Después de un año en bota, su color ámbar suave y limpio, reflejos verdosos no detectables a simple vista, recuerda a los vinos de Jerez en su crianza oxidativa. Sin agitar vemos que nos recuerda a los vinos secos de Jerez afrutados, tiene aromas tostados después de su año en bota. Al mover se nota el ácido acético como disolvente de aromas y los potencia, al ser un vinagre joven cuesta diferenciarlos aunque aparecen frutos secos. Recuerda cuando un vino de Jerez comienza a hacerse amontillado. En boca, es un vinagre seco con ligeros toques de madera que en la nariz no se aprecian, fresco y suave, en el retrogusto aparecen las notas de frutos secos que decíamos al agitarlo. |

Fundada en 1997 por la tercera y cuarta generación de una familia de conocidos vinateros y vinagreros. Su saber hacer fue pasando de padres a hijos, de generación en generación, y así hoy, podemos disfrutar de inigualables vinagres, primcipalmente los amparados bajo la Denominación de Origen " Vinagre de Jerez". Para la elaboración El Majuelo emplea técnicas tradicionales, unidas a los más modernos métodos de elaboración control de calidad. Se une pasado, presente y futuro. Un legado familiar, una formación continua y grandes esfuerzos en investigación y desarrollo. Esto ha hecho de El Majuelo, una empresa familiar, consolidada tanto en el mercado familiar como en el mercado exterior y con un reconocido prestigio en todo el sector.
El vinagre.
La Denominación de Origen “Vinagre de Jerez” fue la primera creada en España para este tipo de productos, con el doble objetivo de mantener ese carácter genuino y garantizar a los consumidores su autenticidad. Gracias a la calidad y exclusividad de los vinagres que se producen en el marco de Jerez, en el año 2000 se crea la Denominación de Origen Vinagre de Jerez, amparada por el mismo organismo encargado de velar por los vinos de Jerez: Consejo Regulador de las Denominaciones de Origen Jerez-Xéres-Sherry, Manzanilla de Sanlúcar de Barrameda y Vinagre de Jerez.
Proceso de obtención del vinagre.
El vinagre Jerez se obtiene a partir de vinos de Jerez (100% Palomino Fino) amparados por la D.O. y sometidos a la crianza tradicional de criaderas y soleras que le confiere la personalidad propia. Estos vinos son sometidos al proceso de fermentación acética para su posterior crianza en madera. Todos estos procesos están controlados muy de cerca por la D.O. “VINAGRE DE JEREZ”. En las bodegas de crianza, el vinagre descansa ordenado según sus distintos grados de vejez. Las botas se alinean en “andanas” de tres o cuatro alturas, cada una de las cuales constituye una escala. La hilera o escala más baja se llama “solera” (por estar próxima al suelo) y contienen el vinagre de más edad. Las botas en la escala inmediatamente superior, denominada “primera criadera”, contienen un vinagre algo más joven; en las de la segunda criadera el vinagre es aún más joven; y así sucesivamente, hasta llegar a la última criadera. El vinagre destinado al consumo se extrae siempre de las botas de la solera, mediante una operación denominada “saca”. En cada saca tan sólo se extrae una pequeña proporción del contenido de cada bota de la solera. Posteriormente, esa cantidad de vino extraída para el consumo es reemplazada por la misma cantidad de vinagre de las botas de la segunda hilera (la primera criadera); a su vez, el vinagre extraído de la primera criadera se reemplaza con vinagre de la segunda criadera, y así sucesivamente, hasta llegar a la escala superior del sistema, donde se encuentran los vinagres más jóvenes. Esta operación se conoce en Jerez con el nombre de”corrida de escalas”, y se suele realizar con unos utensilios llamados canoa y rociador, cuyo cometido consiste en que el vinagre entre en las botas poco a poco, como un rocío. El sistema de crianza del vinagre de Jerez es pues dinámico, y se produce a través de un proceso en el que los vinagres más jóvenes son metódicamente mezclados con otros más criados, al objeto de que vayan paulatinamente adquiriendo las características conformadas tras años y años de soleraje.
