Tres amigos para un proyecto.

Cos fue fundada en 1980 por Giambattista Cilia, Cirino Strano y Giusto Occhipinti, los tres amigos cuyos tres apellidos dan nombre a la empresa y que querían retomar con ella el camino de sus antepasados en el mundo del vino. Son los productores de vino más jóvenes de Italia. Reciben en alquiler de Giuseppe Cilia, el padre de Giambattista, la antigua bodega familiar y el viñedo colindante de 3.60.40 hectáreas, en la histórica ciudad de Bastonaca. El 5 de octubre, cosechan la primera cosecha que producirá 1.470 botellas. COS comienza así su aventura que lo llevará a llevar a cabo una reestructuración radical de Cerasuolo di Vittoria. Rigor y calidad son los principios que rigen la biodinámica adoptada por Cos en su camino a la excelencia. El resultado es un Cerasuolo de Vittoria que envejece hasta un año en grandes barriles y se cuenta, añada tras añada, entre los grandes referentes de la denominación: Suave, profundo, amplio y expresivo. Con la selección Pithos, la bodega elabora sus vinos mediante vinificaciones de muy antigua tradición: en terracota y sobre sus lías.




Cosechas.

- Así en 2000 nació Pithos, Cerasuolo di Vittoria fermentado y envejecido completamente en ánforas. - En el 2003, una vez que se completaron los trabajos de restauración en el edificio Fontane, se traslada la sede.
- 2005 será el año de la primera cosecha de denominación de origen controlada y garantizada, la única en Sicilia.
- La cosecha de 2007 será en las nuevas instalaciones que inaugura la bodega y marcará otro capítulo más en la historia de esta empresa. Los pequeños tambores de madera, darán paso definitivamente a las 150 ánforas, una de las más amplias que existen.
Hoy Cos es sinónimo de Cerasuolo di Vittoria pero también de rigor y calidad. A esta compañía, a la intuición de estos tres amigos, le debemos el renacimiento del área de Vittoria y sus xtraordinarios vinos.




Los vinos.

La fermentación es espontánea y el uso de levaduras indígenas son también ingredentes clave en la elaboración de sus vinos. Nero di Lupo, un gran Nero d'Avola de equilibrio excepcional, y Frappato, una perfecta conjunción de agilidad y profundidad. En su colección de blancos encontramos el brío y la autenticidad de su Zibbibo in Pithos, y la intriga de su Ramì, un espléndido coupage de variedades autóctonas envejecidas en acacia; pero sobre todo, su grandioso passito Aestas Siciliae, un vino dulce que cautiva. Durante más de tres mil años, esta tierra ha sido el hogar de la vid. Un legado extraordinario que hemos recogido con humildad y transgresión. Nuestra búsqueda de una forma artística de concebir el vino nos ha llevado a medirnos frente a los desafíos de un camino difícil, pero tan satisfactorio que nunca nos hemos detenido. Y así es como, durante más de treinta años, hemos estado vertiendo historia en los vasos, nuestra historia y la de nuestra tierra. No hemos seguido ninguna moda, solo la pasión y la curiosidad por un mundo que en aquellos días en Sicilia todavía era desconocido para la mayoría de la gente. Nos hemos recuperado, transmitido y mejorado con el conocimiento actual, un producto de excelencia, que habla de nosotros, que nos dice cómo estábamos.




Nuestro trabajo.

COS Farm sigue los principios de la agricultura biodinámica, un método de cultivo basado en la visión del filósofo Rudolf Steiner, que incorpora la idea de la agricultura orgánica e invita a considerar el suelo como un sistema único y la vida que se desarrolla en él. Con esto en mente, y con un espíritu crítico que adapta los principios de la biodinámica a las enseñanzas de una tradición milenaria, COS cultiva sus viñedos con la una atención extrema, con técnicas de poda que respetan mejor la vid y las uvas. La agricultura biodinámica significa respeto, significa no pedir más de lo que la naturaleza puede ofrecer. Es por esta razón que en COS hemos desarrollado proyectos relacionados con la fitodepuración de las aguas residuales de la bodega y el compostaje de residuos de poda, a través de un método de creación de compost que no utiliza productos químicos o reparaciones artificiales. Para nosotros, la biodinámica no es una moda, sino una sabiduría que proviene del respeto, la pasión por el trabajo, el amor a la vida.

Origen.

La nero d'Avola es una variedad de uva tinta de vitis vinífera que, con toda probabilidad, fue llevada a Sicilia por los Fenicios, siendo allí la variedad de uva más importante y de mayor calidad, además de una de las variedades con mejor calidad de Italia. Los análisis ampelográficos de la variedad indican que, genéticamente, procede de una uva griega hibridada con alguna casta salvaje autóctona siciliana. Su nombre significa Negra de Avola que es una pequeña localidad situada en el sur de Sicilia. También es conocida como Calabrese y, según parece, este nombre no procede de Calabria, sino que es una derivación del nombre de Cala de Vrisi (Avola). La traducción literal del nombre será uva negra dÁvola. Es la variedad estelar siciliana, hasta convertirse en uno de los símbolos de su enología, porque abarca cada rincón de la isla.




Características.

La variedad nero d’Avola es una uva de difícil maduración, sobre todo en el este de la isla, que necesita mucho calor y terrenos arenosos para expresar toda su paleta olfativa, con el riesgo siempre de que puedan destacar de forma agresiva las notas animales y terciarias y potenciarse la rusticidad que lleva consigo. En los terrenos más calcáreos y zonas menos calurosas, en algunas ocasiones, la parte placentera de la variedad puede resultar dañada por sensaciones más animales y terciarias y menos refinadas, más opulentas. Esa es una de las causas por las cuales se ensambla, para refinar el vino y hacerlo más suave sin que pierda su enorme personalidad, con castas francesas como cabernet sauvignon, merlot y syrah (sobre todo esta última) que suponen un riesgo porque en estas latitudes se acentúan de forma notable las notas vegetales, de sobremaduración y que terminan por resaltar los aspectos más agresivos, verdes y pastosos. Las vides se adaptan muy bien a climas cálidos y relativamente secos, justo las condiciones de Sicilia. Su maduración es complicada, necesitando mucho calor y terrenos arenosos para desarrollar todo su potencial. La planta es bastante resistente a las enfermedades, los racimos son medios poco compactos, de grano medio y hollejo grueso.




Zonas de cultivo.

La nero d'Avola es la variedad tinta más representativa del viñedo siciliano, y la más conocida en el mundo, con más de 18.000 hectáreas plantadas, siendo la segunda más cultivada de la isla, sólo detrás de la catarratto blanca. Desde Sicilia esta uva se ha extendido también a California, Australia, Malta, Turquía y Sudáfrica.




Vinos.

Sus vinos son rústicos, brillantes, con un vivo color rojo cereza o rubí con toques púrpura en su juventud, que se van volviendo granate en su envejecimiento. Son bastante tánicos, con un grado alcohólico elevado, nariz afrutada con intensos aromas a mora. Su boca compleja, seca, algo ácida, con notas de violeta y especias (regaliz y clavos de olor), ciruela pasa, cereza, mora, grosella negra, frambuesa y chocolate, cuero y tabaco. Es redondo, cálido y con buen cuerpo. Al mezclarse con uvas de variedad cabernet y merlot se suaviza y se hace más amable. Tradicionalmente se utilizaba para fortaleces otros caldos de uvas menos potentes. Por su alto contenido en azúcares y taninos, y su baja acidez, se consideraba una uva excesiva para utilizarse en monovarietales. Actualmente, con las nuevas técnicas de cultivos en las que se consigue una menor producción y maceraciones en frio, se consigue aumentar la acidez y disminuir el contenido de azucares, taninos y alcohol, obteniéndose unos muy buenos monovarietales.
