Historia.

El marqués de Griñón y Castelmoncayo, Carlos Falcó, es uno de los grandes artífices de la modernización ha experimentado la enología española en las últimas décadas. Introdujo en España las variedades cabernet sauvignon, merlot, syrah, chardonnay y petit verdot; fue el primero en implantar los modelos agrícolas de plantación mixta de vides (Canopy management, o gestión del follaje), el riego por goteo y las espalderas Smart-Dyson; y señaló el camino para desarrollar vinos competitivos en el mercado internacional. El Dominio de Valdepusa, propiedad desde 1292 de los antepasados de su actual propietario, D. Carlos Falcó, Marqués de Griñón, está situado en el término toledano de Malpica de Tajo.

El cultivo.

El Dominio de Valdepusa ocupa una superficie de 42 hectáreas produciendo variedades Cabernet Sauvignon, Syrah y Petit Verdot, estas 2 últimas pioneras en España. El suelo es es arcilloso-calizo especialmente adecuado para el cultivo de uvas que han de dar lugar a vinos de alta calidad, ya que sus acusados contrastes de temperatura unidos a una cuidadosa utilización de sistemas punteros de riego por goteo permiten obtener, vendimia tras vendimia, una maduración perfecta y uniforme de las uvas. El Dominio de Valdepusa ha sido reconocido por el estado español como el primer "Pago" oficial del país, y desde la añada 2002 posee su propia Denominación de Origen.

Sólida tradición histórica.

Ubicada en Malpica de Tajo, en Toledo, Pagos de Familia Marqués de Griñón es una bodega familiar con una sólida tradición histórica y muchas perspectivas de futuro a largo plazo. Desde 1292 la propiedad está en manos de la familia Falcó, una saga que ha sabido transmitir generación tras generación los valores de sostenibilidad y el respeto por el medio ambiente, la cultura y la tradición. Pagos de Familia Marqués de Griñón fue una firma pionera en aplicar la viticultura de vanguardia en nuestro país, elaborando con variedades foráneas en los Montes de Toledo y buscando siempre la excelencia desde el viñedo hasta la copa. El trabajo y filosofía que se emplea para tratar el viñedo está basada en la sostenibilidad del medio ambiente, en preservar al máximo todo lo que le rodea utilizando los métodos más innovadores. La primera vez que se abrió las puertas al público fue en el 2009 con la intención de enseñar y explicar todos los procesos de vinificación para los vinos de Marqués de Griñón, desde los viñedos hasta la bodega.

Pagos de Familia Marqués de Griñón.

Como pioneros en muchos métodos actuales, recomendamos su visita, para comprender un poco más los procesos de vinificación, explicada por expertos. El grupo Pagos de Familia Marqués de Griñón está formado por la bodega Marqués de Griñón - Dominio de Valdepusa y la bodega Viñedos del Rincón. La primera se encuentra en los Montes de Toledo, en Malpica de Tajo y la propiedad pertenece a la familia desde 1292. En ella se elaboran grandes vinos de pago a partir de la viña original de Cabernet Sauvignon plantada en 1974 y las que posteriormente se han ido plantando en unos suelos caracterizados por ser arcillo-calizos. La segunda, la finca El Rincón se encuentra muy cercana a la capital y en ella, el Marqués de Griñón elabora su vino El Rincón. Junto a los viñedos heredados de Garnacha Tinta y Garnacha Tintorera, se plantó 8 ha de Syrah en suelos caracterizados por ser de granito meteorizado. La bodega se acondicionó en 2002 en uno de los edificios del palacio. Sus vinos están auspiciados bajo la DO Vinos de Madrid.

Origen.

La variedad Petit Verdot es una uva tinta clásica para los ensamblaje de los vinos en la región de Burdeos. Su origen no es preciso, incluso se cree que su cultivo en la región es anterior al de la cabernet sauvignon. Sus características sugieren una procedencia de latitudes más cálidas que la zona de la Gironde. La petit verdot está emparentada con las cepas Tressot y Duras. Estas variedades pudieron haber sido introducidas por los romanos en su avance hacia el interior desde el Mediterráneo. En un principio se plantó en la región de Burdeos y, al no poder ser utilizada para los propósitos que se tenía pensado, las vides de esta variedad, los viticultores comenzaron a reemplazarse a mediados del siglo XX y cayó en el olvido. Desde hace pocos años, esta cepa goza de un resurgimiento en Burdeos.

Características.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia La uva petit verdot se desarrolla en cepas muy fértiles, medianamente vigorosas, porte semierguido y entrenudos muy cortos. Su brotación y maduración son tardías. Los racimos son reducidos de tamaño, poco compactos y con un pedicelo muy largo. Las bayas son pequeñas, esféricas, muy uniformes en todo el racimo, con piel oscura de color violeta, con una cicatriz estilar muy marcada, rodete grueso y pedicelos largos, de difícil desprendimiento. Su hollejo es grueso y su pulpa, sin pigmentación, es compacta, muy jugosa y con sabor que recuerda a las frambuesas. Al ser una uva de brotación temprana y maduración tardía, la viña petit verdot es sensible al clima helado de los comienzos de la primavera y del invierno, lo que dificulta su cultivo. Es una variedad muy rústica, con buena adaptabilidad a todo tipo de suelos y a la sequía, poco sensible al mildiu, al oídio y bastante resistente a la podredumbre gris. Es muy sensible a la polilla del racimo y a los ácaros y tiene elevados requerimientos en magnesio y fósforo, y bajas necesidades en nitrógeno y potasio.

Zonas de cultivo.

La petit verdot es una uva originaria de la región de Burdeos, en el suroeste de Francia donde, debido a sus características climáticas, tienen ciertos problemas para la maduración, por lo que fue sustituida por otras variedades más adecuadas, pero hace algunos años se volvió a plantar en Burdeos. En España, donde fue introducida en 1991, en Ronda, por el enólogo Juan Manuel Vetas, se están obteniendo vinos muy interesantes por disponer de un mayor número de horas de insolación y una temperatura media más alta. Es variedad autorizada para las Comunidades autónomas de Andalucía, Castilla-La Mancha, Castilla y León, Extremadura, Región de Murcia y Comunidad Valenciana. También se encuentran plantaciones de viñedos de petit verdot en Australia, país que cuenta con la mayor extensión territorial de esta vid, Argentina y , Estados Unidos, específicamente California.

Vinos.

Las características organolépticas de los vinos de petit verdot se podrían caracterizar por una fase visual de color rojo violáceo, intenso, brillante, con aromas de frutos rojos, ciruelas y moras combinadas con una nariz más acaramelada, vainilla y moca, adquiridos en su crianza en barrica, por lo que presenta una gran complejidad aromática. En boca tiene un gran gran volumen, muy graso y carnoso con una acidez bien marcada. Los taninos son dulces y bien equilibrados con la dulzura de la fruta y de la madera. Sus aromas también se han comparado a las virutas del plátano y del lápiz. Adquiere fuertes tonos violáceos durante el proceso de maduración. Cuando la uva alcanza su plena madurez, produce vinos con mucho cuerpo con taninos cautivadores y ricos en color. Debido a esto, petit verdot ganó su fama como una uva de mezcla popular en los vinos de Burdeos, pero hoy solo juega un papel más pequeño en las mezclas.
