La empresa.
La nuestra es una empresa familiar, con una gran tradición vitivinícola madurada en las colinas de Pressano y que tiene sus raíces en la historia.Con los años hemos llegado a la conversión biológica de todos nuestros viñedos, y más recientemente al enfoque de la biodinámica, en un camino de crecimiento continuo basado en el conocimiento profundo de nuestro territorio y en la atención diaria de nuestros viñedos. Actualmente los viñedos cubren un área de aproximadamente 20 hectáreas, divididas entre el área de Pressano y el valle de Sarca, y se caracterizan por profundas diferencias en el clima y el suelo. La producción total de alrededor de 125,000 botellas entre los diversos vinos está acompañada por la producción muy limitada de Aceite de Oliva Virgen Extra y el cultivo, en el fondo del valle, de manzanas parcialmente transformadas en jugo.
El terreno.
Nuestros viñedos están ubicados en dos áreas profundamente diferentes de Trentino, que también reflejan su singularidad compleja en vinos.
- Pressano.
A una altura de unos 300 metros sobre el nivel del mar, el clima continental ofrece marcadas excursiones de temperatura entre el día y la noche. Los suelos se derivan de la desintegración de una roca cuya génesis se remonta a cientos de millones de años atrás: estos suelos son profundos y fértiles, y se caracterizan por una notable dotación mineral. Aquí cultivamos principalmente variedades blancas como Nosiola, Traminer Aromatico, Pinot Bianco y Pinot Grigio, Chardonnay, Sauvignon y Lagrein, la única uva de frutos rojos. Las características comunes a los vinos que provienen de este territorio son la estructura, marcada y definida, el sabor y la longitud evidentes, y la gran longevidad.
- Pivier y Prabi.
Ora del Garda, el viento que viene del lago, se eleva en estos viñedos, mitigando las temperaturas y el rango de temperatura y contribuyendo así a crear un ambiente ideal para el olivo y otras especies mediterráneas. En el viñedo de Prabi, con suelos aluviales sueltos, cultivamos Manzoni Bianco y Riesling; mientras que la arcilla, presente en abundancia en el suelo del Pivier, es un ingrediente fundamental para el cultivo de rojos como Merlot y Cabernet Franc. En los vinos contribuye a la formación de taninos más espesos, a la coloración con tonos intensos y oscuros, manteniendo la estabilidad de la acidez y la fruta siempre intacta y fragante.

La IGT.
Vigneti delle Dolomiti IGT es un título IGT, Indicazione Geografica Tipica, de la región de Trentino-Alto Adige en el extremo norte de la Italia alpina. Su área geográfica también se extiende al Véneto, concretamente a la provincia de Belluno, pero la gran mayoría de los vinos Vigneti delle Dolomiti son de Trentino-Alto Adige. La forma en alemán del título es Weinberg Dolomiten. Un vino Vigneti delle Dolomiti se puede hacer en cualquiera de varios estilos: rojo, blanco o rosado, mezclado o varietal y aún, espumoso o dulce. La variedad de variedades de uva utilizadas en estos vinos es bastante amplia, pero se centra principalmente en aquellas ya establecidas en el Trentino Alto Adige, en particular Pinot Grigio y Chardonnay para blancos y la variedad local Teroldego para tintos, junto con el omnipresente Merlot y Cabernet Sauvignon. Durante el período en que el cultivo de la vid y la historia del hombre se han acompañado y entrelazado, se han desarrollado lazos irrompibles, como es obvio y natural, que se transmiten y fortalecen en la cultura local. Enlaces que se encuentran en las prácticas agronómicas y enológicas tradicionales, pero también en áreas culturales más amplias como en tradiciones, cultura popular, arte, gastronomía, etc.. La evidencia más antigua del cultivo de vides en el área afectada por el IGT "Vigneti delle Dolomiti" se remonta a la antigua Edad del Bronce y en la edad del hierro al final, y están representadas por las semillas de uva encontradas en el asentamiento de Ledro y en los alrededores de Bolzano y Merano atribuibles a la cultura Fritzens-Sanzeno. Otra serie de hallazgos, nos lleva a la situla rhaeto-etrusca, siglo IV a.C., que se encuentra en Cembra, en la que está grabada una de las mayores inscripciones de la era etrusca, alabando el consumo simposial de vino. En cambio, las primeras reglas de cosecha se remontan al período medieva: En el siglo XII se emitieron los "Estatutos de Trento", normas proteccionistas de la producción local destinadas a obstaculizar la introducción de vinos producidos en las zonas vecinas. En las "Crónicas del Sagrado Concilio de Trento", escrito por el historiador Michelangelo Mariani en 1670, también hay una descripción precisa de la producción de vino y su importancia en la economía local. Un punto decisivo decisivo en viticultura y enología regional quedó impresionado en 1874 con el establecimiento del Instituto Agrícola de S. Michele all'Adige.
