana. Su nombre significa Negra de Avola que es una pequeña localidad situada en el sur de Sicilia. También es conocida como Calabrese y, según parece, este nombre no procede de Calabria, sino que es una derivación del nombre de Cala de Vrisi (Avola). La traducción literal del nombre será uva negra dÁvola. Es la variedad estelar siciliana, hasta convertirse en uno de los símbolos de su enología, porque abarca cada rincón de la isla.

Características.

La variedad nero d’Avola es una uva de difícil maduración, sobre todo en el este de la isla, que necesita mucho calor y terrenos arenosos para expresar toda su paleta olfativa, con el riesgo siempre de que puedan destacar de forma agresiva las notas animales y terciarias y potenciarse la rusticidad que lleva consigo. En los terrenos más calcáreos y zonas menos calurosas, en algunas ocasiones, la parte placentera de la variedad puede resultar dañada por sensaciones más animales y terciarias y menos refinadas, más opulentas. Esa es una de las causas por las cuales se ensambla, para refinar el vino y hacerlo más suave sin que pierda su enorme personalidad, con castas francesas como cabernet sauvignon, merlot y syrah (sobre todo esta última) que suponen un riesgo porque en estas latitudes se acentúan de forma notable las notas vegetales, de sobremaduración y que terminan por resaltar los aspectos más agresivos, verdes y pastosos. Las vides se adaptan muy bien a climas cálidos y relativamente secos, justo las condiciones de Sicilia. Su maduración es complicada, necesitando mucho calor y terrenos arenosos para desarrollar todo su potencial. La planta es bastante resistente a las enfermedades, los racimos son medios poco compactos, de grano medio y hollejo grueso.

Zonas de cultivo.

La nero d'Avola es la variedad tinta más representativa del viñedo siciliano, y la más conocida en el mundo, con más de 18.000 hectáreas plantadas, siendo la segunda más cultivada de la isla, sólo detrás de la catarratto blanca. Desde Sicilia esta uva se ha extendido también a California, Australia, Malta, Turquía y Sudáfrica.

Vinos.

Sus vinos son rústicos, brillantes, con un vivo color rojo cereza o rubí con toques púrpura en su juventud, que se van volviendo granate en su envejecimiento. Son bastante tánicos, con un grado alcohólico elevado, nariz afrutada con intensos aromas a mora. Su boca compleja, seca, algo ácida, con notas de violeta y especias (regaliz y clavos de olor), ciruela pasa, cereza, mora, grosella negra, frambuesa y chocolate, cuero y tabaco. Es redondo, cálido y con buen cuerpo. Al mezclarse con uvas de variedad cabernet y merlot se suaviza y se hace más amable. Tradicionalmente se utilizaba para fortaleces otros caldos de uvas menos potentes. Por su alto contenido en azúcares y taninos, y su baja acidez, se consideraba una uva excesiva para utilizarse en monovarietales. Actualmente, con las nuevas técnicas de cultivos en las que se consigue una menor producción y maceraciones en frio, se consigue aumentar la acidez y disminuir el contenido de azucares, taninos y alcohol, obteniéndose unos muy buenos monovarietales.
