Historia y consecución DO.
No se sabe exactamente cuándo se comenzó a elaborar la Manzanilla. Históricamente, se suele asociar el comienzo de la producción en las bodegas sanluqueñas con la reestructuración del negocio vitivinícola durante el siglo XVIII y con el asentamiento de la industria moderna en la zona. El primer documento en el que aparece el nombre de Manzanilla referido al vino data del siglo XVIII y se trata de un Acta Capitular del Cabildo de Cádiz. Debemos los primeros estudios sobre la Manzanilla al botánico y agrónomo Esteban Boutelou, en su libro Memorias sobre el Cultivo de la Vid en Sanlucar de Barrameda y Xerez de la Frontera (1806). La Manzanilla fue incorporada a la Denominación de Origen Jerez-Xérès-Sherry en 1933 como uno de sus tipos de vino. Hasta 1964 no se publicó el Reglamento de la Denominación de Origen Manzanilla, donde se reconoce la identidad de la Manzanilla, así como su vínculo con Sanlúcar de Barrameda. El 26 de junio de 1996, la Comisión de la Unión Europea reconoció el carácter único de la Manzanilla. Con ello dejó de ser necesario referirse a este vino con la expresión «Manzanilla de Sanlúcar de Barrameda», ya que ahora solo hay una: la de Sanlúcar. La DO Manzanilla San Lúcar de Barrameda pertenece también a su vez a la DO Jerez-Xerés-Sherry, compartiendo estos vinos geografía, zona de producción e incluso variedad de uva y proceso de elaboración como la supervisión y el amparo del mismo Consejo.
Zona de Producción.
La zona de producción del Jerez se encuentra en el extremo sur de la península. Los viñedos de Jerez, El Puerto de Santa María, Sanlúcar, Trebujena, Chipiona, Rota, Puerto Real, Chiclana y Lebrija son los únicos que pueden producir uva para la elaboración de vinos de Jerez y Manzanilla. Otra delimitación importante es la zona de crianza: el triángulo formado por las ciudades de Jerez, El Puerto de Santa María y Sanlúcar. Únicamente en estas ciudades se puede completar el proceso de producción amparado por la D.O. Hay que tener en cuenta varios factores de estas zonas, como el clima, el tipo de tierra (albariza, barros y arenas) y, especialmente, el tipo de uva autóctona: Palomino, Moscatel y Pedro Ximénez, blancas las tres.
Método de producción.
Una vez recolectada la uva, se procede a la pisa y prensado y se deja fermentar: es de ahí de donde surgen los nuevos vinos y los mostos. Los catadores prueban estos nuevos vinos y, dependiendo de las características de los caldos, se separan entre finos/manzanillas (los más pálidos) y olorosos (los que poseen más cuerpo). Una vez separados, se dejan reposar hasta alcanzar los 15º y 17º. Las botas más empleadas son de roble americano, con capacidad para 600 litros. Se llenan hasta los 500 litros, unas 30 arrobas, y se deja una superficie vacía para que se desarrolle el velo de flor. El método que se lleva a cabo es el de soleras y criaderas. Las variedades de uva utilizadas en la DO Manzanilla-Sanlúcar de Barrameda serán Palomino, Pedro Ximénez y Moscatel. La manzanilla se considera un vino generoso.
Manzanilla.
La manzanilla propiamente dicha es un vino muy pálido, de un tono amarillo pajizo. Es un vino blanco y seco, elaborado con uva palomino y envejecido bajo una capa de levaduras llamada velo de flor. Su crianza se lleva a cabo exclusivamente en bodegas de Sanlúcar de Barrameda. Las especiales condiciones climáticas de esta ciudad, situada en la desembocadura del río Guadalquivir, propician el desarrollo de un velo de flor muy peculiar. Como consecuencia, el vino adquiere características particulares y diferenciadoras. Tiene aroma punzante con notas florales que recuerdan a camomila y almendras. Al paladar es seco y fresco. Presenta, también, una ligera acidez que deja un regusto ligeramente amargo.
Manzanilla pasada.
Si las manzanillas son sometidas a períodos de crianza excepcionalmente prolongados, en los que la flor llega a debilitarse ligeramente, provocando un pequeño nivel de oxidación y una mayor complejidad; surgen así las "Manzanillas Pasadas". Son vinos con más estructura, pero con todo el carácter punzante e intenso que aporta la crianza biológica.

Origen.
La pedro ximénez (también conocida como PX, pedro jiménez o pedro) es una variedad de uva blanca que crece en varias regiones vitivinícolas españolas. Según se dice, la uva toma su nombre de un mercenario alemán del tercio de Flandes, Peter Siemens, que trajo unas cepas, con las cuales elaboraban el vino alemán, tal vez Riesling, en el siglo XVI, aunque la historia probablemente sea apócrifa dado que ninguna uva del Rin se parece a la Pedro Ximénez y es muy difícil que una cepa del norte de Europa se aclimatase al clima del sur español. Las características morfológicas y ampelográficas de esta variedad no se parecen en nada a las de las cultivadas en los valles alemanes, y los últimos análisis comparativos de ADN subrayan esta diferencia. Pero el caso es que el origen de la Pedro Ximénez sigue siendo controvertido y no se puede establecer con certeza, aunque las tesis más recientes apuntan a que es una uva mediterránea que pudo originarse en algún punto de Andalucía y que descendería de la uva de mesa árabe llamada Gibi.
Características.
La característica más importante de esta uva, además de su piel fina, su pulpa jugosa, es su alta concentración de azúcares, una propiedad que convierte a la variedad en ideal para la pasificación y elaboración de vinos dulces naturales. crecen mejor en suelos muy calizos, aireados y profundos, y cuyo hábitat ideal es el de climas secos y calurosos. La planta, vigorosa, de porte muy erguido y productora, tolera bien el calor y agradece las altas insolaciones. Este calor constante al que acaban sometidas las uvas asegura un alto contenido de azúcar, y por tanto de alcohol, obtenido por métodos naturales (suele estar en 14,5º), por lo que no es necesaria ninguna adición posterior en el proceso de producción de los vinos para conseguir la graduación alcohólica. El ciclo de maduración es corto por lo que se cosecha antes que otras variedades de las cultivadas en nuestro país (la vendimia suele comenzar a mediados del mes de agosto). Igual que agradece el sol, rechaza los climas húmedos. La cepa es muy sensible a la yesca y las termitas, y la uva, con su fina piel, al oídio, la botritis y el mildiú, poco sensible a los hongos de la madera y relativamente resistente al frío y al viento. Tiene altos requerimientos en fósforo y en potasio.
Zonas de cultivo.
En Andalucía es donde hoy se encuentra la mayor parte del terreno dedicado a la uva Pedro Ximenez, especialmente en el marco de la D.O. Montilla-Moriles, donde se elabora más del 90% de la producción total de vino Pedro Ximénez. Allí se lleva cultivando más de 500 años, por lo que se puede considerar una variedad autóctona. El éxito se debe a las especiales condiciones de suelo y clima de esta región cordobesa, perfectas para las cepas de Pedro Ximénez, que crecen mejor en suelos muy calizos, aireados y profundos, y cuyo hábitat ideal es el de climas secos y calurosos.
Vinos.
Una de las características más notables de esta uva es la cantidad de vinos diferentes que se pueden elaborar con ella. Por su alto contenido en azúcares y su baja acidez se ha utilizado tradicionalmente para la elaboración de generosos, aunque también la podemos encontrar en vinos tranquilos secos, casi siempre acompañada de otras variedades, o en monovarietales que han surgido en los últimos años. Finos, Amontillados, Olorosos y Pedro Ximénez se elaboran, al menos en Montilla-Moriles, utilizando únicamente este tipo de uva. El que lleva el mismo nombre que la variedad es uno de los más conocidos, gracias también a su versatilidad culinaria. Los vinos PX son vinos dulces elaborados con la variedad Pedro Ximénez, en un proceso que comienza en la exposición al sol de los racimos recién cortados en las paseras, largas tiras de esparto o de plástico donde la uva se deshidrata lentamente hasta pasificarse. El vino acaba de hacerse en el sistema de criaderas y soleras. Aquí, el color ambarino del mosto irá desapareciendo hasta alcanzar tonalidades muy oscuras, al tiempo que ganará en aromas cada vez más complejos.
