Ubicación.

Côtes du Roussillon es una denominación de origen controlada para los vinos tintos, blancos y rosados de la región vinícola del Rosellón en el sur de Francia. Cubre la mitad oriental del distrito administrativo de los Pirineos Orientales en el borde oriental de los Pirineos: la mitad occidental de los Pirineos Orientales es simplemente demasiado montañosa para una viticultura efectiva. Dentro del área vitivinícola de Côtes du Roussillon se encuentra la subregión Les Aspres . Las especialidades de Roussillon son vins doux, vinos dulces como Banyuls , Maury y Rivesaltes, en lugar de vinos de mesa, por lo que se consideró que había poca necesidad de crear un complejo sistema de denominación para los vinos tintos y blancos secos. Como resultado, la gran mayoría de los vinos de mesa secos del Rosellón se venden bajo esta denominación regional. Vinificación.

Los vinos se elaboran de uvas vendimiadas maduras. El límite de azucar para que un mosto pueda servir para la elaboración de vino, se marca en 216 gramos por litro de mosto; si es inferiro a este límite, se descarta. Los vinos se vinifican de acuerdo con prácticas locales, justas y constantes, siguiendo criterios como que los vinos provienen de la mezcla de uvas, mostos o vinos, de al menos 2 variedades de uva; la proporción de la variedad de uva más importante es menor o igual al 80% de la mezcla; la proporción de la variedad de accesorios es menor o igual al 20% de la mezcla; los vinos envejecen, al menos, hasta el 31 de enero del año siguiente al de la cosecha. Los vinos con el nombre geográfico adicional "Tautavel" son envejecidos, al menos, hasta el 15 de septiembre del año siguiente al de la cosecha. Al final del período de envejecimiento, los vinos se comercializan al consumidor a partir del 15 de febrero del año siguiente al de la cosecha. Al final del período de envejecimiento, los vinos con el nombre geográfico adicional "Tautavel" se comercializan al consumidor a partir
del 1 de octubre del año siguiente al de la cosecha.

El suelo y el clima.

Los suelos donde están ubicados los viñedos, que provienen de todas las formaciones geológicas, y van desde la era primaria hasta la era cuaternaria, se desarrollaron en esquistos marrones o negros, gneis, calizas, melazas arcillosas o arenosas, o bien terrazas de grava pedregosa. Generalmente estos suelos son secos, pedregosos y bien drenados. Algunos de estos suelos son de granito y arenas gneisicas, lutitas marrones y negras, en el macizo de Agly al noroeste. Otro tipo de suelo son los calizos rojos de las estribaciones de Corbières y el tercer tipo, las terrazas pedregosas en la margen izquierda del Têt. Este mosaico de suelos le da a los Côtes du Roussillon Villages AOC unos vinos que son significativamente diferentes al resto. Estos vinos se caracterizan por su terroir. Se reconocen cuatro unidades geográficas "Caramany", "Latour-de-France", "Lesquerde" y "Tautavel", cada una agrupando varios municipios. A AOC Côtes du Roussillon Villages puede seguirle uno de estos nombres geográficos. Así en "Caramany", el viñedo está plantado en gneis precámbricos, los suelos son de color rojo. En la zona de "Latour-de-France", el viñedo se establece en pizarras. En la zona de "Lesquerde", el viñedo se establece en suelos de granito y gneis. Y en la zona de "Tautavel", el viñedo se planta en suelos de marga y piedra caliza. El clima es mediterráneo: cálido y seco en verano con fuertes precipitaciones en otoño y primavera en forma de tormentas eléctricas. Un día de cada tres, un viento seco del noroeste, llamado Tramontane, se extiende por toda la región.
