Origen.
La variedad monastrell es, para la mayoría de los historiadores, una uva de origen español, aunque no se ha podido determinar con precisión el lugar exacto de su aparición. Es probable que, allá por el año 500 a.C., los fenicios la introdujeran en la península ibérica por el puerto de Sagunto, en la comunidad valenciana. Los ampelógrafos creen que la monastrell está emparentada con la mavrud, que se generó cuando la monastrell fue exportada a Bulgaria por los romanos. En el siglo XVI la monastrell se implantó en el Rosellón, Francia, desde donde se extendió a la Provenza y al valle del Ródano. La epidemia de filoxera del siglo XIX mermó sus viñedos, y una vez superada, fueron recuerados con esquejes de otras variedades ya que los viticultores se dieron cuenta de que la monastrell no arraigaba bien. A mediados del siglo XIX se comenzaron las plantaciones de viñedos de monastrell en California, donde es conocida como mataró, se usó en su principio para elaborar vinos de garrafa. A finales del siglo XX se empezó a mostrar interés en esta uva como variedad “premium” recuperando sus antiguas plantaciones de Contra Costa, en California, donde las buenas críticas fomentaron la demanda de vinos de esta variedad lo que provocó un aumento de la superficie de viñedos de mataró. En Australia también ha tenido una larga historia desde mediados del siglo XIX. También se le llama mourvèdre en Francia y mataró en Portugal, USA y Australia, y en menor medida mourviedro, murviedro, mataró, alcayata, gayata, morastell, morrastrell, garrut, monastrell de la gayata, espar, flouron, trinchiera, rossola, balzac y baltasar.
Características.
Es la segunda variedad más utilizada en España después de la tempranillo. La monastrell se desarrolla con mayor facilidad en climas cálidos, su desborre es desborre tardío, razón por la cual se recupera bien de las heladas primaverales, siendo su maduración también tardía. Las cepas de la variedad monastrell son de vigor medio-alto, de porte muy erguido con buena fertilidad y una producción moderada. Son muy sensibles a las temperaturas, sobre todo a los fríos del invierno que pueden provocar que entren en inactividad. Producen racimos de tamaño entre mediano y grande, muy compactos, de forma cónica y algunas veces alados. Las uvas son medianas o pequeñas, uniformes, esféricas, con un pedicelo bien lignificado y corto y una cicatriz estilar muy visible. La piel es de color casi negro, azulada, gruesa y consistente, recubierto de mucha pruina. Su pulpa no está pigmentada, es blanda y jugosa, algo ácida y áspera. Es bastante versátil en su adaptación al terruño, pero sus preferencias son suelos poco profundos y argilosos con capacidad para retener la humedad y evitan que su follaje crezca en exceso. Gusta de climas cálidos y secos, con suficiente viento que le proteja del oídio y el mildiu. El periodo de cosecha de esta uva es corto, ya que una vez que alcanza su punto de maduración, la acidez decrece con rapidez y las uvas comienzan a secarse y a desarrollar sabores a ciruela.
Zonas de cultivo.
En España, la monastrell era la cuarta variedad de uva tinta de vino más plantada a comienzos del siglo XXI, habiendo unas 63.000 ha en 2004. Al igual que otras variedades españolas, debido a que muchos agricultores han eliminado sus antiguas viñas para replantarlas con otras variedades internacionales que en la actualidad tiene más tirón, como la cabernet sauvignon y la chardonnay, la extensión de viñedos de esta variedad ha decrecido en los últimos años. La monastrell es variedad recomendada en la Región de Murcia tanto en las DO de Jumilla, Yecla y Bullas, en la Comunidad valenciana DO de Alicante y Cataluña. Está autorizada en Andalucía, Aragón, Baleares, Castilla-La Mancha, Cataluña, Extremadura, Comunidad de Madrid, Navarra, País Vasco y La Rioja. Esta uva tiene un arraigo particular en las regiones de Alicante12 y Murcia, donde se usa como monovarietal, o mezclada con syrah, cabernet sauvignon o merlot. En otros lugares del mundo su producción se ha asentado con bastantes buenos resultados como en Portugal, en las regiones francesas del Ródano y Provenza, en Estados Unidos en los estados de California y Washington, y en Australia con varias regiones productoras de vinos de esta variedad. También se pueden encontrar plantaciones de monastrell en Azerbayán y Sudáfrica.
Vinos.
Los vinos elaborados con monastrell son muy tánicos, de intenso color rojo oscuro y con altos niveles de alcohol, siempre que sean cosechados en su nivel óptico de contenido en azúcares, con la intención de obtener vinos de aproximadamente 13º. Si la cosecha se efectúa antes se obtendrían vinos muy débiles con notas herbáceas. En la vinificación, los vinos elaborados con monastrell, corren el riesgo de oxidarse si no se tienen las precauciones suficientes. Aunque el vino puede ser almacenado en barriles de roble, a menudo no absorbe los sabores del roble tan bien como otras variedades (como la merlot y la cabernet sauvignon) por lo que a menudo se almacena en roble neutro o en barriles de gran formato. La variedad Monastrell produce vinos tintos elegantes, redondos, con estructura de gran calidad con una graduación alcohólica alta y una cantidad de taninos elevada que son suavizados con su envejecimiento en madera. De color rubí intenso, tiene una nariz frutal, mientras que su boca es larga, carnosa y de acidez no muy elevada. Ideal para combinar con variedades como la Syrah o el Cabernet Sauvignon que permiten una larga crianza en barrica. La Monastrell también es empleada para elaborar vinos dulces naturales o vinos naturalmente dulces, entre los que se encuentran el famoso Fondillón. Para mezclar, la Monastrell tiene gran afinidad con garnacha, creando vinos muy estructurados, también da vinos de mesa finos mezclada con syrah, y vinos con personalidad al mezclarse con merlot o cabernet sauvignon.

La cinsaut o cinsault es una uva tinta importante en la región francesa de Languedoc-Rosellón y en las antiguas colonias francesas de Argelia y Marruecos. Se mezcla a menudo con uvas como la garnacha y la cariñena para añadirle a los vinos suavidad y buqué. Tiene algunos sinónimos, de los cuales el más se presta a la confusión es el de oeillade, aunque es diferente de la oeillade original, que ya no se cultiva. En Sudáfrica era conocida como hermitage, de ahí que el cruce con cinsault y pinot noir se conoce como pinotage, su cruce más famoso. La cinsault parece ser una variedad antigua que puede haberse originado en Hérault, pero podría haber sido traída por comerciantes del Mediterráneo Oriental.
Características.
La vid de variedad cinsault puede producir cosechas abundantes, pero los vinos son mucho mejores si se controlan los rendimientos. La cinsaut es muy resistente a la sequía, pero puede ser susceptible a enfermedades, de modo que aprecia un clima seco. Produce racimos grandes y cilíndricos de uvas oscuras con pieles gruesas.
Cultivo.
La cinsault es la cuarta uva tinta más plantada de Francia, y es especialmente importante en la región de Languedoc-Rosellón. También es usada ampliamente para hacer vinos rosados en la Provenza. En Argelia, debido a su gran resistencia a la sequía se usa para hacer grandes volúmenes de vino así como en Marruecos y Túnez. En Australia crece bajo una gran variedad de nombres, como black prince, blue imperial, oeillade y ulliade. En Chile se le conoce como cinsault o cargadora, dada la abundancia de racimos. En total Chile cuenta con más de 796 hectáreas plantadas de cinsault, de las cuales casi 700 se concentran en el Valle del Itata, en las zonas de Coelemu, Guarilihue y Portezuelo. Actualmente en otras zonas vitivinícolas como el Valle de Colchagua y Villarrica, se han iniciado nuevas plantaciones. En Italia se la conoce como ottavianello. Hay una pequeña Denominazione di Origine Controllata (DOC) dedicada a la cinsaut, la Ottavianello di Ostu, con una producción de menos de 100 cajas al año. En cualquier caso, la cinsault es muy usda en las mezclas de Apulia y también está recabando la atención de los productores interesados en reavivar las variedades más antiguas. La cinsault es un componente importante en el ensamblaje del Château Musar libanés. En Sudáfrica crece mucha cinsaut, buena parte de la cual es mezclada con cabernet sauvignon. El viñedo más antiguo de cinsault puede ser el de Bechtold en Lodi, California, Estados Unidos, que fue plantado en 1885 por Joseph Spenker. Se planta también algo de cinsaut en California donde se le da el nombre de black malvoisie. También hay plantaciones de cinsaut en el valle Yakima del estado de Washington.
