Priorat B&D Lab o como nos gusta también llamarlo, nuestro Centro de Búsqueda de Productos, empieza ahora su andadura, no como un simple Celler sino como un laboratorio experimental, con muchos proyectos que se desarrollarán en los próximos años vinculados a la tradición de las tierras que lo rodean pero con la vista puesta en los tiempos actuales. Con esta fascinación que siente todo su equipo por las viejas recetas y los nuevos momentos y que también se refleja en la estructura del Celler. Un laboratorio, para experimentar, para vivir y dejar volar la imaginación para adaptarnos a los nuevos momentos e incluso llegar más allà. Porque aunque ellos eran alquimistas y nosotros elaboradores, tenemos una cosa en común...no paramos de darle vueltas a las fórmulas.
Renovarse o morir.
Ubicada en la calle de la Font Vella 13, de Bellmunt, y con una decoración de microdestilería que no pasa desapercibida en la zona, el Priorat B & D Lab ofrece originales Bebidas y Destilados, hechos a medida, recuperando viejas recetas y adaptándolas a los nuevos momentos de consumo. Para Àlex Illa, director del proyecto con una amplia experiencia en la distribución y comercialización de bebidas espirituosas: "la innovación es el ADN de PrioratLab. Siempre estamos a la vanguardia de las preferencias del mercado incorporando nuevos productos, sabores y experiencias únicas para cautivar a los consumidores". El local de PrioratLab se divide en una planta inferior donde encontramos la tradición de la bodega, las barricas de madera, el vermouth Dos Déus reposando esperando llegar a su punto óptimo de maduración... La planta superior alberga, al estilo de los antiguos alquimistas, un laboratorio para investigar varias recetas de bebidas y la reciente incorporación de un alambique de la marca Müller, diseñado al detalle según las exigencias de PrioratLab. También se aprovecha la zona del patio, donde se dejan las fórmulas macerar a "sol-i-serena" en damajuanas, rodeadas de la viña de Bellmunt del Priorat y las plantas aromáticas que utilizan para sus preparaciones. Precisamente, este ha sido el caso de la nueva ratafía de magnolias Mina, la tradicional receta de Bellmunt recuperada, y ahora, embotellada gracias al conocimiento de la fórmula de algunas vecinas del pueblo que evitaban que cayera en el olvido. La Mina se ha presentado con muy buena aceptación en la Feria de la Ratafia de Santa Coloma de Farners de este noviembre.
El químico del proyecto.
Pau Matias-Guiu, responsable técnico del proyecto y Doctor en Ingeniería Química especializado en destilados, explica el minucioso proceso de elaboración de los productos PrioratLab: "todo comienza con la selección de las materias primas de la mejor calidad, y siempre que sea posible, de proximidad ". Pau las selecciona exhaustivamente, estudia las maneras de convertirlas en bebidas y experimentar en el Lab. Su experiencia como Master Distiller juega un papel clave en todo momento. Decide el mejor tipo de envejecimiento, en su caso el uso de barricas nuevas o más antiguas de Jerez, de tinas de madera o damajuanas, al sol, soleras o en depósitos de acero inoxidable ... "Las catas y degustaciones nos sirven para controlar la calidad deseada. Y todo se realiza a mano: desde el proceso de las maceraciones y la destilación hasta sellar las botellas. Esto garantiza la calidad en todo momento de nuestros productos.".
El otro componente.
Álex Illa, fundador y director del proyecto, recalca a cerca del proyecto: "este proyecto no hubiera cogido estas dimensiones de no ser por el asesoramiento y colaboración de los mejores referentes del país como Joan Soler, Damià Deas, Eva Plazas, Ricard Rofes y Javier Caballero, a quienes no dejamos nunca de consultar y trasladar nuestras inquietudes para crear el catálogo de productos actual de Priorat B&D Lab. Precisamente, esta es la manera que queremos que disfruten también los profesionales (bartenders, sumilleres, enólogos...), que se incorporen en la mejora de las fórmulas y recetas, en la búsqueda de nuevas y, en definitiva, en todo lo que vaya surgiendo. Un laboratorio para experimentar, para vivir y dejar volar la imaginación para adaptarnos a los nuevos momentos e incluso llegar más allá". En último lugar, el nuevo local dispone de una sala de catas para degustar los premiados vermuts Dos Déus y Fontalia, considerados los mejores de Cataluña por los Premios Vinari y el certamen Giroví, así como otros nuevos productos. Un espacio original, muy agradable, con una sala de disección y mixología de las bebidas que se preparan para disfrutar de un entorno privilegiado en el Priorat.
