Reseña histórica.
El origen de los viñedos aragoneses se sitúa en la región llamada Celtíbera, donde se encontraba la villa romana de Carae, hoy Cariñena, de cuyos habitantes se sabe que bebían vino mezclado con miel allá por el siglo III antes de Cristo. Ya en 1415 formaban parte de la lista de alimentos preferentes de los que Fernando I de Aragón tenía previsto acompañarse en un proyectado viaje a Niza que finalmente no se llevó a cabo y en el que iba a tratar con el emperador sobre el Cisma de la Iglesia. Según cuenta Esteban Sarasa Sánchez, profesor de Historia Medieval de la Universidad de Zaragoza, el monarca señaló su preferencia por el vino de Cariñena y Longares, el queso de Peñafiel, los perniles pirenaicos o el trigo de Zaragoza. Del cariñena hablaron en sus crónicas numerosos viajeros españoles y extranjeros que se aventuraron por la península. Enrique Cock cuenta cómo en 1585 Felipe II fue recibido en Cariñena con dos fuentes de vino, una de blanco y otra de tinto. En1696 se aprobó en la villa de Cariñena el llamado Estatuto de la Vid, con el fin de limitar las plantaciones en función de la calidad de la tierra donde fueran a ubicarse los viñedos. En 1773 el pensador francés Voltaire, en respuesta a un lote de vinos que el Conde de Aranda le había hecho llegar desde su bodega de Almonacid de la Sierra, le enviaba esta nota “Si este vino es de vuestra propiedad hay que reconocer que la tierra prometida está cerca”. José Townsend, en 1786, decía: «el vino que produce esta comarca es de la mejor calidad y no dudo de que sea muy buscado en Inglaterra tan pronto como la comunicación por mar sea establecida». Posteriormente, la celebración del primer congreso vitivinícola nacional en 1891, en Zaragoza, refleja la inquietud pionera de Cariñena. Su trayectoria histórica y el ejemplar comportamiento de los viticultores cariñenenses en la lucha contra la filoxera, una plaga que arrasó todo el viñedo europeo a finales del siglo XIX, sirvió a la población de Cariñena para recibir el título de ciudad, otorgado por el rey Alfonso XIII en 1909. En 1932, coincidiendo con la creación de las denominaciones de origen se inaugura la Estación Enológica de Cariñena, desde donde se impulsan nuevas técnicas de cultivo y elaboración, pero la Guerra Civil y sus posteriores consecuencias retrasan el giro hacia la calidad hasta los años setenta, poco después de que los vinos comenzasen a ser embotellados. Es en los ochenta cuando se da el gran salto cualitativo en la elaboración del vino con la introducción de nuevos sistemas de cultivo, la inversión en tecnología y la adopción de nuevas prácticas enológicas.
Las uvas.
Muchos de los vinos de Cariñena son monovarietal Garnacha, aunque también se producen vinos 100% uva Cariñena, otros vinos son mezclas de Cariñena con otras uvas autóctonas y alóctonas. Alrededor del 87% de las uvas cultivadas en la región son variedades tintas, mientras que poco más del 12 por ciento son uvas blancas. Se permite el uso de todas las variedades tintas aprobadas en los vinos rosados de la región. La garnacha es la uva más plantada en Cariñena por adaptarse bien a las condiciones de crecimiento áridas de la zona, representando aproximadamente el 32 por ciento del vino producido en la región. Además de usarse en vinos varietales, a menudo se mezcla con Cariñena, Tempranillo y Syrah. Tiene taninos y acidez suaves, aunque las uvas cultivadas en las elevaciones más altas de la región expresan una mayor acidez, más mineralidad y más intensidad. La garnacha generalmente produce vinos con cuerpo, fruta, versátiles y aptos para la comida, con notas de frambuesa, cereza negra, fresa, hierbas y ahumados. Antes de que Garnacha la sustituyera, la uva Cariñena (también conocida como Mazuelo y Carignan era la estrella de la región. Pero a pesar de originarse aquí, la uva es difícil de cultivar en las condiciones extremas de crecimiento de la región. Es una variedad de maduración tardía que tiende a ser susceptible a las enfermedades, sin embargo, algunos productores de la región lo están trayendo nuevamente al redil como un vino varietal y a menudo se usa como un componente en las mezclas regionales. Casi el 5% del vino producido en la región se elabora con esta variedad, resultando un vino con cuerpo que ofrece una acidez vibrante, taninos fuertes, color profundo y notas de ciruela, cereza, bayas y especias. Una pequeña cantidad de otras variedades se plantan en Cariñena, incluyendo Cabernet Sauvignon, Chardonnay, Garnacha Blanca, Juan Ibáñez, Macabeo, Merlot, Monastrell, Moscatel de Alejandría, Parellada, Syrah, Tempranillo y Vidadillo.
Los vinos.
En la Denominación de Origen Cariñena se etiquetan vinos tintos, rosados y blancos, los cuales se subdividen en subtipos, que, además de características establecidas por la normativa general vigente en cada momento, deberán cumplir los requisitos que, en su caso, se indiquen. Los vinos de maceración carbónica, tanto blancos como tintos, se encuban las uvas enteras, sin romper, permaneciendo en un ambiente rico en CO2 mientras tiene lugar la fermentación intracelular. Después, o bien, despalillado, estrujado y macerado, o bien, prensado directo, continuando la fermentación alcohólica a temperatura controlada no superior a 25°C. La elaboración de vinos semisecos, semidulces y dulces se realiza con los mismos sistemas de elaboración que los vinos secos, pudiendo interrumpir su fermentación, conteniendo azúcares residuales, o bien, partiendo de vinos secos, mediante la edulcoración con mostos concentrados rectificados. Esta práctica se anotará en el Libro de Registro de Prácticas Enológicas. También se elaboran vinos de licor, vino naturalmente dulce, vinos de aguja y vinos espumosos. Los vinos fortificados, dulces y espumosos que cumplen con las regulaciones actuales también están permitidos dentro de la DO. Se etiquetan vinos como crianza, reserva, gran reserva, añejo, roble y noble cuando envejecen según unos requisitos. Los vinos etiquetados como crianza deberán pasar un mínimo de seis meses en barrica y en botella el resto hasta cumplir veinticuatro meses. Para poder adoptar el calificativo de reserva deberá envejecer por treinta y seis meses, de los cuales al menos doce los harán en barrica, veinticuatro y seis, respectivamente, para blancos y rosados. Los grandes reserva precisarán un periodo de envejecimiento de sesenta meses, de los cuales, al menos, dieciocho se harán en madera, siendo el requisito de cuarenta y ocho y seis, respectivamente, para los blancos y rosados.
