El área de Monferrato se divide en 3 áreas de producción de vino, como son el Alto Monferrato, es el área al sureste, en la provincia de Alessandria, con relieves, torres y castillos bastante marcados, con las ciudades de Ovada y Acqui Terme. Es la tierra de Barbera del Monferrato y Cortese. La otra zona es Basso Monferrato (o Casalese) , se extiende hacia el noreste, con colinas bajas que descienden hasta el Po, con la ciudad de Casale en la frontera y los pueblos característicos de Cellamonte y Vignale Monferrato, que es donde se encuentra la Enoteca Regionale del Monferrato. Es la tierra de Barbera y Grignolino. La tercera zona Monferrato Astigiano, ocupa casi por completo la provincia de Asti, a derecha e izquierda del río Tanaro, con suaves colinas y muchos pueblos históricos, como Costigliole, Nizza, Canelli, Cortanze, Cocconato y Montiglio. Además de ser la zona de la gran Barbera d'Asti, también es la zona donde nació el vino espumoso italiano en el siglo pasado, y que hoy ofrece una gran variedad de vides y vinos. La zona geográfica adecuada para la producción del vino DOC Monferrato se extiende sobre el área montañosa ubicada principalmente dentro de las provincias de Alessandria y Asti, y se extiende hacia el sur desde la derecha hidrográfica del Po hasta el pie de los Apeninos de Liguria en el frontera con la provincia de Génova y la provincia de Savona. Vinificación y crianza del vino.
En las fases de vinificación, solo las prácticas enológicas justas y constantes en la zona, son adecuadas para dar a los vinos sus características de calidad peculiares. Historia.
Todo el Piamonte es una región dedicada a la viticultura, pero Monferrato es aún más sorprendente: los viñedos cubren casi por completo las cimas y laderas de las colinas, alternando con pequeños bosques. La razón de esta vocación particular radica en una excelente mezcla de clima y conformación geológica de los suelos, lo que ha permitido una amplia difusión de las vides, la mayoría de las cuales son autóctonas, y de una variedad de vinos igualmente consecuente. En Monferrato, la vid y el vino no solo son una de las principales fuentes de riqueza, sino también una expresión de cultura y tradición. Debemos esperar al siglo XIX para presenciar cambios significativos. Bajo el estado de Saboya, la nobleza y los clérigos perdieron gradualmente sus propiedades. El clima de paz, el igualitarismo de la Ilustración traído por Napoleón y el crecimiento de la población hicieron que los agricultores crecieran no solo la necesidad de nuevas tierras para cultivar, satisfechos con grandes reclamos y deforestaciones, sino también el sentido del derecho a la propiedad de la tierra, por lo que generaciones enteras lucharon. La viticultura se volvió aún más importante. En la segunda mitad del siglo XIX, la llegada del tren y la construcción de nuevas carreteras, junto con la falta de necesidades de defensa, condujo al movimiento progresivo de la población desde la cima hasta el fondo del valle, cerca de las estaciones y carreteras, con el nacimiento. de nuevas aldeas y la expansión a la baja de las existentes. A finales de siglo, comenzó el verdadero abandono de la colina, causado tanto por el aumento demográfico y la consecuente escasez de tierra cultivable, como por el grave flagelo de la filoxera que afectó gravemente a toda la viticultura italiana. Las pequeñas parcelas, con un proceso lento, se agrupan en otras más grandes y en los sistemas de viticultura ha habido una profunda innovación con el uso de postes de hormigón, alambres de hierro o acero, materiales sintéticos para lazos. La especialización vitivinícola ha favorecido la recomposición de la tierra en las zonas más favorecidas por el DOC: los viñedos Asti y Monferrato parecen tan originales por la relativa homogeneidad de su entorno natural y socioeconómico. El vino DOC Monferrato obtuvo el reconocimiento de la Denominación de Origen Controlada el 22 de noviembre de 1994.
Tipos y uvas del vino Monferrato.
El vino Monferrato Bianco, en su versione Seco, hecho al 100% de variedades de uva tal como: Cortese, Favorita, Chardonnay, Sauvignon, Muller Thurgau y otras uvas de bayas blancas no aromáticas producidas a partir de vides cultivadas en la región del Piamonte; el grado alcohólico tiene que ser superior o igual al 10% Vol; su color es amarillo pajizo, intenso, olor agradable y sabor fresco. El Monferrato Casalese Cortese, es un vino blanco seco, con, al menos un 85% de variedad de uva Cortese, el resto, como máximo el 15%, lleva variedades de uva blanca aptas para el cultivo en la región del Piamonte; el grado alcohólico debe de ser igual o superior a 10.50% Vol. Las características más destacadas son su color amarillo pajizo pálido que a veces tiende a verdoso, característico, delicado, muy tenue pero persistente y sabor seco, armonioso, salado y agradablemente amargo. El Monferrato Chiaretto (o Ciaret) es un vino rosado seco, que debe de contener, al menos, un 85% de las variedades de uva Barbera, Bonarda Nera, Cabernet Franc, Cabernet Sauvignon, Dolcetto, Freisa, Grignolino, Pinot Nero y Nebbiolo, solos o juntos y un máximo del 15% de bayas negras aptas para el cultivo en la región del Piamonte; su grado alcohólico debe ser superior a 10.50% vol.; presenta un color rosado o rojo rubí claro. El vino Monferrato Rosso, es un vino tinto seco que debe de hacerse al 100% de alguna de estas variedades de uva: Barbera, Nebbiolo, Cabernet Sauvignon, Merlot y Pinot Nero; su grado alcohólico como mínimo 11% vol.; presenta un color rojo, olor agradable y sabor fresco, seco. El vino tinto Monferrato Rosso Novello, es vino seco, hecho al 100% de con alguna de estas variedades: Barbera, Nebbiolo, Cabernet Sauvignon, Merlot y Pinot Nero; la graduación es, al menos, de 11º; este su color es rojo rubí con matices violáceos, afrutado, olor persistente. La variedad barbera tiene su origen las colinas de Monferratto, en el Piamonte central, donde ya era conocida en el siglo XIII. En la Catedral de Casale Monferrato, se conservan documentos de esa época que detallan el contrato del arriendo de las viñas plantadas con la uva "de bonis vitibus barbexinis", también conocida como barbera. Ampelográficamente se especula su origen en la región de Oltrepò Pavese, en Lombardía. En los siglos XIX y XX, las olas de inmigrantes italianos llevaron esta vid a América, asentándose en California y Argentina. Fuera de Italia, se cultivan en California, Brasil, Argentina y Australia, entre otros países. Análisis genéticos relacionan a la uva barbera con la uva española monastrell, conocida en Francia como mourvedre. En 1985, la región de Piamonte fue golpeada por un escándalo que involucraba a los productores de barbera, a los que se acusaba de haber añadido metanol a sus vinos, produciendo la muerte de varias decenas de personas y provocando daños en la salud de otras muchas. La mala prensa provocó que esta uva fuera eclipsada y que la montepulciano la sustituyera como la segunda uva tinta más ampliamente plantada en Italia durante la década de 1990.
Características.
La variedad Barbera es una cepa de mucho vigor, con capacidad para dar una producción muy alta cuando se cultiva con las adecuadas condiciones de poda y otros métodos. Hay que medir mucho esos rendimientos, ya que el exceso de uva provoca una disminución de la calidad afrutada de la uva y acentua la acidez y la intensidad natural de esta variedad. En Piamonte, la vid es valorada por sus rendimientos y su habilidad a madurar dos semanas antes que la nebbiolo, incluso en viñedos con una exposición menor que la ideal. Las uvas Barbera se desarrollan con facilidad en el clima cálido de de Italia, y en particular, en el de la región de Piamonte, al noroeste de la península itálica. Los hollejos de la barbera precipitan los antocianos pocos días después del inicio de la fermentación. Es una variedad de uva tinta cuyo contenido tánico es bajo. Es altamente resistente a los hongos y es capaz de producir buenas cosechas en diferentes tipos de tierra.
Zonas de cultivo.
Las principales provincias donde se utilizan para elaborar vino son Asti, Alessandria, Cuneo, Salerno, Benevento, Bologna y Modena, cuyas denominaciones de origen son en particular DOC Barbera d’Alba, DOCG Barbera d’Asti, DOC Barbera del Monferrato, DOC Piamonte Barbera, DOC Colli Tortonesi, DOC Canavesi Barbera, DOC Colline Novaresi Barbera, DOC Gabiano, DOC Rubino di Cantavenna. Fuera del Piamonte en la DOC Oltrepò Pavese Barbera en Lombardía, DOC Colli Bolognesi en la Emilia Romaña, DOC Castel San Lorenzo Barbera en la Campania. Fuera de Europa se la encuentra en Australia donde se adaptó muy bien al suelo, también hay uva barbera en California y en Sudamérica en Argentina, Brasil y Uruguay donde llegó de la mano de los inmigrantes italianos. En Argentina, principalmente en Mendoza y en San Juan, aunque se da excelente en Salta también a pesar de la escasa cantidad cultivada. En Mendoza representa el 0,47% del total de las variedades tintas, que, aunque parezca poco, es apenas seguida por Cabernet Franc con un 0,79% en la participación de uvas tintas para vinificar.
Vinos.
Cuando son jóvenes, los vinos ofrecen un aroma muy intenso, fresco y a mora. En sus versiones más ligeras muestra notas de cerezas, frambuesas, arándanos y, en los vinos tintos hechos de uvas más maduras, notas de cereza y mora. Por lo general, organolépticamente, los vinos de barbera de gran calidad tienen un color rojo rubí, intenso, cubierto. Su nariz es fundamentalmente floral con toques de pétalos de rosa, violetas, salvia, apareciendo aromas frutales a cerezas, ciruelas, grosellas, frambuesas. También aparecen aromas especiados a pimienta, clavo, canela. Su boca es equilibrada, con buena textura, con acidez marcada pero no excesiva, cuerpo medio, largo, grato que invita a seguir degustando.
