Historia.
El hombre aparece en la isla de Sicilia en el Paleolítico superior (20,000 años a.C.) [2] Existe evidencia de que se ha demostrado que las uvas antiguas datan antes de que el hombre haya pisado la isla, sin embargo, fue solo durante la era neolítica cuando la población se dedicó a la agricultura y la viticultura. Los viñedos en ladera.
En las laderas del Etna los viñedos se dividen en tres zonas diferenciadas. La ladera sur donde la vid se encuentra entre los 600 y 1.000 metros de altura, siendo los viñedos más altos. Es la parte donde más cenizas volcánicas hay y la de terrenos más fértiles con una viticultura de media calidad. La ladera este, donde los viñedos se encuentran entre los 400 y los 900 metros y los suelos son ricos en esqueletos con una pendiente que alcanza el 40% y destaca la nerello mascalese, sobre todo en las partes más altas. La carricante blanca que madura unos 20 días antes que en las otras laderas y es donde encuentra el mejor lugar para dar alta calidad. La ladera norte con viñas plantadas entre los 400 y 800 metros, es la zona más adecuada para los vinos tintos de alta calidad. Aquí encontramos los viñedos más viejos de nerello mascalese junto a otras variedades de calidad locales, como la nerello cappuccio, garnacha o vesparola junto a las blancas carricante y minnella, plantados en suelos de ceniza, basalto o piedra pómez.
Las cepas.
En la C.O.C. Etna se cultivan más de cuarenta variedades de uva, entre las que, sin duda, destaca la Nero D´Avola, que es el emblema de la viticultura siciliana, de la que se obtienen vinos como el Etna Rosso y el Etna Bianco. Las uvas más características son Nero d’avola, Nerello mascalesse, Nerello capuccio, Catarrato, Inzolia, Grillo y Calabrese. El territorio siciliano cuenta con numerosas variedades autóctonas, algunas de las cuales se cultivan casi exclusivamente en la zona del Etna, extendiéndose a lo largo y ancho de las laderas del Etna pudiéndose encontrar viñedos incluso a 1300 metros de altura. La zona de producción de estos vinos está dominada por la inmensidad del Etna, cuya potencia es constantemente visible a través de los ríos de lava en los que generaciones de viticultores han trabajado sus viñas en terrazas de cultivo. Los vinos son tan salvajes como sus suelos o como las proyecciones de la lava. Algunas tierras cuyas cepas eran alimento de las cabras en un pasado reciente hoy son generadoras de la felicidad que produce el vino, con viñas viejas anteriores a la epidemia de filoxera y que están salpicadas por rocas volcánicas con su típico color negro, es una tierra diferente, son muchos terruños que nacen con cada erupción del volcán que renueva la tierra; por eso nadie sabe con certeza los años de los terrenos que pisa.
Los vinos del Etna.
No hay duda de que los suelos volcánicos y las altas elevaciones del Etna producen un vino emocionante. Nerello Mascalese es el protagonista, produciendo rojos pálidos con buena estructura, bayas perfumadas y sabores salvajes y juguetones. Las comparaciones con Nebbiolo son adecuadas: existe una tensión similar entre los ácidos altamente tensos y los taninos asertivos pero refinados. Etna es la única región de clima frío de Sicilia, llena de viñedos antiguos, sin injertar, lo que hace que los mejores vinos puedan ser tan regios, complejos y añejos como cualquier otro más al norte. La principal cepa autóctona del Etna e la nerello mascalese, que debe su nombre a la ciudad de Mascali, pueblo del Etna, en el que se encuentra desde hace al menos cuatro siglos, produciendo vinos de color rojo rubí, un aroma especiado y un sabor con aroma a regaliz. Los vinos de nerello cappuccio, que deben su nombre a la particular conformación de la planta, probablemente este tipo de uva se produjo en la llanura de Catania hace varios cientos de años y luego se extendio a Calabria, aunque en las últimas décadas ha corrido el riesgo de extinción. Este vino es llamado con diferentes nombres dialectales: nerello mantellato, niuru cappucciu, niureddu cappucciu, niureddu cappuccio, mantiddatu niuru, son algunos ejemplos. El vino que se obtiene de este tipo de uva tiene un color rojo rubí con matices púrpura, un aroma a fruta roja y un sabor seco, va bien con carnes rojas y quesos maduros. Carricante o “u carricanti” es también una antigua variedad de uva autóctona del Etna que fue la variedad blanca más extendida en la provincia de Catania hasta los años cincuenta y siempre se ha cultivado a los pies del volcan, en su parte oriental. Las uvas carricante producen un vino amarillo pajizo, con un aroma intenso y delicado y un sabor seco y aromatico, que va bien con los platos de pescado. La minnella, “minnedda” o “minnedda janca” es una cepa autóctona que se descubrió en los viñedos más antiguos del Etna, cuyo nombre deriva de la palabra “minna”, pecho en dialecto siciliano, debido a que la forma de la uva recuerda al pecho de una mujer. Se cultiva en las laderas del Etna en su versante oriental, y precisamente en la zona de Monte Serra, a una altitud de 500 metros sobre el nivel del mar, en el territorio del Municipio de Viagrande. La uva Minnella produce un vino blanco que acompaña bien los platos de pescado y los platos y tiene un color amarillo pajizo, un aroma afrutado y un sabor fresco. La uva Carricante blanca, y la Nerello Mascalese tinta despliegan toda su categoría en los suelos de lava y, aunque la superficie de la tierra se calienta, el calor no se transmite a las capas inferiores ni se refleja, así las vides hunden sus raíces en tierra siempre fresca, y así las uvas crecen frescas a la sombra de las hojas.
