La Toscana, región de vino.
Hablar de vino toscano es hablar de los vinos producidos en una región vinícola, ubicada en el centro de Italia, limitada por el mar Tirreno, y convertida en una de las zonas vitivinícilas más importantes del mundo. Vinos como los Chianti, Brunello di Montalcino y Vino Nobile di Montepulciano son sus buques insignia y se hacen principalmente con la uva Sangiovese, mientras la Vernaccia es la base del Vernaccia di San Gimignano blanco. La Toscana, aunque no es la única región, también es conocida por el vino del desierto “Vin Santo”, producido con diversas uvas de la región. La Toscana tiene 29 Denominaciones de origen controladas (DOC) y 7 Denominaciones de Origen Controlada y Garantizada (DOCG) que son parecidas a las españolas DO (Denominación de Origen) y DOCa (Denominación de Origen Calificada). Característico de esta zona es la aparición de la categoría de vinos conocida como los «Súper Toscanos», elaborados fuera de las regulaciones DOC/DOCG aunque llegando a ser vinos no solo de alta calidad y muy caros, sino también de culto. Tras la reforma del sistema de clasificación italiano muchos productores incluyeron sus Súper Toscanos dentro de la DOC o DOCG, pero otros aún prefieren la categorización sin clasificar o el uso de la clasificación Indicación Geográfica Típica (IGT) de Toscana.
Vinos con historia.
La historia del cultivo de la vid en la Toscana se escribe desde los asentamientos etruscos del siglo VIII a. C., pasando por las referencias literarias de escritores griegos sobre la alta calidad de sus vinos hasta la caída del Imperio Romano. En la Edad Media, los monasterios, como en la mayor parte de Europa fueron los principales productores de vino de la región. Cuando surgieron la aristocracia y los mercaderes, hubo muchos terratenientes toscanos que producían vino que vendía a mercaderes de Florencia. La primera referencia a los mercaderes de vino florentinos es de 1079, y en 1282 se creó su primer gremio, llamado Arte dei Vinattieri, el cuál estableció normas sobre cómo debían conducir su negocio los mercaderes de vino florentinos, algunas eran muy peculiares como no venderse vino a menos de 90 metros de una iglesia, ni a niños de menos de 15 años y a prostitutas, rufianes y ladrones. Ya en el siglo XIV se vendía una media de 300.000 hectolitros anuales de vino en Florencia. La primera referencia al Vino Nobile di Montepulciano procede de finales del siglo XIV. Se conoce que la primera mención registrada al vino de Chianti se debe al mercader toscano llamado Francesco di Marco Datini, el «mercader de Prato», que describió un vino que llegaría a conseguir fama mundial. Los vinos llegaron a considerarse artículos de lujo y eran tan preciados como el azafrán. Tras el final de las Guerras Napoleónicas, Bettino Ricasoli heredó su antigua finca familiar en Broglio, en el corazón de la zona Chianti Classico. Dispuesto a mejorar la finca,viajó por Francia y Alemania, estudiando las variedades de uva y técnicas vinícolas para experimentar en sus viñedos. Aunque llegó a la conclusión que tres variedades locales, la Sangiovese, Canaiolo y Malvasía, daban los mejores vinos. Con el estallido de la revolución en Italia unos años después en el 1850 la mayoría de los viñedos toscanos estaban devastados y muchos campesinos emigraron a otras partes del país o a América.
Sol y mar.
En cuanto a la geografía hay que tener en cuenta que la región de la Toscana, la quinta mayor de Italia, incluye siete islas costeras, limitando al noroeste con Liguria, al norte con Emilia-Romaña, al este con Umbría y al sur con el Lacio. Al oeste se sitúa el mar Tirreno, que regala a la zona un clima mediterráneo templado. Este terreno es bastante accidentado, progresando al interior hasta los Apeninos a lo largo de la frontera con Emilia-Romaña. Desde el punto de vista de la climatología, las colinas sirven para suavizar el calor del verano, estando muchos viñedos plantados en las zonas más altas de las colinas. La uva Sangiovese madura mejor cuando más luz obtiene del sol directamente, lo que es un beneficio para los viñedos de las colinas toscanas. La mayoría de los viñedos de la región están a una altitud de unos 150–550 m. La mayor elevación también incrementa la variación de temperatura entre el día y la noche, ayudando a las uvas a mantener un equilibrio de azúcares y acidez, así como también sus cualidades aromáticas.
Las uvas, los vinos.
La Toscana tanto por volumen de vinos de calidad DOC y DOCG, como por región con más viñedos, ocupa la tercera posición, pero la octava en volumen total producido. Esto se debe en parte al hecho de que su suelo es muy pobre, y los productores dan más importancia a calidad en sus vinosque al rendimiento productivo. Más del 80% de la producción de la región es vino tinto. La Sangiovese es la uva más importante de la Toscana, aunque muchas poblaciones la clonaron para poder tener su propia versión local de Sangiovese. La Cabernet Sauvignon que durante mucho tiempo pasó desapercibida es asociada con la región gracias al auge de los “Súper Toscanos”. Otras de las variedades internacionales que podemos encontrar en la Toscana son la Cabernet Franc, Chardonnay, Merlot, Pinot Noir, Sauvignon Blanc y Syrah. De las variedades tintas locales, destacamos la Canaiolo, Colorino, Malvasia Negra y Mammolo por ser las más cultivadas. Para los vinos blancos, la Trebbiano es la variedad más plantada, seguida por la Malvasía, Vermentino y Vernaccia.
Supertoscanos.
Pero si hablamos de vino de la Toscana es imprescindible conocer la historia de Los Súper Toscanos que como dijimos anteriormente son una categoría no oficial de vinos toscanos, no reconocida por el sistema de clasificación de vinos italiano. Todo empezó cuando en los 70 los productores preocupados por la bajada en las ventas de vino chianti por considerarse que no tenían la suficiente calidad, decidieron empezar a crear vinos de mejor calidad para lo que tenían que saltarse las restricciones DOC, el percusor fue el marqués Piero Antinori que creó el vino Tignanello que no utilizaba uvas blancas para acompañar al 70% de Sangiovese obligatorio en la DOC, sino que hacía la mezcla con Cabernet Sauvignon. Estos vinos tuvieron una buena aceptación e incluso superaron en precio a famosos chianti, por lo que otros productores siguieron el ejemplo, incluso de otras regiones, con los cambios en la regulación de los 90 unos productores volvieron a la DOC, Otros son integrantes de la DOCG chianti y otros continúan usando la menos restrictiva designación IGT Toscana.
Vin Santo.
Otro vino digno de mención es el vino del desierto conocido como “vin santo” o vino santo, es un vino principalmente blanco ya que se utiliza como vino de postre. La versión más famosa procede de Chianti Classico y se realiza mezclando uva Trebbiano y Malvasia Bianca. Los estilos tinto y rosado también se producen principalmente a partir de uva Sangiovese y se conoce como “ojo de perdiz”, occhio di Pernice.
La producción de la Toscana.
Dentro de la Región de Toscana, hay 10 provincias que dan cobijo a las diferentes DOC Y DOCG, siendo las zonas más representativas: Brunello di Montalcino, donde podemos encontrar vinos fuertes de color, de mucho cuerpo y buen equilibrio de taninos. En los ochenta fue el primer vino en obtener la clasificación DOCG. Hoy en día hay unos 200 cultivadores en la región de Montalcino, que producen unas 335.000 cajas de Brunello di Montalcino al año. Los vinos Brunello di Montalcino envejecen al menos 4 años antes de poder comercializarse, necesitando unos 10 años para afinarse y pudiendo consumirse incluso 50 años después. Carmignano, es famosa por la calidad de sus vinos desde la Edad Media, y ya realizaban mezclas de Sangiovese y Cabernet mucho tiempo antes del boom de los super toscanos. Actualmente Carmignano tiene apenas 110 Ha. plantadas, produce 2700 hl con denominación DOCG cada año. Chianti es la mayor región vinícola clasificada toscana y produce estuches el famoso tinto Chianti, asi como vinos blancos, otros tintos (rossos) y vino santo. La región está dividida en 2 denominaciones DOCG: Chianti y Chianti Classico, la segunda es la que tiene vinos con más fama, teniendo en cuenta que los chanti pueden ser muy diferentes de unos productores a otros ya que según la reglamentación un chanti puede tener por ejemplo un 100% de Sangiovese o al menos un 75% de Sangiovese, un máximo del 10% de Canaiolo, o un 10% de uva blanca (Malvasía y Trebbiano) y hasta un 15% de cualquier otra uva tinta cultivada en la región, como la Cabernet Sauvignon. Uno de los problemas de la utilización de uva blanca es la pérdida de capacidad de envejecimiento. Estos vinos son de cuerpo medio con taninos firmes y secos y con cierto olor a cereza. Estos proceden de la zona ubicada entre Florencia y Siena. El Vernaccia di San Gimignano, es el primer vino blanco en recibir una denominación DOC, esta hecho con uva Vernaccia y se considera uno de los mejores y más característicos blancos toscanos. Se puede describir como un vino seco, de cuerpo entero y con notas terrosas de miel y minerales. Vino Nobile di Montepulciano, esta DOCG produce el tinto de la zona de Montepulciano. Se llama así por ser el favorito de la nobleza toscana allá por el siglo XVIII. Esta zona se corresponde con la franja sureste, limitando con el mar y muy influenciada por su clima mediterraneo. Los vinos deben tener al menos un 80% de Sangiovese, y el resto se mezcla con la Canaiolo y Mammolo. Son vinos con un color brillante y una textura rica, sus aromas son refinados a cereza y ciruela generalmente, son vinos con cuerpo, con taninos redondos, suaves y un final sabroso.
