La DO.

Esta magnífica denominación del viñedo del norte de Rhône ofrece vinos tintos y blancos de alta calidad. Vinificación.

Los vinos se producen a partir de uvas bien maduras. Uvas con un alto contenido de azúcar de menos de 161 gramos por litro de mosto para vinos blancos, de 171 gramos por litro de mosto para vinos tintos. Los vinos se vinifican de acuerdo con las costumbres locales, mezclando variedades de uva, para los vinos tintos, en la proporción de al menos el 85% de la variedad de uva Syrah y para los vinos blancos se usan variedades de uva blanca, en la misma proproción que los vinos tintos. Las variedades de uva blanca aceptadas por el Consejo son el Marsanne y el Roussanne. Para los vinos tintos el Syrah. El rendimiento básico es de 45.-hl/ha.

Clima y geología.

En esta DO hay dos tipos de terruños, uno en el norte, los terrenos son formaciones de edad primaria de tipo granítico, los suelos están formados por arenas graníticas. Los viñedos se plantan en terrazas. También hay cerca del pueblo de Larnage, algunos sitios de edad terciaria de origen detrítico (arenas caolínicas, muy blancas). Y por otro lado, en el Sur, el terreno es plano con formaciones cuaternarias de origen glacial con suelos de guijarros. Al final del cuaternario, fuertes vientos depositaron arenas de piedra caliza, el loess. Barridos por la erosión, subsisten en lugares en la cima de la colina. El clima a diferencia que en otras zonas del Valle del Ródano, de un templado clima mediterráneo, el dominante en Crozes-Hermitage es de influencia continental, con inviernos húmedos y de vientos fríos, que, en ocasiones persisten hasta la primavera.
